Teflon

Teflon (pronounced tef-lon)

(1) The trademark for a fluorocarbon polymer with slippery, non-sticking properties; the (chemically correct) synonym is polytetrafluoroethylene.

(2) In casual use, facetiously to denote an ability to evade blame, applied usually to certain politicians, those characterized by imperviousness to criticism, often as “teflon president etc”.

1945: The proprietary name registered in the US by the du Pont corporation, from the chemical name (poly)te(tra)fl(uoroethylene) + the –on.  The use of the -on suffix in science is often described by etymologists as “arbitrary” and in the narrow technical sense the point is well made but there is history.  In physics it was applied on the model of the “on” element in electron, something lent linguistic respectability by the Ancient Greek -ον (-on), used to end neuter nouns and adjectives.  In chemistry, it followed the “on” in carbon, applied to form names of noble gases and certain non-metal elements (creating first boron and then silicon).  In physics, mathematics and biology, it was appended to form nouns denoting subatomic particles (proton), quanta (photon), molecular units (codon), or substances (interferon).  In biology and genetics, it was used to form names of things considered as basic or fundamental units (such as codon or recon).  The derived forms teflonish, tefleony etc are late twentieth century creations from critical political discourse.

Teflon was a serendipitous discovery which was delivered by research on refrigeration gases being undertaken by the Du Pont Company in 1938.  Some of the experiments being performed involved an analysis of the behavior of various compounds of Freon in cylinders and, observations indicated that while the gas appeared to disappear from the cylinders, weight measurements suggested it remained present and, upon inspection, what was found in the cylinders was a white, waxy substance of no use in the process of refrigeration.  The substance did however have remarkable properties, being friction-free (described as being like rubbing wet ice against wet ice) and impervious both almost all solvents and temperature variations between -273–250o c (-169–121o f).  Chemically the substance was a form of polytetrafluoroethylene, thankfully shortened to "Teflon" ((poly)te(tra)fl(uoroethylene)).  The significance of Teflon wasn’t initially understood and Du Pont’s major product release that year was anyway nylon, finally available as a commercial substance after thirteen years of development.

Teflon did however soon have an impact in one of the century’s most significant scientific and engineering projects, those attached to the Manhattan Project developing the atom bomb finding it the only coating which worked as seals for the canisters housing the most volatile elements.  However, because of the secrecy which enveloped the Manhattan Project, some aspects of which would not for many decades be declassified, Teflon didn’t enter the public consciousness until the late 1950s, the timing ensuring it came to be associated with the nascent space programme rather than the A-bomb, a perception the military-industrial complex did little to discourage.  Because of the state of the analytical tools then available, it had taken a long time fully to understand the stuff and it transpired the slipperiness came from a unique molecular structure, the core of carbon atoms being surrounded by fluorine atoms, creating a bond so strong that any other interaction was repelled, the chemical mix also accounting for the high degree of invulnerability to solvents and extremes in temperature.

The first extensive use was in electronics industry, first as insulation and corrosion protection for the copper wires and cables which carried the data for telephony and later computer networks but, as an example of the novel products it enabled, shatter-proof, Teflon-coated light bulbs went on sale but most far-reaching, revolutionary actually, was that it was Teflon which was used to hold the new and tiny semiconductor chips.  All those uses played a part in transforming the world but it was the simultaneous (and well-publicized) use in the Apollo Moon programme and the commercial release of the Teflon fry-pans which so cemented the association in public consciousness.  For some years, mystery shrouded how Du Pont managed to get the Teflon to stick to the aluminum or stainless steel with which fry-pans are made but, after the patents expired, it was revealed the classic trick was to sandblast the metal surfaces which left tiny indentations with irregular edges which worked like the clasps jewelers use to secure stones.  Once these tiny impressions were filled with Teflon, the final layer had something to which to adhere; Teflon attracting itself and repelling all else.  That was an wholly mechanical process but chemical processes were also developed to induce attachment to metal.

