Rack

Rack (pronounced rak)

(1) A framework of bars, wires, or pegs on which articles are arranged or deposited.

(2) A fixture containing several tiered shelves, often affixed to a wall.

(3) A vertical framework set on the sides of a wagon and able to be extended upward for carrying hay, straw, or the like in large loads.

(4) In certain cue sports (pool, snooker), a frame of triangular shape within which the balls are arranged before play; the balls so arranged.

(5) In butchery & cooking, the rib section of a fore-saddle of lamb, mutton, pork or veal (historically used also of the neck portion).

(6) In nephology (the branch of meteorology concerned with cloud formation, structure, classification, and dynamics), as “cloud rack”, a group of drifting clouds.

(7) In machinery, a bar, with teeth on one of its sides, adapted to engage with the teeth of a pinion rack and pinion or the like, as for converting circular into rectilinear motion or vice versa (nest known as the “rack & pinion” steering apparatus used in motor vehicles.

(8) An instrument of torture consisting of a framework on which a victim was tied, often spread-eagled, by the wrists and ankles, to be slowly stretched by spreading the parts of the framework; there were many variations.

(9) As “on the rack”, originally a reference to the torture in progress, later adopted figuratively to describe a state of intense mental or physical suffering, torment, or strain.

(10) In equestrian use, the fast pace of a horse in which the legs move in lateral pairs but not simultaneously (the “horse's rack”).

(11) In military use, a fixed (though sometimes with some scope for movement for purposes of aiming), a framework fixed to an aircraft, warship or vehicle and used as a mounting for carrying bombs, rockets, missiles etc.

(12) In zoology, a pair of antlers (more commonly used of wall mounted trophies (eight-point rack etc)).

(13) In slang, ruin or destruction (a state or rack).

1250–1300: From the Middle English noun rakke & rekke, from the Middle Dutch rac, rec & recke (framework) and related to the Old High German recchen (to stretch), the Old Norse rekja (to spread out), the Middle Low German reck and the German Reck.  The use to mean “wreck” dates from the late sixteenth century and was a phonetic variant of the earlier wrack, from the Middle English wrake, wrache & wreche, a merging of the Old English forms wracu & wræc (misery, suffering) and wrǣċ (vengeance, revenge).  Except as a literary or poetic device (used to impart the quality of “vengeance; revenge; persecution; punishment; consequence; trouble”) or in some dialects to mean “ruin, destruction; a wreck”), wrack is now archaic.  The equestrian use (the fast pace of a horse in which the legs move in lateral pairs but not simultaneously (the “horse's rack”)) dates from the 1570s and the origin is obscure but it may have been a variant of “rock” (ie the idea of a “rocking motion”).  Nephology (the branch of meteorology concerned with cloud formation, structure, classification, and dynamics) adopted “cloud rack” (a group of drifting clouds) from mid-fourteenth century use in Middle English where the original spellings were rak, recke & reck, from the Old English wrǣc (what is driven) and related to the Gothic wraks (persecutor) and the Swedish vrak.  The use in vinification (wine-making), describing the process of drawing off (wine, cider etc) from the lees (to “rack into” a clean barrel) dates from the mid fifteenth century and was from the Old Provençal arraca , from raca (dregs of grapes), ultimately from the by then obsolete Old French raqué (of wine pressed from the dregs of grapes).  The use in butchery & cooking (the rib section of a fore-saddle of lamb, mutton, pork or veal (historically used also of the neck portion)) dates from the mid sixteenth century and is of uncertain origin but was probably based upon either (1) the cuts being placed on some sort or rack for preparation or (2) having some sort or resemblance to “a rack”.  Rack is a noun & verb, racker is a noun, racking is a noun, verb & adjective, racked is a verb and rackingly is an adverb; the noun plural is racks.

In idiomatic use, the best known include “racking one’s brains” (thinking hard), “going to rack and ruin” (to decay, decline, or become destroyed”, “on the rack” (originally a reference to the torture in progress, later adopted figuratively to describe a state of intense mental or physical suffering, torment, or strain) and “racked with pain” (again an allusion to the consequences of being “racked” “on the rack”).  The “rack” as a description of a woman’s breasts is one in a long list of slang terms for that body part and dictionaries of slang are apparently divided on where it’s the breasts, genitals or buttocks which have provided the most inspiration for the creation of such forms.  The Australian slang “rack off” is an alternative to the many other forms popular in the country used to mean “please go away” including “sod off”, “piss off”, “fuck off”, “bugger off” etc; depending on context and tone of voice, these can range from affectionate to threatening.

