Camembert & Brie

Camembert (pronounced kam-uhm-bair or ka-mahn-ber (French))

(1) A village in the Normandy region of France.

(2) A mellow, soft cheese, the centre of which is creamy and of a golden cream color, made from cow's milk.

1867 (the cheese): The cheese is named after Camembert, the village near Argentan, Normandy where it originated.  The village name was from the Medieval Latin Maimberti (field of Maimbert), a West Germanic personal name derived from the Proto-Germanic maginą (strength, power, might) and the Proto-Germanic berhtaz (bright).  A rich, sweet, yellowish cream-cheese with the name Camembert was first sold in 1867, but the familiar, modern form of the cheese dates from 1791.  Camembert is a masculine form; the strong, genitive Camembertes or Camemberts and there is no plural.

A tyrosemiophile is one for whom collecting the colorful (usually round) labels affixed to wooden boxes of Camembert cheese wheels is (depending on where they sit on the spectrum) variously a hobby, calling or obsession.  The practice is called tyrosemiophilia (the construct being the Ancient Greek tyro (cheese) + semio (sign; label) + philos (love) and while there appears to be no documented use of tyrosemiophobia (morbid dread or aversion to Camembert cheese labels), there’s no reason why someone who suffered some disturbing experience with a wheel of Camembert wouldn’t become a tyrosemiophobe.  Collecting objects with a high degree of structural similarity (Camembert cheese labels, beer bottle tops etc) has much appeal for some and in cultural studies is classed as “connoisseurial collecting”, described as a collecting focused on variations within a narrow type (which can be structural, thematic chronologic etc but tends to exclude much within the field collected by those casting a wider net).  The hobby (or whatever) falls under the rubric of “typological accumulation” in which objects are exemplars of a “type” and while each is to some degree different, their attraction lies in the similarity, something like Karl Marx’s (1818-1883) exasperated description of peasants as “…like a sack of potatoes, all the same, yet all different”.

Whether such things especially draw “obsessional collectors” doesn’t seem to have been studied but the characteristics of the stuff (Camembert cheese labels a classic example): (1) structurally similar objects, (2) tiny differences (colors, typography etc) and (3) adaptability to being stored or displayed in a precise, geometrical form may hint at the personality type attracted.  Cognitive psychology has identified how pleasing some find “variation within sameness” and that seemed in some way linked to PRDW (pattern recognition dopamine reward) in which the brain rewards the subject for creating, modifying or spotting subtle distinctions within a structured set.  Cheese production being an ongoing business, the collecting of Camembert labels is obviously not a closed system but within the whole, it can be possible to achieve “complete sets” (a single producer, region, period etc) and this aspect too is a thing among collectors.

Among producers, there is something of a tradition of making the labels miniature “works of art” with themes including, florals, farm animals, fields of grass, famous (dead) figures from history and, of course, comely milkmaids in period costumes.  There is in France the CTF (Club Tyrosémiophile de France), which has existed since 1960 and still conducts annual conferences (a significant part of which are the “swap-meet” sessions at which members can sell or exchange labels and like any commodity, based on desirability (the prime determinate usually rarity), the value of items varies.  Collectively the club’s inventory now includes several million labels, many of which are on display at the Camembert Museum in Vimoutiers, Normandy and there are plans to digitize the collection and make them publicly accessible.  That millions of different cheese labels exist may not surprise those who recall the (apparently apocryphal) quote attributed to Charles de Gaulle (1890-1970; President of France 1959-1969): “How can one govern a country which has 246 varieties of cheese?” because, even in Le Général’s time, the true count was well into four figures.  In a sign of the times, as the CTF’s membership roll dies off, numbers are shrinking because the young seem not attracted to the cause.  Interestingly, it’s said the artistic labels (called étiquettes in French) date from circa 1910 where they were used as means of attracting children, the idea being the same as the little trinkets distributed in breakfast cereal boxes; the small proto-consumers being trained as “influencers” there to persuade their parents to buy more cheese so they could afforce their label collection.

Salvador Dalí’s (1904-1989) most reproduced and best-known painting, La persistència de la memòria is better known by the more evocative title: Melting clocks.  Amused at the suggestion the flaccidity of the watches was a surreal pondering of the implications of Albert Einstein's (1879-1955) theory of special relativity (1905), Dalí provided an earthier explanation, saying his inspiration came from imagining a wheel of Camembert melting in a Catalan summer sun.  Dali's distortions were of course a deliberate device.  Celebrities who manage inadvertently to produce their own by not quite mastering Photoshop or other image-editing software quickly find the internet an unforgiving critic.  For better or worse, AI artificial intelligence has now reached the point where such manipulation is often close to undetectable.

Brie (pronounced bree)

(1) A mainly agricultural region in north-east France, between the Seine and the Marne, noted especially for its cheese.

(2) A salted, creamy, white, soft cheese, ripened with bacterial action, originating in Brie and made from cow's milk.

(3) A female given name (with the spelling variant Bree), from the French geographical region but also as a truncation of Brianna.

1848 (the cheese): The name of the cheese is derived from the name of the district in department Seine-et-Marne, southeast of Paris, the source being the Gaulish briga (hill, height).  The English brier (a type of tobacco pipe introduced circa 1859) is unrelated to the cheese or the region in France which shares the name.  The pipes were made from the root of the Erica arborea shrub from the south of France and Corsica, from the French bruyère (heath plant) from the twelfth century Old French bruiere (heather, briar, heathland, moor), from the Gallo-Roman brucaria, from the Late Latin brucus (heather), from the Gaulish bruko- (thought linked with the Breton brug (heath), the Welsh brwg and the Old Irish froech).  The noun plural is bries.

Before the French crown assumed full-control in the thirteenth century, the region of Brie was from the ninth century divided into three sections ruled by different feudal lords, (1) the western Brie française (controlled by the King of France), corresponding approximately to the modern department of Seine-et-Marne in the Île-de-France region, (2) the eastern Brie champenoise (controlled by the Duke of Champagne), forming a portion of the modern department of Marne in the historic region of Champagne (part of modern-day Grand Est) and (3) the northern Brie pouilleuse, forming part of the modern department of Aisne in Picardy.  As well as the cheese, Brie is noted for the culturing of roses, introduced circa 1795 by the French explorer Admiral Louis-Antoine, Comte de Bougainville (1729–1811).  Papua New Guinea’s (PNG) Bougainville Island and the Bougainvillea flower were both named after him.