While some half a billion Teflon fry-pans were being sold, the slippery substance went on extensively to be used in architecture where its qualities of flame resistance and translucence were much appreciated and it proved uniquely suited to solving a problem which had for decades plagued engineers, the need for an insulator to prevent the corrosion endemic between the steel framework and copper skin of the Statue of Liberty.  Living structures also benefited, Teflon of great utility in the medical device industry because of its compatibility with living tissue, proving an ideal substance with which to construct artificial veins and arteries, heart patches and replacement ligaments although most inventive was probably the Teflon powder injections used to restore the function of vocal-cords.  Early in the twenty-first century, concerns were raised after the chemical perfluorooctanoic acid (PFOA), used in the production of Teflon, was found to be potentially carcinogenic.  The research didn’t produce direct evidence that it's harmful to humans but it was anyway replaced with a substitute, the wonderfully named GenX but this too has attracted concerns.

The word Teflon is used also to refer to that small class of politicians to whom no blame, however well-deserved, seems to attach; whatever mud is slung, none of it ever sticks.  It seems first to have been used by Pat Schroeder (b 1940; Democrat Representative for Colorado in the House 1973-1997) who in a speech on the floor of the House in 1983 denouncing President Ronald Reagan (1911–2004; US president 1981-1989) said “He has been perfecting the Teflon-coated presidency: He sees to it that nothing sticks to him.”  Schroeder later said that the expression came to her while frying eggs in a Teflon fry-pan.  In a display of feminist bi-partisanship, she would in a later interview with CNN note that President Bill Clinton (b 1946; US president 1993-2001) was very “Teflonish” and the phrase has come to be used to describe the political phenomenon of the willingness in voters to excuse in some the shortcomings they wouldn’t accept in most.  The linguistic adaptation didn’t please Du Pont which greatly valued their trademark, issuing a press release insisting that when used in print, the media should always put the trademark symbol next to the word and that ”It is not, alas, a verb or an adjective, not even when applied to the President of the United States!”  Their demands were ignored and English proceeds along its inventive ways.  There is nothing to suggest Teflon sales ever suffered by association.

Teflon is produced from a mix of certain chemicals which are part of a large family of substances called perfluoroalkyl & polyfluoroakyl (PFAS) and research has linked human exposure to a number of conditions including some cancers, reproductive issues, and elevated cholesterol levels.  Given that, on the basis of the experience of litigation and legislative response to other once common materials found to be at least potentially dangerous, it might be expected an intensive research effort has at least quantified the extent of the problem.  However, it transpired it’s effectively impossible to measure the risks of the use of PFAS in non-stick, simply because for decades the chemicals have been so ubiquitous in domestic environments because of their role providing water & stain-resistance in everything from raincoats, carpets and car upholstery.  That means PFAS chemicals have long since become part of the environment, detected everywhere from the seabed to mountain tops.  For the human and animal population, the presence in the water supply is of significance and in the US, the Environmental Protection Agency (EPA) in 2020 published guidelines for the acceptable level of certain PFAS in drinking water, a document which attracted great interest because it appears about the same time as a study which indicated a correlation between exposure and a disturbing “millions of deaths”.  Among the general population, it’s the cookware which came quickly to attract the most concern, not because there’s any evidence to suggest the stuff is a more productive vector of transfer than carpet, curtains or any other source but because of the intimacy of contact; it’s from those non-stick frypans we eat.  It’s also in dental floss but the psychological threshold of swallowing is real.

Not all PFAS are identical in the critical areas assessed although they all share the characteristic of being stable, something which has seen then dubbed the “forever chemicals”, something potentially useful for science although it’s the implication that once released, the stuff will persist in the environment for millions of years which disturbs.  Some have been identified as especially dangerous and two (PFOS & PFOA) have already been phased out of industrial use, notably because of a risk posed to the human immune system and encouragingly, testing revealed that after FOS use ceased in 2000, levels in human blood declined significantly.  Those who ensure they use only soft kitchen utensils when using the non-stick products shouldn’t be too assured because injecting a big chunk of the stuff historically hasn’t been the issue; it’s the micro-sized bits entering the body and while manufacturers claim any coating swallowed is inert, the concerns remain.  In the absence of relevant data, there are nuanced positions on non-stick pans. The US Food & Drug Administration (FDA) continues to permit the use in cookware while the EPA maintains exposure can lead to “adverse health effects” and in 2022 proposed a labeling protocol which would require certain PFAS to be listed as “hazardous substances”.  Another branch of the administration, the Center for Disease Control (CDC) maintains the health effects of low exposure remain “uncertain.”

