Mushroom

Mushroom (pronounced muhsh-room)

(1) Any of various fleshy fungi including the toadstools, puffballs, coral fungi, morels etc; any of several edible species, especially of the family Agaricaceae, as Agaricus campestris meadow mushroom, or field mushroom, cultivated for food in many places.

(2) A fungus producing such fruiting bodies.

(3) Anything of similar shape or correspondingly rapid growth.

(4) As ellipsis of “mushroom cloud”, a large, mushroom-shaped cloud of smoke or rubble, formed in the atmosphere as a result of an explosion (or other sudden release of energy), especially a nuclear explosion.

(5) Of, consisting of, or containing mushrooms.

(6) Resembling a mushroom in shape or form; to have or assume the shape of a mushroom.

(7) Of rapid growth and often brief duration (to spread, grow, or develop quickly).

(8) To gather mushrooms (typically as “mushrooming”, practiced by a mushroomer).

(9) As “magic mushroom” (used typically in the plural), any mushroomlike fungus that after ingestion induces psychedelic effects (“shrooms” to users, “psilocybin mushroom” to clinicians in some jurisdictions where prescription is now lawful).

(12) In architecture, a concrete column with a thickened portion at the top, used to support a slab.

(13) In slang, an individual who rises rapidly from obscurity or poverty (now rare and displaced by “upstart”); the figurative sense of something that grows very quickly or seems to appear suddenly remains in use.

1350–1400: Following the usual conventions in English, it may be expected the construct was mush- + -room but those words wholly are unrelated and the ultimate source is unknown.  Mushroom was an alteration (by folk etymology) of the Middle English muscheron & musseroun, from the eleventh century Middle French mousseron, from the Anglo-Norman musherum & moscheron, from the Old French moisseron, from the Late Latin mussiriōn- (stem of mussiriō).  The Old French word had a murky history and etymologists suspect it was from the Old French mosse & moise (moss (from which modern French gained mousse (on the basis of the first known use being of a type of fungus which grows in moss))), from the Frankish mosu (moss) or the Old Dutch mosa (moss).  The Old French was akin to the Old High German mosa (moor, swamp), the Old High German mos (moss, bog) & mios (moss, mire), the Old English mēos (moss) & mōs (bog, marsh), the Old Norse mosi (moss) & myrr (bog, mire), all from the Proto-Germanic musą, muso & miuziz (mosses, bog), from the primitive Indo- European mews- (mosses, mold, mildew).  It displaced the native Old English swamm.  The clipping shroom is a synonym (most popular with users of magic mushrooms) and the spelling mushrump is long obsolete (the modern spelling more or less standardized by the 1560s).  Mushroom is a noun, adjective & verb, mushroomed is a verb, mushrooming is a noun & verb, mushroomer is a noun, mushroomic, mushroomless, mushroomlike, mushroomoid & mushroomy are adjectives; the noun plural is mushrooms.

Ingredients

3 tablespoons olive oil or butter
3 cups thinly sliced baby portabella mushrooms or white button mushrooms
½ cup finely chopped onion
1-2 cloves garlic, minced
3 tablespoons all-purpose flour or cup for cup gluten-free flour
3 cups beef broth/stock or vegetable stock
Salt and pepper to taste

Instructions

(1) In a large skillet, heat oil over medium-high heat.  Sautee mushrooms and onions until they are nicely browned (should take around 7 minutes).  Add in garlic and stir until fragrant (about 30 seconds).

(2) Stir in the flour and cook for 1 minute.  Whisk in the broth, remembering to scrape from the bottom of pan all the "browned bits" (the best part).  Reduce to a simmer and simmer until thickened, then remove from heat.  Taste for salt and pepper and season to taste.

The alternative etymology (noting the Ancient Greek μύκης (múkēs) (mushroom) suggests the Old French may be of pre-Roman origin and it remains a matter of debate among etymologists (almost all lexicographers stick to “of uncertain origin”).  What is agreed is the noun “mushroom” was at first applied to almost any of the larger fungi but later to the agaricoid fungi (especially the edible varieties).  The figurative use for something or someone that makes a sudden appearance in full form dates from the 1590s; it was applied especially an upstart person (bounder) or family (those who rose rapidly from a low station in life).  All that was based on the mushroom’s impressively rapid rate of growth and by the 1740s the figurative use substantially has lost the “upstart” sense and came to be used generally of “expanding or increasing rapidly; to rise suddenly in position or rank”.  The famous (or infamous) “mushroom cloud” was first widely described in 1916 (World War I (1914-1918) a time & place of big explosions witnessed by many with cameras) but the OED (Oxford English Dictionary) cites the first use as dating from US in 1902.  It thus long pre-dates the nuclear-age but the phenomenon would for millennia (long before there were explosives) have been observed by those watching volcanic eruptions.  After photographs of the immediate aftermath of the A-bombing of Hiroshima & Nagasaki (August 1945) widely were publicized, the term became popular and spread to many aspects of popular culture including film, art and T-shirts.