A trick of commercial caterers, wedding planners and others who have to gain the maximum visual value from the food budget is whipped Brie dip.  Often a feature of charcuterie boards or a flourish at wine & cheese events, apart from the taste, the main attraction is that aerating Brie almost doubles its volume, making it a cost-effective component.  Technically, the reason the technique works so well as a base is the aeration increases the surface area of the material which comes into contact with the taste receptors.  There are few rules about what goes into a whipped Brie dip although honey, salty bacon & lemon-infused thyme tend often to be used, some including crushed walnuts.  Timing has to be managed because it’s at its best just after being prepared and served at room temperature; if it’s chilled it sets hard and becomes difficult to spread and will break any cracker being dipped.  So, it can be a last-minute task but preparation time is brief and it’s worth it.

Brie & Camembert

Both thought delicious by cheese fiends, Brie & Camembert are often confused because the appearance is so similar, both soft, creamy cheeses with an edible white rind and tending to be sold in wheels (squat little cylinders) though it’s easier to tell the difference with cheeses made in France because there they usually maintain the convention that a Camembert will be smaller (unless it’s a baby Brie or petit Brie which will be indicated on the label).  Because most Brie is matured in larger wheels, it’s often sold in wedges, rare among Camembert because the wheels are so small.  However, in the barbaric English-speaking world where anything goes, Brie is sometimes sold in smaller sizes.  Traditionally, like most, they were farmhouse cheeses, but have long been produced mostly in larger artisanal cheeseries or on an industrial scale.

Both originally created using unpasteurized cow's milk, thanks to the dictatorial ways of humorless EU eurocrats and their vendetta against raw milk, they’re now almost always made with pasteurized milk although there remain two AOP (Appellation d'origine protégée (Protected designation of origin)) unpasteurised Bries, Brie de Meaux & Brie de Melun and one AOP Camembert, Camembert de Normandie, said best to be enjoyed with French cider.  As a cheese, Brie is characterized as being refined, polite and smooth whereas a Camembert is more rustic, the taste and texture earthier (food critics like to say it has more of a “mushroomy taste”), cream being added to the curd of Brie which lends it a milder, more buttery finish and double and triple Brie are even more so.  To ensure the integrity of the brand, French agricultural law demands that a double-cream cheese must contain 60-70% butterfat (which results a fat content around 30%+ in the finished product.  Although variations exist, according to calorieking.com.au, Brie contains 30.5g fat and 18.5g protein per 100g and the same amount of Camembert, 25g fat and 19.5g protein.

Visually, if left for a while at room temperature, it’s easier to tell the difference because a Camembert will melt whereas Brie will retain its structure.  Because of the marked propensity to melt into something truly gooey, Camembert is often used in cooking, sometimes baked and paired with cranberry sauce or walnuts but. Like Brie, is also a staple of cheese plates, served with things like grapes or figs and eaten with crackers, crusty bread and just about any variety of wine.  One local tradition in the Brie region was the Brie Noir (a type of longer-ripened Brie) which villagers dipped into their café au lait over breakfast.

Turkey, Camembert and cranberry pizza (serves 4)

Ingredients

4 medium pita breads
Olive oil spray
120ml cranberry sauce
1 small garlic clove, minced
80g Camembert, sliced and torn
200g lean shaved turkey breast
8 table spoons parmesan cheese
1 cup rocket leaves

Instructions

(1) Heat oven to 390°F (200°C) conventional or 360°F (180°C) fan-forced and line 2 oven trays with baking paper.

(2) Place pita bread on trays and spray lightly with olive oil.

(3) Mix cranberry sauce with garlic and smear onto the pita bread.

(4) Top with Camembert, shaved turkey and finish with a sprinkling of parmesan.

(5) Bake in the oven for 10-15 minutes until golden and the cheese has melted.

(6) Remove from the oven, sprinkle over rocket leaves and serve.

Phyllo-Wrapped Brie With Hot Honey and Anchovies (serves 10-12)

Ingredients

¼ cup chopped roasted red bell pepper (pre-packaged is fine as well as fresh)
3 oil-packed anchovy fillets, minced
1 garlic clove, finely grated or minced
¾ teaspoon finely grated lemon zest
1 pound phyllo (or filo) dough (must be thawed if bought frozen)
10 tablespoons (1¼ sticks) unsalted butter, melted
1 large (about 26 ounces (750 grams)) wheel of Brie
Hot honey (or regular honey (see below)) for serving
Crackers and/or sliced bread, for serving

Instructions

(1) Heat the oven to 425°F (220°F). In a small bowl, stir together the roasted bell pepper, anchovies, garlic, and lemon zest. Set aside.

(2) On a clean work surface, lay out the phyllo dough and cover it with a barely damp kitchen towel to keep it from drying out. Take 2 phyllo sheets and lay them in an 11 × 17-inch rimmed baking sheet. Brush the top sheet generously with melted butter, then lay another 2 phyllo sheets on top the opposite way, so they cross in the centre and are perpendicular to the first two (like making a plus sign). Brush the top sheet with butter. Repeat the layers, reserving 4 sheets of phyllo.

(3) Using a long sharp kitchen knife, halve the Brie horizontally and lay one half, cut-side up, in the centre of the phyllo (you will probably need another set of hands to help lift off the top layer of cheese). Then spread the red pepper mixture all over the top. Cover with the other half of Brie, cut-side down, and then fold the phyllo pieces up around the Brie. There will be a space in the centre on top where the Brie is uncovered, and that’s okay.

(4) Lightly crumple one of the remaining sheets of phyllo and place it on top of the phyllo/Brie package to cover up that space. Drizzle a little butter on top, then repeat with the remaining phyllo sheets, scattering them over the top of the pastry and drizzling a little butter each time. It may look messy but will bake up into gorgeous golden waves of pastry, so fear not.