In transport, luggage racks were among the earliest “accessories” in that they were additions to hand & horse-drawn carts and carriages which enabled more stuff to be carried without reducing the passenger-carrying capacity.  There were “roof racks” and “trunk racks”, both there for the purpose of carrying trunks, secured usually with leather straps.  The most obvious carry-over to motorized vehicles was the roof-rack, still a popular fitting and still sometimes fitted as standard equipment to certain station wagons (estate cars).

Although it wouldn’t have been something the designer considered, the mid-engined De Tomaso Pantera (1971-1992) had a rear section so suited to the provision of a luggage rack that Gran Turismo (a after-market accessories supplier) produced one which was as elegant as any ever made.  Because of the location directly behind the rear window, when loaded it obviously would have restricted rearward visibility so in certain jurisdictions doubtlessly it would have been declared unlawful but if one lives somewhere more permissive, it remains a practical apparatus.  Ironically, the Pantera had probably the most capacious frunk (a front mounted trunk (boot)) ever seen in a mid-engined sports car and one easily able to accommodate the luggage the car’s two occupants were likely to need for a weekend jaunt.  Even if superfluous however, in the collector market it’s an interesting period piece and well-designed; easily removed for cleaning, the four mounting brackets remain affixed to the deck lid.

Larger cars of course carried more than two and if they travelled over distances, usually they carried luggage.  The full-sized US cars of the early 1970s were very big and had a lot of trunk space but many, with bench seats front and rear were configured as genuine six-seaters and that could mean a lot of luggage.  Accordingly, both the manufacturers and after-market suppliers in the era offered a range of luggage racks.  Upon debut, the lovely but flawed Triumph Stag (1970-1978) was a much-praised design which offered the pleasure of open-air motoring with the practicality of four seats (although those in the rear were best suited for children) but the sleek, low lines did mean trunk space was not generous and luggage racks were a popular fitting.

There have been cars (and not all of them were sports cars) with no trunk lid.  In the case of the Austin-Healey Sprite (1958-1971), the lack of the structure on the early versions (1958-1961) was a cost-saving measure (the same rationale that saw the planned retractable headlights replaced by the distinctive protuberances atop the hood (bonnet) which lent the cheerful little roadster its nickname (bugeye in North American and frogeye in the UK & most of the Commonwealth).  It had additional benefits including weight reduction and improved structural rigidity but the obvious drawback was inconvenience: to use the trunk one had to reach through the gap behind the seats.  It was easy to see why luggage racks proved a popular accessory, sales of which continued to be strong even when later versions of the Sprite (1961-1971) and the badge-engineered companion model (the MG Midget (1961-1980)) gained a trunk lid.  Curiously, between 1953-1962, the Chevrolet Corvette did have a trunk lid but when the second generation was released for the 1953 model year, it was removed from the specification and not until the fifth generation in 1998 did one again appear.  By then, the Corvette's luggage rack moment had passed but in the early 1970s they were still often fitted and in the modern collector market, it’s one of those accessories, the very sight of which seems to upset some.

Variations of the theme: ski rack (left), bike rack (centre) and surfboard rack (right).  The luggage rack had proved an adaptable platform and specialist versions are available for many purposes but in many cases the same basic structure can be used as a multi-purpose platform with “snap-on” fittings used to secure objects of different shapes.  The Porsche 911 was an early favorite on the ski fields because of the combination of and air-cooled engine and the rear-engine/rear wheel drive configuration which provided good traction in icy conditions.

The toast rack has been in use since at least the 1770s and, like the butter knife, is one of the markers of living a civilized life.  That aside, their functionality lies in the way they provide a gap between the slices, allowing water vapour to escape, preventing it condensing into adjacent slices and making them soggy while also maintaining a buffer of warm air between so the cooling process is slowed.  In the way of such things, there have over the years been design ranging from the starkly simple to the extravagant but some of the most admired are those from the art deco era of the inter-war years.