Germania model, circa 1940.  The scale of the buildings was monumental and Speer was aware of the comparisons with the Rome and Athens of Antiquity, even writing (a not wholly original) Theory of Ruin Value” arguing the importance of designs that might, thousands of years hence, leave magnificent ruins.

Until in the twenty-first century the CCP (Chinese Communist Party) began doing things at a scale once thought unsustainable, the urban-redevelopment plan imagined on a grandest scale was that for Berlin designed by Albert Speer (1905–1981; Nazi court architect 1934-1942; Nazi minister of armaments and war production 1942-1945).  What was the be the capital of the Third Reich (and, in the minds of the most delusional of the Nazis: “of the world”) would be renamed Germania and, as Adolf Hitler (1889-1945; Führer (leader) and German head of government 1933-1945 & head of state 1934-1945) told Speer’s wife: “Your husband is going to build buildings for me the likes of which haven't been built for 4,000 years.  Prone to lies and exaggeration, this was one of the occasions the Führer was being truthful and although there was little the plans for Germania that was original, what was impressive was the scale, Speer taking reference points from architectural history (the Pantheon in Rome, the Arc de Triomphe in Paris) and making the German versions bigger.  Although at the time much taken with what he called the regime’s “Empire style”, in his (sometimes reliable) post-war memoirs (Erinnerungen (Memories or Reminiscences) and published in English as Inside the Third Reich (1969)) he admitted the stylistic failure, above all because the architecture wholly was disconnected from the human scale.

Of all that Speer planned for Hitler's megalomaniacal vision of Germania, only small fragments remain but the strangest and largest relic is the Schwerbelastungskörper (heavy load-bearing body) a concrete structure 30 metres (100 feet) tall and weighing 12,650 tons (11,476 tonnes); locals nicknamed it der Pilz (the mushroom).  Located on the city’s southern edge (near modern day Südkreuz station), the giant concrete cylinder was in 1941 erected to test the suitability of Berlin’s sandy soil, something of great significance because most of Germania’s large, representational buildings would be constructed from granite, concrete & steel; although structural engineers could solve the challenges the architects designs presented, the only way to be certain the soil could handle such weight was to conduct a practical, real-time, full-size experiment.  While the data were required for much of what was planned, of particular interest was intended landmark of the Victory Arch which, at 117 metres (384 feet) tall and 170 metres (558 feet) wide would obviously exert much pressure and, having the foundations sinking into the sandy soil was less than ideal.  With a footprint of exactly 100 m3, Speer’s giant, reinforced concrete “mushroom” was placed in a way that would as closely as possible emulate the forces involved; it sat 18 metres (60 feet) deep with the above-ground extending 14 metres (46 feet) high while inside there were a number of measuring devices recording movement.  As things transpired the instruments recorded sinking between 110-180 mm (4.3-7.1 inches) across the six measuring points and that was well beyond the 60 mm (2.4 inches) deemed by Speer as the upper limit of acceptability.  Whether the findings would have compelled a change to the arch or indeed any of Germania’s other gargantuan designs will never be known because, as the tide of war turned, the resources devoted to the project were re-allocated to more urgent tasks and by 1943 Speer, by then also minister of armaments and war production, quietly shut-down the Germania planning office.  So little was built and less survived but the “mushroom” remained and is now a tourist attraction and a site visited by many organized tours.

As the photographs suggest, the mushroom clouds generated by large volcanic eruptions and the detonation of nuclear weapons can look similar because the same atmospheric physics are operating despite the underlying energy-release mechanisms being completely different and, counterintuitively, there is no precise TNT (abbreviation of trinitrotoluene (an explosive substance used in blasting)) equivalent threshold above which every explosion produces a mushroom cloud. A mushroom cloud is principally a consequence of buoyancy and atmospheric fluid dynamics, rather than merely a product of energy released, thus the phenomenon can occur with nuclear explosions, large conventional explosions, volcanic eruptions and even especially intense fires.  What an explosion does is produce a very hot, rapidly expanding mass of gas and entrained material and this rises because the air above has less resistance than the ground below; it rises because it has acquired enormous upward momentum and, as it rises, it entrains surrounding air.  The most important mechanism in the ultimate generation of a mushroom cloud’s distinctive shape is a phenomenon plasma physicists call “thermal buoyancy”.