(5) Bake until the phyllo is golden, 20 to 25 minutes. Remove it from the oven and let it rest for about 15 minutes before drizzling it with the hot honey. Slice (it will be runny) and serve with crackers or bread, and with more hot honey as needed.

Most baked Bries tend to the sweet with layers of jam or chutney beneath the crust but this is a savoury variation using anchovies, garlic, and roasted bell peppers.  A drizzle of honey and the pinch of lemon zest lends the dish a complexity and for the best effect it should be served straight from the oven because that’s when the Brie is at its most seductively gooey.  It’s ideal with crisp crackers or crusty bread for crunch.  The hot honey is a bit of a novelty and those who want to enhance or tone-down the effect can create their own by stirring a pinch or more of cayenne into any mild honey.

Podophilia

Podophilia (pronounced podd-ah-fil-ee-uh or pod-oh-fil=ee-uh)

A paraphilia describing the sexualized objectification of feet (and sometimes footwear), commonly called foot fetishism although the correct clinical description is now "foot partialism".

1980s: The construct was podo- + -philia.  Podo- (pertaining to a foot or a foot-like part) was from the Ancient Greek πούς (poús), from the primitive Indo-European pds.  It was cognate with the Mycenaean Greek po, the Latin pēs, the Sanskrit पद् (pad), the Old Armenian ոտն (otn) & հետ (het), the Gothic fōtus and the Old English fōt (from which Modern English gained foot).  The Greek poús was the ancient Greek and Byzantine unit of length originally based upon the length of a shod foot and the idea in Europe endured for centuries although until the seventeenth century there were little attempts at standardization, even within the one jurisdiction and although things were settled well before the twentieth century, in the legal sense it wasn't until 1959 that the US, Canada, New Zealand, South Africa, Australia and the UK signed the "International Yard and Pound Agreement" which codified avoirdupois weight and length then used in all those nations, a set (although largely supplanted by the metric system (except in the US)) which officially still defines both Imperial and US customary units.  The suffix –philia was from the From Ancient Greek φιλία (philía) (fraternal love), from φλέω (philéō) (to love), from the earlier Ionic Greek (where the meanings diverged somewhat over the years.  It was used to to form nouns meaning a fondness, liking or love of something and in pathology picked up the specific technical sense of abnormal liking or tendency such a paraphilia.  One with specific attraction to feet or footwear is a podophile and their predilections are described as podophilic.

The English phrase “length of the chancellor's foot” is neither an allusion to lineal measurement nor an early example of political podophilia.  It is a critique of law and most associated with a passage by the English jurist and scholar John Selden (1584–1654) which appeared in his Table Talk (published posthumously in London in 1689), discussing the flexible, adaptable law of equity and how its administration differed from the rigid, precedent-bound courts of common law: “Equity is a roguish thing: for law we have a measure… equity is according to the conscience of him that is Chancellor, and as that is larger or narrower, so is equity. ’Tis all one as if they should make the standard for the measure we call a 'foot' a Chancellor’s foot; what an uncertain measure would this be! One Chancellor has a long foot, another a short foot, a third an indifferent foot.

In other words, in the Court of Chancellery, equity was administered by the Lord Chancellor at his discretion, the attraction being when the application of common law precedents were seen to create an obvious injustice, equity could intervene to provide a just result: justice based on fairness rather than strict legal rules.  However, implicit in that flexibility was the estimation of equity could vary from one Chancellor to next and thus the Court of Chancellery soon created its own contradictions, attracting critics who noted an outcome depended on the personal judgment of the Lord Chancellor who reached his decision on a “case-by-case” basis.

The rationale was both clear and commendable but lawyers trained in the courts of common law liked the certainty and predictability of adherence to precedence; their fees were dependent on them winning their clients’ cases, not seeking an abstraction like “justice”.  Thus the phrase became legal shorthand for judicial arbitrariness in which outcomes depended on personal discretion rather than objective standards.  The equity lawyers were of course sensitive to the criticism and what evolved in the Court of Chancellery was its own set of “rules” although these came to be called “equitable maxims” and were principles & concepts which can be thought of as a kind of “proto-fuzzy law” in that they existed to ensure justice and fairness would be delivered but in a consistent manner.  The phrase however survives as a critique of subjective decision-making by authorities or inconsistencies in governance or law.

Although the psychiatric community has since the mid-twentieth century devoted some time to discussing, re-defining and pondering what is apparently the 1800-odd year history of foot fetishism, a glance at the literature does suggest it’s been thought usually an interesting quirk in the human condition rather than a condition, much less a mental disorder.  Before the American Psychiatric Association (APA) in 1987 published the revised third edition of the Diagnostic & Statistical Manual of Mental Disorders (DSM-III-R), fetishism was usually described as a persistent preferential sexual arousal in association with non-living objects or an over-inclusive focus on (typically non-sexualized) body parts (most famously feet) and body secretions.  With the DSM-III-R, the concept of partialism (an exclusive focus on part of the body) was separated from the historic category of fetishism and appended to the “Paraphilia Not Otherwise Specified” category.  Although one of the dustier corners of psychiatry, the field had always fascinated some and in the years since the DSM-III-R was published, a literature did emerge, most critics maintaining partialism and fetishism are related, can be co-associated, and are non-exclusive domains of sexual behavior.  There was a technical basis for this position because introduced in DSM-IV (1994) was a (since further elaborated) codification of the secondary clinical significance criterion for designating a psychiatric disorder, one the implications of which was that it appeared to suggest a diagnostic distinction between partialism and fetishism was no longer clinically meaningful or necessary.  The recommendation was that the prime diagnostic criterion for fetishism be modified to reflect the reintegration of partialism and that a fetishistic focus on non-sexual body parts be a specifier of Fetishism.