Whisk

Whisk (pronounced wisk or hwisk)

(1) To move with a rapid, sweeping stroke.

(2) To sweep (dust, crumbs etc, or a surface) with a whisk broom, brush, or the like.

(3) To draw, snatch or carry etc; a generalized term meaning to move or do something nimbly or rapidly (often as “whisked away”, “whisked off” etc).

(4) To whip (eggs, cream etc.) to a froth using a whisk or other beating device.

(5) The an act of whisking; a rapid, sweeping stroke; light, rapid movement.

(6) As whisk broom, a device topped with a small cluster of grass, straw, hair or the like, used especially for brushing.

(7) A kitchen utensil, in the form of a bunch of (usually metal wire, plastic strands or (in the Far East) bamboo) loops held together in a handle and used for beating, blending or whipping eggs, cream; making souffles etc.  Modern whisks can also be electro-mechanical and “non-stick” whisks use a Teflon coating.

(8) The by-product of something which has been “whisked away”.

(9) A special plane used by coopers for evening a barrel’s chimes (the curved, outermost edge or rim at the top and bottom ends of the barrel, typically wider and thicker than the rest of the staves (the vertical wooden planks that form the sides)).

(10) In fashion, a kind of cape forming part of a woman's dress (sometimes detachable).

(11) In some card games, the act of sweeping the cards off the table after a trick has been won.

1325–1375: From the Middle English & Scots wysk (rapid sweeping movement), from the earlier Scots verbs wisk & quhisk, from the Old English wiscian (to plait) & weoxian (to clean with brush), from a Scandinavian source comparable to the Old Norse & Norwegian visk (wisp), the Swedish viska besom & wisp (to whisk (off)) and the Danish visk & viske (to wipe, rub, sponge) and related to the Middle Dutch wisch, the Dutch wis, the Old High German wisken (to wipe) & wisc (wisp of hay), the German Wisch, the Latin virga (rod, switch) & viscus (entrails), the Czech vechet (a wisp of straw), the Lithuanian vizgéti (to tremble), the Czech vechet (wisp of straw) and the Sanskrit वेष्क (veka) (noose) all thought from the Proto-Germanic wiskaz & wiskō (bundle of hay, wisp), from the primitive Indo-European weys- or weis (to turn; to twist).  The un-etymological wh-, noted since the 1570s, probably developed because it was expressive of the sound typically generated by the act of “whisking” something; the same evolution was noted in whip and the onomatopoeic whack and whoosh.  The device used in preparing food (implement for beating eggs etc) was first documented as “a whisk” in the 1660s although cooks had presumably been using such things for many years.  The verb developed in the late fifteenth century, the transitive sense from the 1510s while the familiar meaning “to brush or sweep (something) lightly over a surface” dates from the 1620s.  Whisk & whisking are nouns & verbs and whisked is a verb; the noun plural is whisks.

Whisk is (almost) wholly unrelated to whisky & whiskey.  Dating from 1715, whisky was a variant of usque,an abbreviation of usquebaugh, from the Irish uisce beatha (water of life) or the Scots Gaelic uisge-beatha (water of life), ultimately a translation of the Medieval Latin aqua vītae (water of life (originally an alchemical term for unrefined alcohol)).  The form whiskybae has been obsolete since the mid eighteenth century.  The Scots and Irish forms were from the Proto-Celtic udenskyos (water) + biwotos (life), from biwos(alive).  The Old Irish uisce (water) was from the primitive Indo-European ud-skio-, a suffixed form of the root wed- (water; wet); bethu (life), from the primitive Indo-European gwi-wo-tut-, a suffixed form of gwi-wo-, from the root gwei- (to live). The noun plurals are whiskies & whiskeys.  Although iskie bae had been known in the 1580s, it appears unrelated to usquebea (1706), the common form of which was uisge beatha which in 1715 became usquebaugh, then whiskeybaugh & whiskybae, the most familiar phonetic form of which evolved as “usky”, influencing the final spellings which remain whisky & whiskey.  Wisely, the Russians avoided the linguistic treadmill, the unchanging vodka freely translated as “little water”.  The exception was the “whisky”, a small carriage (technically a “light gig” to coach-builders) which was from the verb whisk, the idea being something in which one was “whisked quickly around” the lightweight carriages being faster than most.  Chefs also caution home cooks not to confuse “whisky butter” (A concoction made of whisky, butter & sugar) with “whisked butter” which is butter which has been whisked.