The gun rack in the back of a pickup truck is now a classic MAGA (Make America Great Again) look but the devices have been in use for decades and were always popular in rural areas with a tradition of hunting.  Whether such things are lawful depends on the jurisdiction.  In the US, some states have an “open carry” law which means one is free to carry certain firearms unconcealed and this includes gun racks which are similarly unrestricted; in states where an “open carry” permit is required, a separate permit is required for a gun rack to be used in a vehicle while in jurisdictions with no “open carry” legislation, gun racks are also banned except for those able to obtain a specific exemption.  So, it can be that travelling across state lines can involve some additional effort, even if one is authorized to carry a firearm in both placed.  Usually, this demands the weapon being unloaded and encased in an area inaccessible to both driver and passengers.

The most famous of the many apparatus of torture which proliferated during the Middle Ages (and beyond), the rack was an interrogation tool which remained in use until the eighteenth century.  Although the rack is most associated with the Spanish Inquisition, it was popular also in England as a device to extract confessions to various crimes, especially heresy.  The designers were imaginative and racks were produced in many forms including vertical devices and wheels but the classic version was a flat, bed-like structure, made with an open, rectangular wooden frame with rollers or bars at each end to which the wrists and ankles of the accused (or “the guilty” as often they were known) were secured.  The rollers moved in opposite directions by the use of levers, and the victim’s joints slowly and painfully were separated.

RACK is used as an acronym, one being “Random Act of Conditionless Kindness” which seems not substantively different from the better known “random act of kindness” although presumably it imparts some depth of emphasis, given “random acts of conditional kindness” may be a more commonly observed phenomenon.  In certain sub-sets of the BDSM (Bondage, Discipline (or Dominance) & Submission (or Sadomasochism) community, RACK means either “Risk-Aware Consensual Kink” or “Risk-Accepted Consensual Kink).  Both describe a permissive attitude towards conduct which is to some degree “risky”, undertaken on the basis of “a voluntary assumption of risk”.  In that it differs from the tastes of BDSM’s SSC (Safe, Sane & Consensual) sub-set which restricts it proclivities to things “not risky”.  The RACK practitioners acknowledge the difficulties inherent in their kinks and do not claim to make a distinction between “safe” & “unsafe” but rather between “safer” and “less safe” (ie degrees of danger).  What this means is that in extreme cases there are potential legal consequences because while the implication of RACK is that to some degree one can “contract out” of the statutory protections usually available in such interactions, in the case of serious injury or death, the usually legal principles would apply.

Bespoke

Bespoke (pronounced bih-spohk)

(1) A simple past tense and past participle of bespeak.

(2) Of clothes, those made to individual order and custom custom-made.

(3) The making or selling such clothes.

(4) By extension, anything (physical or weightless) produced to a customer’s specifications, especially if a one-off creation.

(5) To ask for in advance; to reserve (obsolete).

(6) As bespeak & bespoken, betrothed or engaged to be married; spoken for (obsolete except in the literary novel).

1745–1755: The adjective was a coining in Modern English in the sense of “custom-made goods; made to order (as distinguished from ready-made; an item on the shelf of a shop)” from the late sixteenth century Middle English bespoken, the past-participle adjective from bespeak (in its sense of “arrange beforehand”), a prefixed variant of speak.  The verb bespeak was from the Middle English bispeken, from the Old English besprecan (speak about, speak against, complain), the construct being be- + sprecan (to speak).  A common Germanic compound (the cognates including the Old Saxon bisprecan, the Dutch bespreken, the Old High German bisprehhan and the German besprechen) originally meaning “to call out”, it evolved by the 1580s to enjoy a wide range of meaning in English, including “speak up”, “oppose”, “request”, “discuss”, “arrange” and “order (goods)”.  By virtue of the different application of the be- prefix, the connections between the various meanings of bespoke, bespeaking; bespeak etc are thought at least very loose and it’s clear some arose independently of others.  Bespoke long was used usually of tailored suits and other clothing but in recent decades it has been applied (with some enthusiasm) to products as diverse as a one-off Rolls-Royce and customized hacking software offered on the dark web.  Bespeak was from the Middle English bespeken & bispeken, from the Old English bespecan & besprecan (to speak about, speak against, accuse of, claim at law, complain), from the Proto-Germanic bisprekaną (to discuss, blame), the construct being be- + speak.  It was cognate with the Scots bespeke (to beseech, speak or negotiate with), the West Frisian besprekke (to discuss), the Dutch bespreken (to discuss, review; debate) and the German besprechen (to discuss, review, talk about).  Bespoke & bespoken are verbs & adjectives, bespeak is a noun & verb, bespeaking is a verb, bespeaker & bespokeness are nouns and bespokely is an adverb; the noun plural use is rare.