Fetish was from the Latin facere (to make) which begat factitious (made by art), from which the Portuguese feitico was derived (fetiche in the French), from which English gained fetish.  A fetish in this context was defined as "a thing irrationally revered; an object in which power or force was concentrated".  In English, use of fetish to indicate an object of desire in the sense of “someone who is aroused due to a body part, or an object belonging to a person who is the object of desire” dates from 1897 (although the condition is mentioned in thirteenth century medical documents), an era during which the language of modern psychiatry was being assembled.  However, the earliest known literary evidence of podophilia lies in dozens of brooding, obsessive love letters from the second century AD of uncertain authorship and addressed to both male and female youths.  That there are those to whom an object or body part has the power to captivate and enthral has presumably been part of the human condition from the start.

From the beginnings of modern psychiatry, such a focus was not in itself considered a disorder, unless accompanied by distress or impairment although it was noted by many that if even a nominally “harmless” fetish became an obsession, it certainly could impair healthy sexuality.  In DSM-5 (2013), the diagnosis was assigned to individuals who experience sexual arousal from objects or a specific part of the body which is not typically regarded as erotic and presumably any body part or object can be a fetish, the most frequently mentioned including underwear, shoes, stockings, gloves, hair and latex.   Fetishists may use the desired article for sexual gratification in the absence of a partner although it’s recorded this may involve nothing more than touching smelling the item and the condition appears to manifest almost exclusively in men, the literature suggesting a quarter of fetishistic men are homosexual but caution needs always to be attached to these numbers.  Because fetishism is something which many happily enjoy their whole adult lives, it never comes to the attention of doctors and a high proportion of the statistical material about fetishism is from patients self-reporting.  The statistics in a sense reflect thus not the whole cohort of the population with the condition but rather those who either want to talk about it or are responding to surveys.  That is of course true of other mental illnesses but is exaggerated with fetishism because so much lies with the spectrum of normal human behavior and the definitional limitations in the DSM-5 reflect this, including three criteria for Fetishistic Disorder and three specifiers:

Criterion 1: Over a six month period, the individual has experienced sexual urges focused on a non-genital body part, or inanimate object, or other stimulus, and has acted out urges, fantasies, or behaviors.

Criterion 2: The fantasies, urges, or behaviors cause distress, or impairment in functioning.

Criterion 3: The fetishized object is not an article of clothing employed in cross dressing, or a sexual stimulation device, such as a vibrator.

Specifiers for the diagnosis include the type of stimulus which is the focus of attention (1) the non-genital or erogenous areas of the body (famously feet) and this condition is known also as Partialism (a preoccupation with a part of the body rather than the whole person), (2) Non-living object(s) (such as shoes), (3) specific activities (such as smoking during sex).

The foot particularists also do PSAs (public service announcements).  When an image of feet was posted to Instagram with a caption claiming they belonged to Alexandria Ocasio-Cortez (AOC, b 1989, US Representative (Democrat-New York) since 2019 and one of "the squad"), the alleged foot-selfie was lent a whiff of scandal by their owner being in the bath, holding a vape with a bottle of pumpkin-scented shampoo nearby.  Quickly the story was debunked by the online foot fetishists at WikiFeet, the internet’s most comprehensive collection of pictures of women's feet.  In this case, Ms Alexandria Ocasio-Cortez’s Wikifeet page was used to C&C (compare and contrast) against the images in their library and it wasn’t a difficult task for the Wikifeet experts because the toes in the image were mildly brachydactyly (an inherited trait whereby the bones of the digits are relatively short) whereas AOC’s are not so afflicted.  Wikifeet’s users rate AOC’s feet at “3.92 stars” (nice feet), based on the 83 images in her page (many in sandals but some daringly bare).  Further research by the Wikifeet particularists revealed the feet surfacing provocatively from the pink bath-water really belonged to Sydney Leathers (b 1991) who became even better known by parlaying the publicity she attracted for being the sexting partner of disgraced New York politician Anthony Weiner (b 1964) into an apparently brief career as an aspiring porn star.  Why that didn’t flourish isn’t clear because rarely has there been a better porn star name than "Sydney Leathers" and Australian fellmongers and fetishists alike missed a marketing opportunity there.

Noting the definitional model in the DSM-IV-TR (2000), despite the history in psychiatry’s world of paraphilias and a notable presence in popular culture, there were those who claimed the very notion of a foot fetish was false because of that critical phrase “non-living” which would seem to disqualify a foot (unless of course it was no longer alive but such an interest would be seriously weird and a different condition; although in this context there are deconstructionists who would make a distinction between a depiction of a live foot and the foot itself, clinicians probably regard them as interchangeable tools of the fetishist although the techniques of consumption would vary).  The critic noted many fetishes are extensions of the human body, such as articles of clothing or footwear but that did not extend to feet and that diagnostically, a sexual fascination with feet did correctly belong in the category of “Paraphilia Not Otherwise Specified,” and thus be regarded as partialism: Foot partialism.

It was Sigmund Freud (1856-1939) who admitted that, lawfulness aside, as animals, the only truly aberrant sexual behavior in humans could be said to be its absence (something which the modern asexual movement re-defines rather than disproves).  It seemed to be in that spirit the DSM-5 was revised to treat podophila and many other “harmless” behaviors as “normal” and thus within the purview of the manual only to the extent of being described, clinical intervention no longer required.  Whether all psychiatrists agree with the new permissiveness isn’t known but early reports suggest there’s nothing in the DSM-5-TR (2022) to suggest podophiles will soon again be labeled as deviants.

The matter of podophilia is not exactly a neglected field but beyond the particularists it’s a niche topic for study, probably because despite being often curated as collections of images of objectified, un-clothed body parts, the stuff inherently is SFW (suitable for work) so is not as controversial as some fetishes.  Indeed, even were someone found to be in possession of many images of the feet of minors, unless the circumstances were unusual and disclosed suspicion of other behaviours, it’s likely no offence has been committed.  There have though been some academic studies including Sexualization of the Female Foot as a Response to Sexually Transmitted Epidemics: A Preliminary Study (1998) by A. James Giannini, Andrew E. Slaby, Gale Colapietro, Steven M. Melemis & Rachel K. Bowman.  A review of historic literature, the authors hypothesized a relationship between epidemics of sexually transmitted diseases and foot fetishism, the research prompted by an exponential increase in the behaviour seen in the 1980s, before AIDS had been listed as a pandemic.