Whether it was already something widely practiced isn’t known but Lindsay Lohan is credited with introducing to the world the culinary novelty Oreos & peanut butter in The Parent Trap.  According to the director, it was added to the script “…for no reason other than it sounded weird and some cute kid would do it."  Like some other weirdnesses, the combination has a cult following and for those who enjoy peanut butter but suffer arachibutyrophobia (the morbid fear of peanut butter sticking to the roof of one’s mouth), Tastemade’s have provided a recipe for Lindsay Lohan-style Oreos with a preparation time (including whisking) of 2 hours.  They take 20 minutes to cook and in this mix there are 8 servings (scale ingredients up to increase the number of servings).

Ingredients

2 cups flour
1 cup unsweetened cocoa powder (plus more for dusting)
¾ teaspoon kosher salt
1 ¼ cups unsalted butter (at room temperature)
¾ cup sugar
1 teaspoon vanilla extract
Powdered sugar, for dusting

Filling Ingredients

½ cup unsalted butter, at room temperature
¼ cup unsweetened smooth peanut butter
1 ½ cups powdered sugar
1 teaspoon vanilla extract
A pinch of kosher salt (omit if using salted peanut butter)

Filling Instructions

(1) With a stand mixer fitted with a paddle attachment, the butter & peanut butter until creamy.

(2) Gradually add powdered sugar and beat to combine, then beat in vanilla and salt.

Instructions

(1) Preheat the oven to 325°F (160°C). Line two baking sheets with parchment paper.

(2) In small bowl, whisk together flour, cocoa powder & salt.

(3) In a stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy.  Mix in the vanilla extract. With the mixer running on low speed, add the flour mixture and beat until just combined (it should remain somewhat crumbly).

(4) Pour mixture onto a work surface and knead until it’s “all together”; wrap half in plastic wrap and place in refrigerator.

(5) Lightly dust surface and the top of the dough with a 1:1 mixture of cocoa powder and powdered sugar.

(6) Working swiftly and carefully, roll out dough to a ¼-½ inch (6-12 mm) thickness and cut out 2 inch (50 mm) rounds.  Transfer them to the baking sheets, 1 inch (25 mm) apart (using a small offset spatula helps with this step). Re-roll scraps and cut out more rounds, the repeat with remaining half of the dough.

(7) Bake cookies until the tops are no longer shiny ( about 20 minutes), then cool on pan for 5 minutes before transferring to wire rack completely to cool.

(8) To assemble, place half the cookies on a plate or work surface.

(9) Pipe a blob of filling (about 2 teaspoons) onto the tops of each of these cookies and then place another cookie on top, pressing slightly but not to the extent filled oozes from the sides.

(10) Refrigerate for a few minutes to allow the filling to firm up.  Store in an air-tight container in refrigerator.

The manufacturer embraced the idea of peanut butter Oreos and has released versions, both with the classic cookie and a peanut butter & jelly (jam) variation paired with its “golden wafers”.  As well as Lindsay Lohan’s contribution, Oreos have attracted the interest of mathematicians.  Nabisco in 1974 introduced the Double Stuf Oreo, the clear implication being a promise the variety contained twice crème filling supplied in the original.  However, a mathematician undertook the research and determined Double Stuf Oreos contained only 1.86 times the volume of filling of a standard Oreo.  Despite that, the company survived the scandal and the Double Stuf Oreo’s recipe wasn’t adjusted.