The be- prefix was from the Middle English be- & bi-, from the Old English be-, from the Proto-Germanic bi- (be-), from the Proto-Germanic bi (near, by), ultimately from the primitive Indo-European hepi (at, near) and cognate with the Saterland Frisian, West Frisian, Dutch, German Low German, German and Swedish be-.  Although there remain in English many relics of its use, (becalmed, beseige et al), the be- prefix has long ceased to be productive.  It was used to modify other forms to create various meanings: (1) By, near, next to, around, close to (beset), (2) Aound; about (belay, bestir, belive), (3) About, regarding, concerning, over (bemoan, bewail), (4) On, upon, at, to, in contact with something (behold, befall), (5) Off, away, over, across (behead, besleeve), (6) As an intensifier (ie thoroughly, excessively; completely; utterly) (belabour, bedazzle), (7) All around; about; abundantly; all over (belick, bescatter), (8) Forming verbs derived from nouns or adjectives, usually with the sense of "to make, become, or cause to be" (becalm, befriend) and (9) Used to intensify adjectives meaning "adorned with something", often those with the suffix -ed (now mostly archaic or informal) (besequined, befeathered, beclawed, beloved).

Bespoke is an uncontroversial word if applied in the way which for centuries mostly it was: clothing custom made for an individual, based on measurements taken prior to the a tailor or seamstress cutting the fabric.  It was used also of the shoes made by cobblers, the gloves sewed by glove makers, the hats created by milliners and so on, all of whom had their own methods of maintaining their customer records, those dealing with body parts which usually didn’t much change able to use the same dimensions for decades; other had to re-measure with some frequency.  In the case of cobblers, for regular customers they would keep a pair of wooden lasts which emulated exactly the shape of the feet.  The synonyms for bespoke in this context included “custom-made”, “customized”, “purpose-built”, “tailored” & “tailor-made” and the traditional antonyms were “off the peg”, “off the rack” & “off the shelf”.  In recent years, “bespoke” has become a marketing term and stuff which is far from unique and in many cases produced in great volume (perhaps with some minor change) is now often labeled “bespoke” and “bespoke solution” is a favorite in the software business, whether it be something to manage a hairdressing salon or code on the dark web supplied by Russian hackers to the DPRK (North Korean) military for enable theft or covert operations.

Because of the way Google harvest it data, their ngrams tracking trends in the use of words aren’t wholly accurate and even the degree of accuracy can’t be assessed but the trend lines are thought vaguely indicative and it appears bespoke came increasingly to be used in the late twentieth century and the rate of increase has shown no signs of subsiding.  That may to some extent be accounted for by Google’s methods or the publications over-represented in its catchment but, impressionistically it seems plausible and in the US, scholars by the 1990s were noting the way bespoke was tending to supplant the traditional American “custom”, apparently because the word had appeal because it conveyed “wealth and prestige” whereas custom had been devalued by its association with things like hotted-up motor cycles.  If bespoke is uncontroversial when used of anything genuinely one-off, the appropriateness when used of anything else needs to be assessed on a case by case basis and because it’s so popular in the business of expensive cars, they provide a good case-studies.