The paper noted that during the second millennium there have been four major epidemics of STDs (sexually transmitted diseases, then the preferred term for what are now classed as STIs (sexually transmitted infections)): (1) what’s believed to have been an outbreak of gonorrhoea in the thirteenth century, syphilis in (2) the sixteenth and (3) nineteenth and (4) AIDS in the late twentieth and during each “there seemed to emerge a sexual focus on the female foot” which “disappeared with the epidemic's subsidence, usually after 30-60 years.”  What was intriguing was “the focus on feet was unique to each of these epidemic periods” whereas in all other eras studied, “eroticism was attached to breasts, buttocks and thighs.”  It was not suggested feet (bare or otherwise) didn’t appear in Biblical, Egyptian or Classical art and literature but they were not depicted as “sexual foci”.

It was in the thirteenth century things began to change as romantic writings came to include paeans to women's feet and the details were often not metaphorical but anatomical, describing in loving admiration the “aesthetically idealized woman's foot” which was to be “narrow with high arches.  The toes were to be somewhat long with no ‘webbing’ or folds of skin in between.  The great toe was longer than the second toe. The nails were to be elongated with large white moons and pale-pink nail-beds.  The perfect foot was expected to be “white on both plantar and ventral aspects” so clearly, like thighs, buttocks and breasts, women’s feet were expected to conform to what men had decided was “beautiful” and those with body parts outside the “standardized image” could not be beautiful. Plus ça change…

The Church looked askance at this “new” fetish, damning it as a “further form of degeneracy as Europe” and though the paper finds the trend faded to oblivion with the end of what is now believed to have been an epidemic of gonorrhoea, with the outbreak of syphilis in the sixteenth century, there appears again a “near-simultaneous reappearance of the foot fetish” which began in southern Europe before spreading north and the art of the time suggests it was then “toe-cleavage” was first identified as a motif, as a “voyeuristic mark of this time period as decolletage for other generations”.  Interestingly, 300-odd years on, the ideal structure was re-imagined and an “elongated second toe” became suddenly fashionable.  When syphilis re-appeared in the 1800s, so did the focus on women’s feet and because photography was available to the Victorians, there’s a record also of the reaction of polite society with the female foot “removed from photographic tintypes”: While men’s boots commonly remained exposed, women's boots or shoes were either covered with fabric or “mechanically cropped from the plate”.  Ballerinas would perform bare-footed (critics writing of her feet as they “flexed and extended”) ice-cream confections (called the “Trilby”) were sold in the shape of a woman’s foot and the “Cinderella fairy tale was revived with foot fetishistic overtones not now reflected in twentieth century versions”.

“Body part” contests offered scope for those who wouldn’t be “competitive” in mainstream beauty contests.  As a footnote, the perfection (in the sense of digital depiction) of generative AI (artificial intelligence) may see the end of the industry’s “body part model” niche in which those with exceptional hands, feet, eyes etc were contracted for photo-shoots involving just that one part.

In the nineteenth century, some did offer explanations (sometimes fanciful) for the phenomenon and although in the medical literature there were observations of the use of the foot “as a safe-sex alternative”, no systematic studies seem to have been undertaken.  The AIDS pandemic revived the interest and the proliferation of foot-fetish publications in the 1980s (before the internet was a mainstream product) was a marker of the trend and interestingly, the titles of what were usually glossy magazines avoided the words “feet” & “foot”, instead using “neutral” terms such as “Leg Action, Thigh High, Leg Show, Leg-Scene, High-heeled Women, Silk Stockings or Leg Tease”.  Despite that, the content seems overwhelmingly foot-centric and the conclusion was the publishers wished to “avoid embarrassment for the purchaser”.  That was interesting in that publications devoted to other body parts seemed to tend to use unambiguous titles and the paradox was that although feet were SWF, the perception was there was shame attached to the predilection, something not suffered by consumers of the definitely NSFW (not suitable for work) breast-related material.  Editorially, there were photographs mostly including feet and tips & techniques for “foot sex” which could be a pleasurable sexual alternative without risk of sexually transmitted diseases”, the foot described as a safe “erotic alternative to the anus and genitals”.  It was at this point even the mainstream magazines began to advocate “toe sucking” and “foot biting” between couples, not to avoid infections but because for even the most sexually jaded it would be a “genuinely new” experience, novelty in this field much valued.  Diligent washing prior to sucking and biting was recommended.

The pop band The Monks in 1979 released the single Nice Legs Shame About Her Face so the contest in Miami was really an early example of DEI (diversity, equity and inclusion).  It's a bit of a stretch but as a Lord Chancellor might have put it, "beauty contests" are a thing of the common law while the "most beautiful body part" competitions belong to equity. 

The AIDS pandemic of course remains afoot although advances in treatment have made it manageable for most, at least in developed economies though there are concerns how cuts to foreign aid will affect outcomes in poorer regions, especially sub-Saharan Africa and the Pacific islands.  Despite the the condition fading from public consciousness, foot particularism appears still to be flourishing, the absence of foot-focused print titles an indication of the general industry shift to digital content rather than any decline in interest and the count of related internet pages is said to be in the millions.  To explain the phenomenon which has for centuries re-occurred, the neurology community has also become involved.  In Phantoms in the Brain: Probing the Mysteries of the Human Mind (1998), neurologist V.S. Ramachandran (b 1991) and science journalist Sandra Blakeslee (b 1943) offered the theory of a link with brain areas for the feet and the genitals being physically close, their speculation being there may be some “neural crosstalk between the two”, the idea a concern about STIs induces the brain to be stimulated to think about feet, purely because of the effect of directly adjacent electrical activity.

Ginger

Ginger (pronounced jin-jer)

(1) Any of several zingiberaceous plants of the genus Zingiber (especially Zingiber officinale of the East Indies), native to South Asia but now cultivated in many tropical countries and noted for the pungent, spicy rhizome used in cooking and medicine (Ginger is one of the oldest known “anti-seasickness treatments).