Scandalous in its own way was that an April 2022 research paper published in the journal Physics of Fluids wasn’t awarded that year’s Ig Nobel Prize for physics, the honor taken by Frank Fish, Zhi-Ming Yuan, Minglu Chen, Laibing Jia, Chunyan Ji & Atilla Incecik, for their admittedly ground-breaking (or perhaps water-breaking) work in explaining how ducklings manage to swim in formation.  More deserving surely were Crystal Owens, Max Fan, John Hart & Gareth McKinley who introduced to physics the discipline of Oreology (the construct being Oreo + (o)logy).  The suffix -ology was formed from -o- (as an interconsonantal vowel) +‎ -logy.  The origin in English of the -logy suffix lies with loanwords from the Ancient Greek, usually via Latin and French, where the suffix (-λογία) is an integral part of the word loaned (eg astrology from astrologia) since the sixteenth century.  French picked up -logie from the Latin -logia, from the Ancient Greek -λογία (-logía).  Within Greek, the suffix is an -ία (-ía) abstract from λόγος (lógos) (account, explanation, narrative), and that a verbal noun from λέγω (légō) (I say, speak, converse, tell a story).  In English the suffix became extraordinarily productive, used notably to form names of sciences or disciplines of study, analogous to the names traditionally borrowed from the Latin (eg astrology from astrologia; geology from geologia) and by the late eighteenth century, the practice (despite the disapproval of the pedants) extended to terms with no connection to Greek or Latin such as those building on French or German bases (eg insectology (1766) after the French insectologie; terminology (1801) after the German Terminologie).  Within a few decades of the intrusion of modern languages, combinations emerged using English terms (eg undergroundology (1820); hatology (1837)).  In this evolution, the development may be though similar to the latter-day proliferation of “-isms” (fascism; feminism et al).  Oreology is the study of the flow and fracture of sandwich cookies and the research proved it is impossible to split the cream filling of an Oreo cookie down the middle.

The core finding in Oreology was that the filling always adheres to one side of the wafer, no matter how quickly one or both cookies are twisted.  Using a rheometer (a laboratory instrument used to measure the way in which a viscous fluid (a liquid, suspension or slurry) flows in response to applied forces), it was determined creme distribution upon cookie separation by torsional rotation is not a function of rate of rotation, creme filling height level, or flavor, but was mostly determined by the pre-existing level of adhesion between the creme and each wafer.  The research also noted that were there changes to the composition of the filling (such as the inclusion of peanut butter) would influence the change from adhesive to cohesive failure and presumably the specifics of the peanut butter chosen (smooth, crunchy, extra-crunchy, un-salted (although the organic varieties should behave in a similar way to their mass-market equivalents)) would have some effect because the fluid dynamics would change.  The expected extent of the change would be appear to be slight but until further research is performed, this can’t be confirmed.  The 33rd First Annual Ig Nobel Prize ceremony will (as a webcast) happen on Thursday 14 September 2023, at 18:00 pm (US eastern time).

Serendipity

Serendipity (pronounced ser-uhn-dip-i-tee)

(1) The faculty of making fortunate discoveries by accident; a combination of events which have come together by chance to make a surprisingly good or wonderful outcome.

(2) Luck, good fortune.

(3) As the serendipity berry (Dioscoreophyllum volkensii), a tropical dioecious rainforest vine in the family Menispermaceae, native to tropical Africa from Sierra Leone east to Eritrea, and south to Angola and Mozambique.

1754: The construct was Serendip + -ity.  The proper noun Serendip (Serendib the alternative form) was an archaic name for the island of Ceylon (सिंहल (sihala (Sri Lanka”) after 1972 from द्वीप (dvīpa) (island)), from the Arabic سَرَنْدِيب‎ (sarandīb), from the Persian سرندیپ (sarandip), from the Prakrit sīhaladīva & Sanskrit सिंहलद्वीप (sihaladvīpa (literally “island of the Sinhala people”)).  The –ity suffix was from the French -ité, from the Middle French -ité, from the Old French –ete & -eteit (-ity), from the Latin -itātem, from -itās, from the primitive Indo-European suffix –it.  It was cognate with the Gothic –iþa (-th), the Old High German -ida (-th) and the Old English -þo, -þu & (-th).  It was used to form nouns from adjectives (especially abstract nouns), thus most often associated with nouns referring to the state, property, or quality of conforming to the adjective's description.