Familiar from many conditions in climate science, as hot material rises, the heated gas being less dense than the surrounding atmosphere, the rising plume entrains cooler air, increasing its volume while reducing its average temperature, a process that continues until its density approaches that of the surrounding atmosphere at which point, the rising material spreads laterally, producing the mushroom cloud’s characteristic “cap”, the outer regions circulating downwards, maintain the shape of the stem.  There are scaling relationships between explosion energy and the size, height and evolution of the resulting plume and consequently, as a general principle, as explosions become larger, a mushroom cloud becomes increasingly likely under appropriate atmospheric conditions.  So the mushroom cloud is a product of the environment; the same release of energy in different conditions (an explosion deep underground; a large underwater explosion; an explosion in a confined structure; energy released over a sufficiently long period rather than instantaneously) will tend not to create one whereas a relatively modest release of energy can produce one if the geometry and atmospheric conditions are favourable.  So, a mushroom cloud is a thing not of yield but of atmospheric conditions.

In 2023, Australian mother of two Erin Patterson (b 1974) murdered three of her relatives and nearly killed a fourth by preparing for them a lunch of Beef Wellingtons laced with highly toxic death cap mushrooms.  Amanita phalloides (the more evocative “death cap” the common name) is a basidiomycete fungus and mushroom (one of many in the genus Amanita) and although originally from Europe, it has spread around the planet as have many species (zoological & botanical) in the age of mass-movement of people and goods.  Dangerously, the death cap closely resembles a number of (variously bland and delicious) edible mushrooms used in many dishes so mushroomers must take care when mushrooming (harvesting wild mushrooms).  They’re the most poisonous of all known mushrooms and a single example contains enough toxin to kill an adult human; unsurprisingly, death caps are estimated to be responsible for as many as 90% of the annual death-toll from eating toxic mushrooms.  Quite what is the extent of the annual loss of life is uncertain because in rural parts of Asia (where foraged mushrooms are common in diets) the statistics are not reliable but it’s believed the numbers bounce-around between 100-300.  The principal toxic constituent (hardly affected by cooking or freezing) is α-Amanitin which causes liver and kidney failure.

It was severe liver failure that was the cause of the death of Erin Patterson’s three victims, all of whom died within a week of falling ill (despite one receiving a liver transplant); the sole survivor recovered after several weeks of treatment.  The trial was conducted before a jury that delivered a guilty verdict on all three charges and the judge handed down a sentence of life imprisonment with a non-parole period of 33 years; there was immense international interest in the case and it was the first sentencing hearing in the state of Victoria to be live-streamed.  In what was anyway a macabre tale, one interesting aspect was the way Erin Patterson chose to learn about the nature of the death cap; some will have drawn the conclusion: “When researching murder-methods, don’t use one’s own digital devices.  The case currently is on appeal, the defense seeking a retrial on several procedural and technical grounds while the state is arguing the sentence was “manifestly inadequate” and there should be no possibility of parole.  On X (formerly known as Twitter), some were even more unforgiving, suggesting: “She should get the chair.

Cryptic crochet: Erin Patterson crocheted a rat as a gift for her defense counsel.  According to press reports, it was an expression of “thanks” but a crocheted mushroom would have been a nice touch.

In her cell, mushroom lady (the public's choice of dub upon the case being publicized) is said to pass the hours crocheting, an intricate, time-consuming business but for those serving long prison sentences, time is relative in a way different to that made famous by Albert Einstein (1879-1955) and for the seven Nazis incarcerated in Spandau prison after the first Nuremberg Trial (1945-1946), “time” often came up in their sometimes awkward conversations.  Grand Admiral Erich Raeder (1876–1960; head of the German Navy 1928-1943) served as prison librarian and, responding to a complaint from one of his fellow inmates that his handing out the four permitted (and by 1954 uncensored) newspapers (one selected by each of the powers administering the prison (France (Kurier), the UK (Frankfurter Allgemeine Zeitung), US (Die Welt) & USSR (Berliner Zeitungbound in one folder meant “It will take too long for one person to read all four newspapers”, answered “That doesn't matter. You've got plenty of time, after all.”  Despite that uncompromising start, within two days the admiral relented, averting the threat of mutiny by distributing the papers singularly. 

Ozempic: The famous “fat jab”.  Now on GLP-1 fat jabs, hopefully the prison authorities will permit her (once slender) to create content and open an OnlyFans page with proceeds going to the families of her victims.