(2) The underground stem of this plant, used fresh or powdered as a flavouring or crystallized as a sweetmeat.

(3) The rhizome of Zingiber officinale, ground, chopped etc, used as a flavoring.

(4) In informal use, piquancy; animation; liveliness; vigour.

(5) A reddish-brown or yellowish-brown colour

(6) A female given name, form of Virginia or Regina (also used of red-headed men as a nickname).

(7) In zoology, a given name for animals having ginger- or orange-coloured fur or feathers.

(8) Flavored or made with ginger, the spicy rhizome of the Zingiber officinale plant.

(9) In informal use, someone with “red” hair (a range which includes the various shades of ginger).

(10) In cockney rhyming slang, a bit of a homosexual (based on “ginger beer” (ie “queer”)).

(11) In slang, Ginger ale, or can or bottle of such (especially if dry).

(12) In colloquial use in Scotland (prevalent especially in Glasgow), any fizzy soft drink, or can or bottle of such (especially the famous Iron Brew).

Pre 1000: From the Middle English gingere, an alteration of gingivere, from the Old English ginȝifer & ginȝiber (gingifer & gingiber) (influenced by Old French gingivre & gingembre), from the Medieval Latin gingiber & zingiber (the Latin zingiberi from the late Ancient Greek ζιγγίβερις (zingíberis)), from the Prakrit (Middle Indic) singabera, from the Sauraseni Prakrit śr̄ngaveram, the construct being śr̄nga- (horn) + vera- (body), an allusion to the typical shape of the plant’s root when harvested which may be compared with the Old Tamil iñcivēr and the Tamil இஞ்சிவேர் (iñcivēr), the construct being இஞ்சி (iñci) (ginger) + வேர் (vēr) (root)).  Not all etymologists agree with the orthodox derivation of śr̄ngaveram, suggesting it may be Sanskrit folk etymology and the word may be from an ancient Dravidian word that also produced the modern name for the spice used in the Tamil.  The dissidents argue the Tamil iñci must at some point have had an initial “ś” and the Sanskrit śṛṅgabera was an imitation of the (supposititious) Tamil ciñcivēr with the European zingiber coming from the Tamil name.  Ginger is a noun, gingerness & gingerliness are nouns, gingering is a verb, gingered is a verb & adjective, gingerish, singersome, gingerlike & gingerish are adjectives, gingerly is an adjective & adverb and gingerliness is an adverb; the noun plural is gingers. The adjectives ginger-free & gingerless are non-standard but have appeared on menus and in the software in restaurant PoS (point-of-sale systems).  The adjectives gingerer & gingerest do exist but are now so rare as to be archaic.

It’s believed the word re-entered Middle English under the influence of twelfth century Old French gingibre (which in Modern French endures as gingembre).  As a reference to coloring, the first recorded use was of fighting cocks, dating from 1785, extended to persons exactly a century later (although of hair alone it was used thus in the 1850s).  The sense of “spirit, spunk, temper” was a creation of mid nineteenth century US English. Ginger-ale was first advertised in the early 1820s, the term adopted by manufacturers to distinguish their product from ginger beer (on sale since 1809 and the central exhibit in Donoghue v Stevenson [1932] AC 562, a landmark case in tort law, heard before the House of Lords) which sometimes was fermented.  The ginger-snap was a hard cookie (biscuit in UK use) flavored with ginger, the product on sale by at least 1855.

In various forms and sold under several names (ginger-snap, ginger biscuit, ginger cookie, gingernut etc), ginger snaps are one of the planet’s most popular cookies (biscuits) and while ginger (usually powdered because it’s most suited to the industrial production of food) obviously is the common flavoring, other ingredients sometimes used include cinnamon, molasses and cloves.  The recipes vary although all tend to produce hard, brittle cookies and are much favoured by those who lie to dunk the things in their tea or coffee (softening it) which does seem to defeat the purpose but dunking really is a thing.  Between countries ginger-snaps differ greatly but even within markets there are culinary regionalisms: The Griffin’s Gingernut is New Zealand’s biggest selling biscuit and the whole country is supplied using the same recipe but in Australia, Arnott’s Ginger Nuts vary in size, color, hardness and taste between states and that was not a deliberate corporate decision but the product of M&A (mergers & acquisitions) activities beginning in the 1960s when the Arnott’s Group was created, a number of previously independent local bakeries absorbed; fearing a revolt, it was decided to retain the long-established recipes.  All Ginger Nut biscuits are sold in 250g packages but while WA (Western Australia), SA (South Australia) and the NT (Northern Territory) share a common “sweet” mixture, those living in Victoria and Tasmania enjoy an even sweeter flavour (closer to similar biscuits sold overseas which are both larger and softer in texture).  In NSW (New South Wales) and the ACT (Australian Capital Territory) a “thick and hard” Ginger Nut is sold and Queensland (always different) enjoys a unique “thin, sweet and dark” product.  Arnott’s also revealed as well as differences in the mix, the baking time varies between varieties, accounting for the color and hardness.  For those wishing to make comparisons, there’s a choice of comparatives: (“more ginger” or (the rare) “gingerer” and superlatives: “most ginger” or (the rare) “gingerest”.