The Maserati 5000 GT (1959-1966)

Before the Ayatollahs ran Iran, it was ruled by the Shah (king) and he got a lot more fun out of life than his clerical successors, noted especially as a connoisseur and of fast, exotic and expensive cars, his collection including multiple models from Lamborghini, Mercedes-Benz, Rolls-Royce, Ferrari and Maserati among others.  In 1958 he’d driven Maserati’s then popular 3500 GT but thought it lacking in power and, because hundreds a year were sold to the (rich) public, a bit common.  Accordingly, after receiving material advertising both the 3500 GT and the remaining 450S race cars the factory wished to dispose of after withdrawing from racing, the shah decided he wanted a combination of the two, the race engine in the road car.  To have it created, essentially he sent Maserati a blank cheque and asked them to call when it was ready.  Delivered to the shah (Mohammad Reza Pahlavi, 1919-1980) in 1959, it was almost a secret but when a second, commissioned by a South African customer,  was displayed at the 1959 Turin Motor show, it generated such interest that Maserati were soon fielding enquiries from rich commoners wanting what royalty had.  Priced stratospherically however, there weren’t enough rich folk on the planet to make it a viable option for their production lines so it entered the catalogue as a bespoke item, Maserati modifying the 3500 chassis which, frankly had been a bit over-taxed by the big V8 and tweaking the engine still further, slightly increasing the capacity but in a way that rendered it more docile, yet still a howler when stirred.  The chassis appeared in the list and buyers could choose their own coachbuilder and eventually eight produced their own interpretations, the most numerous being by Carrozzeria Allemano which, over the years, finished twenty-two, the Allemano cars thought also the most alluring.

So the conclusion must be that the Shah’s original was and remains a true bespoke creation because exclusively it was built for him.  Of the other 33 5000 GTs built, although they were all variations on the theme and mechanically similar, no two were exactly alike and each was built in response to an order from an individual customer, some of whom specified certain touches.  Given that, all probably deserve to be regarded as bespoke though pedants might insist the chassis was a regular production item and only the coachwork was truly bespoke.  Few seem to agree and on the rare occasions the things are offered for sale, they’re almost always described as “bespoke”.

Among collectors, the Phantom IV has quite an allure because it was one of the few cars produced in any number never offered for sale to the general public, only 18 produced and available only to head of state or crowned royalty (a distinction important in royal circles which has its own pecking order).  In a manner similar to the Maserati 5000 GT, no two Phantom IVs were exactly the same although all were built on substantially the same underpinnings (the only Rolls-Royce passenger cars ever to use a straight-8).  Thus all should be though “bespoke” in the context of the industry but there was one version which was radically different, a Phantom IV pick-up truck (ute in Australian parlance) which was used by the factory to ferry various bits and pieces from place to place.  So it’s a genuine one off pick-up truck but because it was just a functional workhorse which existed only because an unsalable prototype chassis was available, it’s never been regarded as something bespoke, the long ago scrapped unique “shop ute” just a historic curiosity.

The Rolls-Royce Phantom V (1959-1968) & Phantom VI (1968-1990)

By comparison with the exclusive Phantom IV, its two successors were almost mass-produced, 1206 (832 of the Phantom V & 374 of the VI respectively) crafted over three decades.  In this case, it’s thought only some should be thought truly bespoke because although there were a few variations in the coachwork, many were substantially the same and its only the ones with the greatest differences (notably the odd sedanca de ville, the handful of landaulets or the other “state” cars with their elevated rooflines) which are usually thought “bespoke” and even they weren’t unique things like the Phantom IVs.  Two of the Phantom VI chassis however were indisputably bespoke.  By the 1970s, it was only the big Phantom VI which Rolls-Royce still built on the separate chassis which made bespoke bodies easier to mount so anyone wanting a really exclusive Rolls-Royce had no other choice.  Accordingly the Italian house Fura fashioned two very big bespoke creations, one a drophead coupé (DHC, which by then the rest of the world was calling a cabriolet or convertible), the other described as an "all weather cabriolet" (which eventually was re-fashioned as a four-door convertible).  Both were on a scale not seen since seen since the 1930s and nothing like them has since been attempted.  Because the limousine chassis was designed for something long, narrow and tall, both the Fura cars were fundamentally ill-proportioned although skilled photographers have managed to create pleasing images by selecting just the right angle.  Flawed though they were, at the time there was probably nothing on four wheels which so conveyed disposable wealth which, in many cases, is of course often the essence of the bespoke.  It was a good thing they made such an impression because presumably it dissuaded people from looking too closely: underneath the engineering was pure Phantom VI which meant drum brakes and a rear axle suspended on semi-elliptic (cart) springs so it was (refined) Ford Model T (1908) technology under all that leather and walnut.  Such was the attention to detail those cart spring were encased in leather so those enjoying the seclusion of the rear compartment (trimmed usually in West of England cloth rather than the leather on which the chauffeur sat) weren't disturbed by any squeaks.