One unexpected coda to the trial was the announcement mushroom lady has been granted access to taxpayer-funded Ozempic (a GLP-1 (glucagon-like peptide-1) appetite suppressant), the official explanation being her inability to pursue an exercise regime while in solitary confinement; because of the nature of her offences, it's expected she'll remain in solitary confinement for the foreseeable future (33 years presumably within the vista of foreseeable”).  Unfortunately, her previous exercise techniques were not disclosed, something that would have been of interest to many pursuing weight-loss.  Doubtlessly anticipating some public outrage at the thought taxpayers would be footing the bill for mushroom lady to get free “fat jabs”, a spokesperson for Victoria’s Department of Justice issued a statement confirming weight loss drugs were just another medicine and would be provided to prisoners based on a clinician's advice: “Prescriptions are only given by clinicians when there’s a clear medical need - like preventing serious conditions such as type 2 diabetes.  Access to prescribed weight loss medication was introduced in response to recommendations from the Coroner following a death in custody linked to obesity.”  The convicted mass-murderer had told the court she “had a problem” with body image and binge-eating, a perhaps unnecessary confirmation given some of the photographs circulated by the media.

Pavlova

Pavlova (pronounced pav-luh-vuh, pahv-loh-vuh, pav-luh-vuh or pah-vluh-vuh (Russian)).

Circa 1930: Named after Russian ballet ballerina Anna (pronounced ah-nuh) Pavlova (1885-1931).  Pavlova is a transliteration of the Russian surname Па́влова (Pávlova), the feminine variant of Па́влов (Pávlov).  Pavlova is a noun and Pavlovian is an adjective; the noun plural is pavlovas.  The standard short form (of the cake) is "pav" and if used as a proper noun, there's an initial capital.

Although coined at much the same time, the adjective Pavlovian is unrelated to the Russian ballerina or meringue cakes.  It refers to the theories & experimental work of Russian physiologist Ivan Petrovich Pavlov (Ива́н Петро́вич Па́влов; 1849-1936), especially in connection with the conditioned salivary reflexes of dogs in response to the mental stimulus of the sound of a bell (in the West, his work was in 1911 originally referred to as the “Pavloff method” because of a misunderstanding by editors).  His work was a landmark in experimental behavioralism, inducing a dog associatively to link a biologically potent stimulus (food) with a previously neutral stimulus (a bell).  The phrase “Pavlov’s dog” entered English to describe a conditioned response (reacting to a situation on the basis of taught behavior rather than reflectively).  One interesting aspect of comrade Pavlov’s career is he made no secret of his opposition to many aspects of communism in the Soviet state built by comrade Stalin (1878–1953; leader of the USSR 1922-1953), on occasions making his views plain even to the general secretary himself.  Despite that, no action appears ever to have been taken against him and after he died (at 86 of natural causes), he was granted a grand funeral.

Anna Pavlova was famous for her interpretation of The Dying Swan, a solo dance choreographed by Mikhail Fokine (1880-1942) to Camille Saint-Saëns's (1835-1921) Le Cygne (The Swan) from Le Carnaval des animaux (The Carnival of the Animals (1922)), commissioned as a pièce d'occasion (an artistic work produced for a special event) for the ballerina who performed it on some 4000 occasions.  It's a short, intense piece which follows the last moments of a swan and for years Ms Pavlova kept a pet swan called Jack.  That she lent her name to a light, meringue-based dessert with a crisp crust and soft, marshmallowy centre was a consequence of the impression she made on tours of Australia & New Zealand during the 1920s.  Such was her elegance, lightness, and grace on stage, the meringue’s airy texture was seen as the culinary expression of her ethereal dancing style, chefs seeking to create something which was at once a thing of swirling style yet also ephemerally fragile.

New Zealand is a small country in the remote South Pacific which has over the years produced some notable figures such as (1) Lord Rutherford (1871–1937) who, although a physicist who regarded other branches of science as mere applications of engineering which worked within the laws of physics, was awarded the 1908 Nobel Prize in chemistry and is most remembered for his work which led to the atom being split in 1932, (2) Sir Edmund Hillary (1919–2008) who, with the Sherpa mountaineer Tenzing Norgay (1914–1986), was the first to ascend Mount Everest and (3) Sir David Low (1891–1963) who was among the most noted and prolific political cartoonists between the troubled 1930s and the early Cold War years.  The country has also for more than a century fielded what has been usually the world’s most successful rugby union side (the recent inconsistency of the All Blacks not withstanding) and memories are long, the try disallowed by a Scottish referee in a 1905 test against Wales at Cardiff Arms Park (Wales 3, All Blacks 0) still a sore point.