The noun gingerbread was from the late thirteenth century gingerbrar (preserved ginger), from the Old French ginginbrat (ginger preserve), from the Medieval Latin gingimbratus (gingered,) from gingiber.  It was folk etymology which changed the ending to -brede (bread) and in that form the word was in use by the mid-1300s; by the fifteenth century it had come to mean “sweet cake spiced with ginger” although the still popular confection “gingerbread man” wasn’t known until circa 1850.  The figurative use (indicating anything thought fussy, showy or insubstantial) can be regarded a sort of proto-bling and emerged around the turn of the seventeenth century; in domestic architecture or interior decorating it was used as a critique by at least the late 1750s, use possibly influenced by the earlier “gingerbread-work” which was sailor’s slang for the often elaborately carved timberwork on ships.  Bling not then being in use, the term “gingerbread” often was used of the increasingly rococoesque detailing being applied to US cars by the late 1950s and it was revived as the interiors became “fitted out” in the 1970s although stylists (they weren’t yet “designers”) preferred “gorp”.  Decades before, as a noun, becoming Detroit styling studio slang, gorp was (as a verb) defined as meaning “greedily to eat” and it’s believed the alleged acronyms “good old raisins and peanuts” & “granola, oats, raisins, peanuts” are probably backronyms.  What the stylists were describing was the idea of “adding a bit of everything to the design”, the concept illustrated by creations such as the 1958 Buick, the design imperative of which was "combine as many as possible differently-shaped chrome bits & pieces".  Gorp intrinsically was "added on gingerbread" and shouldn't be confused with something like the 1958 Lincoln which was relative unadorned (ie un-gorped) and gained its distinctiveness from the design imperative "combine as many as possible shapes, curves, lines & scallops.  Of course, the two approaches can appear in unison, witness the 1961 Plymouths.

The phrase “gin up” (enliven, make more exciting) is now often used as “gee-up” but the original was first recorded in 1887 (“ginning” (the act of removing seeds from cotton with a cotton gin) in use by at least 1825) and while it’s been speculated there may be some link with “gin” (in the sense of “engine”, the best known being the “cotton gin”) most etymologists think it improbable and think it more likely the origin lies in the characteristics if the root of the plant as used in food (spicy, pizzazz) and most compelling is the entry for feague (used in its equine sense): “...to put ginger up a horse's fundament, and formerly, as it is said, a live eel, to make him lively and carry his tail well; it is said, a forfeit is incurred by any horse-dealer's servant, who shall shew a horse without first feaguing him. The figurative use of feague (encouraging or spiriting one up) has faded but “gee up” remains common.”  So, for dressage or other equestrian competitions in which the judges liked to see a horse’s tail elegantly raised (al la the high ponytail perfected by the singer Ariana Grande (b 1993)), a stable-hand’s trick for achieving this was to insert an irritant (such as a piece of peeled raw ginger or a live eel) in its anus, an additional benefit being it “increased the liveliness of the beast”.  That means when modern young folk speak of “geeing up” or a “a gee up”, they’re referring (figuratively) to shoving some ginger up someone’s rectum; presumably, most are unaware of the origin of the phrase but definitely, they should be told.

According to Ariana Grande, the “snatched high ponytail” she made her signature look was better described as a “high extension ponytail” because extensions were used for added length and volume.  It’s a dramatic look but the health and beauty site Self cautioned wearing the style is not risk-free and for some wearers pain may be unavoidable.  Interviewed, dermatologist Dr Samantha Conrad explained hair follicles are the “little pockets of skin that surround the root of a hair” while the “nerves and blood vessels in the scalp feed those roots”.  What happens when hair is pulled tightly back and elevated, it puts the hair “at a sharp angle”, placing “tension on the follicles”, causing “some strangulation of the unit”.  Because this tension is exerted on the nerve endings, there can be pain, something exacerbated if the hair is long and thick (or augmented with extensions) because the extent of the tension is so influenced by weight, physics dictating additional mass will induce greater “traction on the hair follicle”.  Pain obviously can be an issued but the consequences can be more serious, dermatologist Dr Joshua Zeichner explaining “chronic traction on the hair follicles can cause permanent thinning of the hair”, a phenomenon described as “traction alopecia”.

Helpfully, in 2018 Teen Vogue published excerpts from the transcript of a radio interview in Ms Grande clarified the pronunciation of her surname, apparently something which had for some time baffled a few.  What she revealed was that within her family, historically “Grande” had not been pronounced Grahn-day (a la the famous Starbucks coffee cup).  Her grandfather had pronounced it Gran-dee with the emphasis on the second syllable because that was an “Americanized version” of the Italian form which “made it more chill”.  It was her brother who adopted Grahn-day, simply because he preferred the sound.  Clearly, Teen Vogue is an under-appreciated source of linguistic tips.  In 1969, when introducing the Mustang Grandé, Ford attempted to remove any ambiguity by using an “é” with a l'accent aigu (acute accent), indicating the pronunciation should be Grahn-day, despite the spelling not being used in any language where “grande” exists.  Introduced in 1969, the Mustang Grandé was the range’s “luxury” version and its addition to the line was a harbinger for the trend of the 1970s as high-performance was, for many reasons, put on-held.  The Grandé used a standard mechanical specification but included a long list of “convenience” and “dress-up” items and was a success; it was the spiritual ancestor of the “Ghia” versions which for decades would be among the most elaborately equipped Fords.  Surprisingly, despite being aimed at a demographic not interested in going fast, the Grandé could be ordered with almost any engine in the catalogue, including the 428 cubic inch (7.0 litre) Super CobraJet, designed for use on drag strips and some really were built so configured; only the unique Boss 429 was not available.  A vinyl roof was standard but the rarely ordered houndstooth option cost an additional US$28.

Ominous as all that sounds, the doctors say it’s not necessary entirely to abandon the high ponytail because the issue isn’t the style but the implementation, the critical factor being how tightly the hair is pulled from the scalp.  Tension alopecia can occur with any tightly-pulled ponytail, plait or braid so the trick is to avoid excessive tension, the recommended approach to create a “high pony” and then gradually loosen the area in front of the elastic.  Obviously, the greater the mass of the hair, physics  dictates it will be less inclined to retain a shape tending from the vertical at the scalp so those handling much volume will probably have to resort to some sort of at least semi-rigid tubular device through which the strands can pass to be supported.

Roland DG's 50 Shades of Ginger illustrates the extent to which the spectrum can spread (centre).  Natural redhead Lindsay Lohan (b 1986, left) in 2012 illustrates a classic implementation of what most probably think of as “ginger hair” while Jessica Gagen (b 1996; Miss England 2022, Miss World Europe 2023 & Miss United Kingdom 2024) appears (during heatwave, right) with what would be classified by many as a “light copper” rather than some hue of “ginger”.  Interestingly, reflecting the often disparaging use of the word (in the context of hair) “ginger” appears only infrequently on manufacturers' hair dye color charts.