The serendipity berry is noted as a source of monellin, an intensely sweet protein and if chewed, alters the perception of taste to make tart, acidic or bitter food taste sweet.  Pills containing synthesized monellin are sold as “miracle fruit tablets” for this purpose (a lemon eaten after sucking on one of these tablets quite a revelation) and as “miracle fruit”, serendipity and related berries are widely used in African folk medicine although there’s scant evidence for their efficacy as a treatment for the many diseases they’re said to cure.  Words with a similar meaning include fluke, happenstance, blessing, break and luck but serendipity carries the particular sense of something very useful and wholly unexpected being the result while The phrases “Murphy's law” & “perfect storm” are close to being antonyms.  In science and industry, serendipity has played a part in the discovery or development of vaccination, insulin to treat diabetes, penicillin, quinine, Viagra, x-rays, radioactivity, pulsars, cosmic microwave background radiation, Teflon, vulcanized rubber, microwave ovens, Velcro and 3M's (originally Minnesota Mining & Manufacturing) post-it notes (though it seems its part in the invention of stainless steel may be a myth).  Serendipity & serendipitist are nouns, serendipitously is an adverb and serendipitous is an adjective; the noun plural is serendipities.  Serendipiter & serendipper are non-standard noun forms adopted in popular culture.

Serendipity was in 1754 coined by the English Whig politician & author writer Horace Walpole (1717–1797), derived from the fairy tale The Three Princes of Serendip, the three, Walpole noted, “always making discoveries, by accidents and sagacity, of things which they were not in quest of”.  The Three Princes of Serendip was an English version of Peregrinaggio di tre giovani figliuoli del re di Serendippo, printed in 1557 by Venetian publisher Michele Tramezzino (1526-1571), the text said to have been the work of a Cristoforo Armeno who had translated the Persian fairy tale into Italian, adapting Book One of Amir Khusrau's Hasht-Bihisht (1302). The story was translated into French before the first English edition was published and Voltaire (François-Marie Arouet, 1694–1778) used the tale in his 1797 novella Zadig ou la Destinée (Zadig or The Book of Fate), an intriguing fusion of fiction and philosophy which influenced systematic science, the evolution of creative writing about crime and even horror stories.

Walpole used serendipity first in a letter (dated 28 January 1754) he wrote to Florence-based British diplomat Sir Horace Mann (1706–1786) but which seems not to have been published until 1833, the new word remaining almost unnoticed until the 1870s when there was a brief spike; it was in the early-mid twentieth century it became popular and until then it was rare to find a dictionary entry although the adjective serendipitous appeared as early as 1914.  Walpole was compelled to coin serendipity to illustrate his delighted surprise at finding a detail in a painting of Bianca Cappello (1548–1587 and latterly of the clan Medici) by Giorgio Vasari (1511-1574).  The charm of the word is such that it’s been borrowed, unaltered, by many languages and it frequently appears in "favorite word" or "words of the year" lists.

The twenty-two-year-old Walpole fell under the charm of the long dead Bianca Cappello while staying in Florence during his grand tour of the continent.  Besotted by the portrait of the peach-skinned Venetian beauty which hung in the Casa Vitelli, it's not clear what immediately drew his eye but a diary note by the French writer Montaigne (1533–1592), who in 1580 had the pleasure of meeting her, might provide a hint: “...belle à l’opinion italienne, un visage agréable et imperieux, le corsage gros, et de tetins à leur fouhait” ("...according to the Italians she is beautiful.  She has an agreeable and imposing face, and large breasts, the way they like them here…").  He confided his passion to Mann who around 1753 purchased the work, sending it to his friend who had by then returned to England, his cover letter including the revelatory “It is an old acquaintance of yours, and once much admired by you... it is the portrait you so often went to see in Casa Vitelli of Bianca Capello… to which, as your proxy, I have made love to for a long while… It has hung in my bedchamber and reproached me indeed of infidelity, in depriving you of what I originally designed for you”.  These days, such things are called objectum sexuality or fictosexualism but in the eighteenth century it was just something the English aristocracy did.

Whatever other pleasures the oil on canvas bought him, Walpole must also have devoted some attention to detail for he would soon write back to Mann: “I must tell you a critical discovery of mine a propos in a book of Venetian arms.  There are two coats of Capello… on one of them is added a fleu de luce on a blue ball, which I am persuaded was given to the family by the Grand Duke” (of Medici who was Bianca's second husband (who may have murdered the first)).  Much pleased at having stumbled upon this link between the two families in a book of Venetian heraldry he happened at the time to be reading in the search for suitable emblems with which to adorn the painting's frame, he told his dear friend: “This discovery indeed is almost of that kind which I call SERENDIPITY”.