Less bitter but no less contested than the matter of the disallowed try is the origin of the pavlova, the invention of which is claimed by both Australia and New Zealand.  What all agree is the cake is a mixture of egg whites and sugar, topped usually with cream and fresh fruit, named after the Russian ballerina Anna Pavlova who toured both countries during the 1920s.  Researchers on both sides of the Tasman Sea (referred to by locals as “the ditch”) have long trawled cook books and newspapers to find the earliest entry but according to the Oxford English Dictionary (OED), New Zealand appears to hold the evidential advantage, a recipe from there having been verified as published in 1927 while the oldest claimed entry from Australia dates from 1935.  That however resolves only the use of Ms Pavlova’s name as the description, pastry chefs adding cream to meringue known even in the nineteenth century and the 1927 recipe in the book Davis Dainty Dishes, published by the Davis Gelatine company, was a multi-colored jelly concoction.  New Zealand’s historians of food concede the culinary point but cite recipes from 1928 & 1929 which are definitely of meringue, cream and fruit.  Strangely perhaps, the OED remained on the lexicographical fence, listing the origin as an ambiguous "Austral. and N.Z."

Espresso martini pavlova

Preparation: 1 hour

Cooking: 2 hours:

Serves: 10-12

Ingredients

8 egg whites
Pinch of cream of tartar
1 tablespoon ground coffee powder
430 gm (2 cups) caster sugar
2 tablespoons of corn-flour
1 teaspoon white vinegar
600 ml (l carton) thickened cream
125 ml (½ cup) coffee liqueur
2 teaspoons cocoa powder
Chocolate-coated coffee beans (to decorate)
Dark chocolate curls (to decorate)
Coffee vodka syrup
2 tablespoons vodka
2 teaspoons arrowroot
100 grams (½ cup, firmly packed) brown sugar
125 ml (½ cup) prepared espresso coffee

Instructions

(1) Preheat oven to 120C (100C fan forced) (250F (210F fan forced).  Draw a 200 mm (8 inch) circle on 2 sheets of baking paper.  Place each sheet, marked side down, on a baking tray.

(2) Use an electric beater with a whisk attachment to whisk the egg whites and cream of tartar in a clean dry bowl until firm peaks form.  Gradually whisk in the coffee powder.  Add the sugar, 1 tablespoon at a time, whisking constantly until the sugar dissolves and the mixture is thick and glossy.  Beat in the corn-flour and vinegar.

(3) Divide meringue mixture among the 2 marked circles on the prepared trays. Use a palette knife to spread mixture into 2 evenly shaped discs.  Bake for 2 hours or until meringues are dry and crisp.  Turn off oven. Leave meringues in the oven, with the door slightly ajar, until cooled completely.

(4) Meanwhile, to make the coffee vodka syrup, combine the vodka and arrowroot in a small bowl.  Combine the sugar and coffee in a small saucepan.  Bring to the boil over high heat, stirring, until the sugar dissolves. Reduce heat and simmer for 3 minutes or until the syrup has thickened slightly.  Stir in the vodka mixture and return to the boil, boiling for 1 minute or until thickened.  Remove from heat and transfer to a small bowl and set aside to cool.  Place in the fridge until required.

(5) Use electric beaters to beat the cream in a bowl until soft peaks form. Beat in the coffee liqueur and cocoa until firm peaks form.

(6) Place 1 pavlova disc on a serving plate. Top with half the cream mixture. Drizzle with a little coffee vodka syrup. Scatter with coffee beans and chocolate curls.  Repeat with the remaining disc, cream mixture, syrup, coffee beans and chocolate curls.  Serve.

Peanut

Peanut (pronounced pee-nuht)

(1) The pod or the enclosed edible seed of the plant, Arachis hypogaea, of the legume family, native to the tropical Americas (and probably of South American origin).  During the plant’s growth, the pod is forced underground where it ripens.  The edible, nut-like seed is used for food and as a source of oil (historically known variously also as the pinder, pinda and goober (used south of the Mason-Dixon Line (originally as “goober pea)), earthnut, groundnut & monkey nut (pre-World War II (1939-1945) UK use).

(2) The plant itself.

(3) Any small or insignificant person or thing; something petty.

(4) In US slang, a very small clam.

(5) In slang, barbiturates (recorded also of other substances delivered in small pills).

(6) In slang, small pieces of Styrofoam used as a packing material (known also as the “packing peanut”).

(7) Of or relating to the peanut or peanuts.

(8) Made with or from peanuts.

1790–1800: The construct may have been pea (in the sense of the small green vegetable) + nut but may etymologists think it was more likely a folk etymology of pinda or pinder, both forms still in dialectal use south of the Mason-Dixon Line.  The plant is apparently native to South America and it was Portuguese traders who early in the sixteenth century took peanuts from Brazil and Peru to Africa by 1502.  Its cultivation in Chekiang (an eastern coastal province of China) was recorded as early as 1573 and the crop probably arrived with the Portuguese ships which docked there.  According to the broadcaster Alistair Cooke (1908–2004), The spellings pea nut & pea-nut are obsolete.  Peanut is a noun & verb. Peanutted & peanutting are verbs and peanutty & peanutlike are adjectives; the noun plural is peanuts.