Ginger can be used to describe those with “red” hair (a term which covers quite a range including shades of ginger in the conventional sense that is used of color) and such may be jocular, in disparagement or neutral.  In slang, a “ginger minger” was “an unattractive woman with ginger hair” and their “ginger minge” was their pubic hair; the male equivalent was a “ginger knob”.  In the hierarchy of vulgar slang, fire-crotch (a person who has red pubic hair) probably is worse but it should not be confused with “lightning crotch” (in obstetrics, the condition (suffered late in pregnancy), of having intense pain shoot through the vaginal area, induced especially by the baby's head lowering and bumping into the pelvis).  While a “normal symptom of pregnancy” and not typically a cause for medical intervention, it can be unpleasant; what is happening is the fetus is applying pressure on the cervix or the nerves surrounding the cervix (the cervix the lowest part of the uterus where a fetus develops).

One with a preference for ginger-haired souls could be said to be a gingerphile while one with an aversion would be a gingerphobe.  The matter of gingerphobia was explored by the US television cartoon show South Park (on Paramount+'s Comedy Central since 1997) in the episode Ginger Kids (season 9, episode 11, November 2005) in which was introduced the noun gingervitis (a portmenteau word, the construct being ginger +‎ (ging)ivitis); in pathology, the condition gingivitis is an inflammation of the gums or gingivae.  What South Park’s writers did was provide the gingerphobic with something of a rationale, gingervitis treating red headedness as if it were a disease or affliction.  Linguistically, it could have been worse: in German the synonym for gingivitis is the compound noun Zahnfleischentzündung and “zahnfleischentzündungvitis” sounds an even more distressing condition.  Neither gingerphobia nor gingervitis have ever appeared in the American Psychiatric Association's (APA) Diagnostic and Statistical Manual of Mental Disorders (the DSM, in nine editions 1952-2022). 

In Cockney rhyming slang (a cant used by Cockneys in which a word or phrase is replaced by a rhyming word or phrase, this word or phrase then often being abbreviated to its first syllable or syllables, or its first word with the word chosen as the rhyme sometimes sharing attributes with the word it replaces) “ginger” meant “a bit of a homosexual” (based on the “beer” in “ginger beer” (ie “queer”)).  If that didn’t please, there was also (1) “Brighton Pier” (queer from “pier”), (2) “iron” (poof from “iron hoof”), (3) “perry” (homo from “Como) (this was purely phonetic, the popular singer Perry Como (1912-2001) was not gay) and (4) “haricot” (queen from “haricot bean).  However, the guides caution “stoke” (bent from “Stoke-on-Trent”) references “bent” in the sense of both “gay” and “criminal” so it should for obvious reasons be deployed with care.

In De materia medica (On Medical Material), his five volume encyclopedic pharmacopeia on herbal medicine and related medicinal substances, the Ancient Greek physician Pedanius Dioscorides (circa 40-circa 90) included an entry for ζιγγίβερις (zingiberis) (ginger) as treatment for stomach and digestive ailments, in addition to its properties as “a warming spice”.  The historian Pliny the Elder (24-79) also discussed zingiber, noting its origin from Arabia and India and the use in medicine, especially for the stomach and digestion.  The use was picked up by physicians (officially recognized and not) in many places, both as a stimulant and acarminative (preventing the development of gas in the digestive tract) but despite the persistent myth, no document has ever been unearthed which suggests in Antiquity ginger was ever recommended as “sea-sickness medicine”.  Despite that, in the modern age, ginger is sometimes promoted as a cure (or at least an ameliorant) for nausea suffered at sea, in flight, while driving or motion-sickness in general and there appears to be some evidence to support the use.

Google ngram for Ginger group: Because of the way Google harvests data for their ngrams, they’re not literally a tracking of the use of a word in society but can be usefully indicative of certain trends, (although one is never quite sure which trend(s)), especially over decades.  As a record of actual aggregate use, ngrams are not wholly reliable because: (1) the sub-set of texts Google uses is slanted towards the scientific & academic and (2) the technical limitations imposed by the use of OCR (optical character recognition) when handling older texts of sometime dubious legibility (a process AI should improve).  Where numbers bounce around, this may reflect either: (1) peaks and troughs in use for some reason or (2) some quirk in the data harvested.

In another example of why English (in some ways simple and logical) must seem bafflingly inconsistent to those learning the tongue, while “ginger up” and “ginger group” are phrases related to “imparting piquancy or enlivening someone or something”, to speak of proceeding “gingerly” means “acting hesitantly; with great caution”.  The explanation is the divergence is not the result of a word shifting meaning in two directions but instead two different etymologies converging phonetically in modern English.  The figurative sense of “ginger up” (familiar to the young as “gee up”) meaning “add energy or enthusiasm) emerged in the nineteenth century and came from the equestrian practice of putting ginger (or so some other irritants) in or near a horse’s anus so it would be more “spirited” (performing with greater verve or liveliness) and appear with its tail held high.  From this (the expression rather than stuff shoved in the rectum) came “ginger group” which described a (usually) small and energetic faction within a larger organization which aimed to stimulate or invigorate change or action.  The first known use of the term was in 1920s British politics.

Confusingly “gingerly” is unrelated to “ginger” and has nothing to do with novel uses of spice in equine management.  Developing in parallel with but separately from Middle English, gingerly was from the Old French gensor & gencier (which endures in Modern French as gentil (delicate; dainty), from the Latin gentilis.  Appending the suffix -ly turned adjective into adverb and by the sixteenth century gingerly came to mean “delicately, with grace or refinement” and by the early 1900s the idea of a “refined or dainty manner” evolved into “cautiously; with care”.  Gingerly is thus a “false cognate” with ginger (the spice).  There the linguistic tangle should end but because of the development of modern slang, “ginger” has established an (informal) link with “gingerly” through “gingerness” which can be both (1) a synonym for “gingerliness” (a gingerly state, attitude or behaviour and (2) in informal (sometimes derogatory) use: redheadedness.