The word appears in many aspects of modern culture including “circus peanut” (a type of commercial candy), “cocktail peanuts” (commercially packaged salted nuts served (for free) in bars to heighten thirst and thus stimulate beverage sales (also known generically as “beer nuts”)), “peanut butter” (a spread made from ground peanuts and known also as “peanut paste”), “peanut butter and jelly” (a sandwich made with jelly (jam or conserve) spread on one slice and peanut butter on the other), “small peanuts” (very small amount (always in the plural), “peanut milk” (a milky liquid made from peanuts and used as a milk substitute), peanut brittle (a type of brittle (confection) containing peanuts in a hard toffee), “peanut butter cup” (a chocolate candy with peanut butter filling), “peanut bunker” (a small menhaden (a species of fish)), “hog peanut” (a plant native to eastern North America that produces edible nut-like seeds both above & below ground (Amphicarpaea bracteata)), “peanut worm” ( sipunculid worm; any member of phylum Sipuncula. (Sipuncula spp), “peanut cactus” (a cactus of species Chamaecereus silvestrii), “peanut ball” (in athletics & strength training, an exercise ball comprised of two bulbous lobes and a narrower connecting portion), “peanut marzipan” (a peanut confection made with crushed peanuts & sugar, popular in Central & South America), “peanut whistle” (in the slang of the ham radio and citizens band (CB) radio communities, a low-powered transmitter or receiver, “peanut tree” (A tree of the species Sterculia quadrifida), “peanut-headed lanternfly” (In entomology, a species of Neotropical fulgorid planthopper (Fulgora laternaria)) and peanut tube (in electronics, a type of small vacuum tube).

Herbert (HW) Horwill’s (1864-1943) A Dictionary of Modern American Usage (1935) was written as kind of trans-Atlantic companion to Henry Fowler’s (1858–1933) classic A Dictionary of Modern English Usage (1926) and was one of the earliest volumes to document on a systematic basis the variations and dictions between British and American English.  The book was a kind of discussion about the phrase “England and America are two countries separated by one language” attributed to George Bernard Shaw (GBS; 1856-1950) although there are doubts about that.  Horwill had an entry for “peanut” which he noted in 1935 was common in the US but unknown in the UK where it was known as the “monkey nut”.  According to the broadcaster Alistair Cooke (1908–2004), the world “peanut” became a thing in the UK during the early 1940s when the US government included generous quantities of the then novel peanut butter in the supplies of foodstuffs included in the Lend-Lease arrangements.

In idiomatic use, the phrase “if you pay peanuts, you get monkeys” is used to suggest that if only low wages are offered for a role, high quality applicants are unlike to be attracted to the position.  The phrase “peanut gallery” is one of a number which have enter the language from the theatre.  The original Drury Lane theatre in London where William Shakespeare’s (1564–1616) were staged was built on the site of a notorious cockpit (the place where gamecocks fought, spectators gambling on the outcome) and even before this bear and bull-baiting pits had been used for theatrical production of not the highest quality.  That’s the origin of the “pit” in this context being the space at the rear of the orchestra circle, the pit sitting behind the more desirable stalls.  By the Elizabethan era (1558-1603), the poor often sat on the ground (under an open sky) while the more distant raised gallery behind them contained the seats which were cheaper still; that’s the origin of the phrase “playing to the gallery” which describes an appeal to those with base, uncritical tastes although “gallery god” (an allusion to the paintings of the gods of antiquity which were on the gallery’s wall close to the ceiling) seems to be extinct.  The “peanut gallery” (the topmost (ie the most distant and thus cheapest) rows of a theatre) was a coining in US English dating from 1874 because it was the habit of the audience to cast upon to the stage the shells of the peanuts they’d been eating although whether this was ad-hoc criticism or general delinquency isn’t known.  The companion phrase was “hush money”, small denomination coins tossed onto the stage as a “payment” to silence an actor whose performance was judged substandard.  “Hush money” of course has endured to be re-purposed, now used of the payments such as the one made by Donald Trump (b 1946; US president 2017-2021; president elect 2024) to Stormy Daniels (stage name of Stephanie Gregory, b 1979).

Joseph "Vinegar Joe" Stilwell (1883–1946) was a US Army general who was appointed chief of staff to the Chinese Nationalist Leader, Generalissimo Chiang Kai-shek (1887-1975) (Generalissimo was a kind of courtesy title acknowledging his position as supreme leader of his armed forces; officially his appointment in 1935 was as 特級上將 (Tèjí shàng jiàng) (high general special class)).  Stilwell’s role was to attempt to coordinate the provision of US funds and materiel to Chiang with the objectives of having the Chinese Nationalist forces operate against the Imperial Japanese Army in Burma (now known usually as Myanmar).  Unfortunately, the generalissimo viewed the Chinese communists under Chairman Mao (Mao Zedong 1893–1976; chairman of the Chinese Communist Party (CCP) 1949-1976) as a more immediate threat than that of Nippon and his support for US strategy was no always wholehearted. 

So Stilwell didn’t have an easy task and in his reports to Washington DC referred to Chiang as “Peanut”.  Apparently, “peanut” had originally been allocated to Chiang as one of the army’s random code-names with no particular meaning but greatly it appealed to Stillwell who warmed to the metaphorical possibilities, once recorded referring to Chiang and his creaking military apparatus as “...a peanut perched on top of a dung heap...  That about summed up Stillwell’s view of Chiang and his “army” and in his diary he noted a military crisis “would be worth it” were the situation “…just sufficient to get rid of the Peanut without entirely wrecking the ship…  A practical man, his plans extended even to assassinating the generalissimo although these were never brought to fruition.  Eventually, Stilwell was recalled to Washington while Chiang fought on against the communists until 1949 when the Nationalists were forced to flee across the straits of Formosa to the Island of Taiwan, the “renegade province” defying the CCP in Beijing to this day.  Stillwell did have one final satisfaction before being sacked, in 1944 handing Chiang an especially wounding letter from Franklin Delano Roosevelt (FDR, 1882–1945, US president 1933-1945), the reaction so pleasing he was moved to write a poem:

I have waited long for vengeance,
At last I've had my chance.
I've looked the Peanut in the eye
And kicked him in the pants.
 
The old harpoon was ready
With aim and timing true,
I sank it to the handle,
And stung him through and through.
 
The little bastard shivered,
And lost the power of speech.
His face turned green and quivered
As he struggled not to screech.
 
For all my weary battles,
For all my hours of woe,
At last I've had my innings
And laid the Peanut low.
 
I know I've still to suffer,
And run a weary race,
But oh! the blessed pleasure!
I've wrecked the Peanut's face.

Phobias

One who suffers a morbid fear of peanut butter sticking to the roof of one's mouth is said to be an arachibutyrophobe.  Phobias need not be widely diagnosed conditions; they need only be specific and, even if suffered by just one soul in the world, the criteria are fulfilled.  In this sense, phobias are analogous with syndromes.  A phobia is an anxiety disorder, an unreasonable or irrational fear related to exposure to certain objects or situations.  The phobia may be triggered either by the cause or an anticipation of the specific object or situation.

Lindsay Lohan in The Parent Trap (1998) introduced the culinary novelty of peanut butter spread on Oreos; an allure appalled arachibutyrophobes avoid.

The fifth edition of the American Psychiatric Association's (APA) Diagnostic and Statistical Manual of Mental Disorders (DSM-5 (2013)) made some interesting definitional changes from the earlier DSM-4 (1994):  (1) A patient no longer needs to acknowledge their anxiety is excessive or unreasonable in order to receive a diagnoses, it being required only that their anxiety must be “out of proportion” to the actual threat or danger (in its socio-cultural context).  (2) Symptoms must now, regardless of age, last at least six months.  (3) The diagnostic criteria for social phobias no longer specify that age at onset must be before eighteen, a change apparently necessitated by the substantial increase in reporting by older adults with the DSM editors noting the six-month duration threshold exists to minimize the over-diagnosis of transient fears.

Whether it was already something widely practiced isn’t known but Lindsay Lohan is credited with introducing to the world the culinary novelty Oreos & peanut butter in The Parent Trap.  According to the director, it was added to the script “…for no reason other than it sounded weird and some cute kid would do it."  Like some other weirdnesses, the combination has a cult following and for those who enjoy peanut butter but suffer arachibutyrophobia, Tastemade have provided a recipe for Lindsay Lohan-style Oreos with a preparation time (including whisking) of 2 hours.  They take 20 minutes to cook and in this mix there are 8 servings (scale ingredients up to increase the number of servings).

Ingredients

2 cups flour
1 cup unsweetened cocoa powder (plus more for dusting)
¾ teaspoon kosher salt
¼ cups unsalted butter (at room temperature)
¾ cup sugar
1 teaspoon vanilla extract
Powdered sugar, for dusting

Filling Ingredients

½ cup unsalted butter, at room temperature
¼ cup unsweetened smooth peanut butter
½ cups powdered sugar
1 teaspoon vanilla extract
A pinch of kosher salt (omit if using salted peanut butter)

Filling Instructions

(1) With a stand mixer fitted with a paddle attachment, the butter & peanut butter until creamy.

(2) Gradually add powdered sugar and beat to combine, then beat in vanilla and salt.

Whisking the mix.

Instructions

(1) Preheat the oven to 325°F (160°C). Line two baking sheets with parchment paper.

(2) In small bowl, whisk together flour, cocoa powder & salt.

(3) In a stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy.  Mix in the vanilla extract. With the mixer running on low speed, add the flour mixture and beat until just combined (it should remain somewhat crumbly).

(4) Pour mixture onto a work surface and knead until it’s “all together”; wrap half in plastic wrap and place in refrigerator.

(5) Lightly dust surface and the top of the dough with a 1:1 mixture of cocoa powder and powdered sugar.

(6) Working swiftly and carefully, roll out dough to a ¼-½ inch (6-12 mm) thickness and cut out 2 inch (50 mm) rounds.  Transfer them to the baking sheets, 1 inch (25 mm) apart (using a small offset spatula helps with this step). Re-roll scraps and cut out more rounds, the repeat with remaining half of the dough.

(7) Bake cookies until the tops are no longer shiny ( about 20 minutes), then cool on pan for 5 minutes before transferring to wire rack completely to cool.

(8) To assemble, place half the cookies on a plate or work surface.

(9) Pipe a blob of filling (about 2 teaspoons) onto the tops of each of these cookies and then place another cookie on top, pressing slightly but not to the extent filled oozes from the sides.

(10) Refrigerate for a few minutes to allow the filling to firm up.  Store in an air-tight container in refrigerator.

The manufacturer embraced the idea of peanut butter Oreos and has released versions, both with the classic cookie and a peanut butter & jelly (jam) variation paired with its “golden wafers”.  As well as Lindsay Lohan’s contribution, Oreos have attracted the interest of mathematicians.  Nabisco in 1974 introduced the Double Stuf Oreo, the clear implication being a promise the variety contained twice crème filling supplied in the original.  However, a mathematician undertook the research and determined Double Stuf Oreos contained only 1.86 times the volume of filling of a standard Oreo.  Despite that, the company survived the scandal and the Double Stuf Oreo’s recipe wasn’t adjusted.

Scandalous in its own way was that an April 2022 research paper published in the journal Physics of Fluids wasn’t awarded that year’s Ig Nobel Prize for physics, the honor taken by Frank Fish, Zhi-Ming Yuan, Minglu Chen, Laibing Jia, Chunyan Ji & Atilla Incecik, for their admittedly ground-breaking (or perhaps water-breaking) work in explaining how ducklings manage to swim in formation.  More deserving surely were Crystal Owens, Max Fan, John Hart & Gareth McKinley who introduced to physics the discipline of Oreology (the construct being Oreo + (o)logy).  The suffix -ology was formed from -o- (as an interconsonantal vowel) +‎ -logy.  The origin in English of the -logy suffix lies with loanwords from the Ancient Greek, usually via Latin and French, where the suffix (-λογία) is an integral part of the word loaned (eg astrology from astrologia) since the sixteenth century.  French picked up -logie from the Latin -logia, from the Ancient Greek -λογία (-logía).  Within Greek, the suffix is an -ία (-ía) abstract from λόγος (lógos) (account, explanation, narrative), and that a verbal noun from λέγω (légō) (I say, speak, converse, tell a story).  In English the suffix became extraordinarily productive, used notably to form names of sciences or disciplines of study, analogous to the names traditionally borrowed from the Latin (eg astrology from astrologia; geology from geologia) and by the late eighteenth century, the practice (despite the disapproval of the pedants) extended to terms with no connection to Greek or Latin such as those building on French or German bases (eg insectology (1766) after the French insectologie; terminology (1801) after the German Terminologie).  Within a few decades of the intrusion of modern languages, combinations emerged using English terms (eg undergroundology (1820); hatology (1837)).  In this evolution, the development may be though similar to the latter-day proliferation of “-isms” (fascism; feminism etc).  Oreology is the study of the flow and fracture of sandwich cookies and the research proved it is impossible to split the cream filling of an Oreo cookie down the middle.

The core finding in Oreology was that the filling always adheres to one side of the wafer, no matter how quickly one or both cookies are twisted.  Using a rheometer (a laboratory instrument used to measure the way in which a viscous fluid (a liquid, suspension or slurry) flows in response to applied forces), it was determined creme distribution upon cookie separation by torsional rotation is not a function of rate of rotation, creme filling height level, or flavor, but was mostly determined by the pre-existing level of adhesion between the creme and each wafer.  The research also noted that were there changes to the composition of the filling (such as the inclusion of peanut butter) would influence the change from adhesive to cohesive failure and presumably the specifics of the peanut butter chosen (smooth, crunchy, extra-crunchy, un-salted (although the organic varieties should behave in a similar way to their mass-market equivalents)) would have some effect because the fluid dynamics would change.  The expected extent of the change would be appear to be slight but until further research is performed, this can’t be confirmed.