Consumption can be conspicuous yet still subtle, achieved usually if a bespoke creation is both expensive and functional.  The Mercedes-Benz 300 saloons and four-door cabriolet of (W186 & W189 1951-1962) were large, stately and beautifully built and the platform attracted coachbuilders who saw the potential for estate cars (station wagons), ambulances and (especially) hearses.  Many were built and the hearses in particular typically aren't regarded as bespoke because they were essentially catalogue items with little variation between editions.  Some of the rare estates ("shooting brakes" to the English, "station wagons" in North America and for a time, "station sedans" if built by Holden, General Motors' (GM) Australian outpost) however have always been treated as bespoke even though from an engineering point of view the changes were minimal and the styling hardly imaginative.  The reason for the association seems to be that they “dripped money”; even to the uninformed they were obviously expensive so it seems possible there is the matter of "bespoke by acclamation".  Interestingly, in 1960 the factory did their own one-off 300 Estate, this one a “telemetry car” built in the era before sensors to travel at high speed on a test track, recording data from the vehicle ahead.  Styled in an almost avant-garde manner with rear glass which curved into the roof, the factory regarded it rather as Rolls-Royce treated their pick-up: a mule to be used until something better came along.  They never called it bespoke.

Sir David Brown (1904–1993) liked his DB5 coupé (which the factory in their English way called a "saloon") but found it too cramped comfortably to accommodate his polo gear, shotguns and hunting dogs.  Now, that would be called a “first world problem” but because Brown then owned Aston Martin, he simply wrote out a work order and had his craftsmen create a bespoke shooting brake (an English term which means “station wagon owned by someone rich”) which they did by hand-forming the aluminum with hammers over wooden formers.  It delighted him and solved his problem but created another because good customers stared writing him letters asking for their own.  Unfortunately, Aston Martin was at full capacity building DB5s and developing the up-coming DB6 and V8 models.  With a bulging order book, the resources didn’t exist to add another niche model so the project was out-sourced to the coachbuilder Radford which built a further 11 (and subsequently another 6 based on the DB6).  That Brown’s original car was bespoke seems clear but the others are a gray area because the coachbuilder’s records and assessments of the cars indicate they were identical in all but the color of the paint and leather trim.  There may have been only 12 DB5s and 6 DB6s but by conventional definition, they came of a production line, albeit a leisurely and exclusive one so can all but the original be thought truly bespoke?  According to the Aston Martin website, they are bespoke so that’s presumably the last word on the subject.

The happy combination of the internet, Photoshop and a large cohort of gullible viewers some years ago encouraged the creation of a meme purporting to be a survey of the bespoke carbon fibre bodies available to be bolted to the diminutive Smart Fortwo (C451; 2007-2015).  Even a cursory look at the scale of the humans included in some of the photos should have been enough for people to work out this was fake news but the factory is said to have received “some” enquiries asking where the bespoke bodies could be bought.

There is even bespoke Nutella.  In 2014, while appearing on-stage in a London production of David Mamet's (b 1947) Speed-the Plow (1988), Lindsay Lohan stayed at the Mandarin Oriental hotel which supplied her with a personalized jar of the nutty treat.

Whisk

Whisk (pronounced wisk or hwisk)

(1) To move with a rapid, sweeping stroke.

(2) To sweep (dust, crumbs etc, or a surface) with a whisk broom, brush, or the like.

(3) To draw, snatch or carry etc; a generalized term meaning to move or do something nimbly or rapidly (often as “whisked away”, “whisked off” etc).

(4) To whip (eggs, cream etc.) to a froth using a whisk or other beating device.

(5) The an act of whisking; a rapid, sweeping stroke; light, rapid movement.

(6) As whisk broom, a device topped with a small cluster of grass, straw, hair or the like, used especially for brushing.

(7) A kitchen utensil, in the form of a bunch of (usually metal wire, plastic strands or (in the Far East) bamboo) loops held together in a handle and used for beating, blending or whipping eggs, cream; making souffles etc.  Modern whisks can also be electro-mechanical and “non-stick” whisks use a Teflon coating.

(8) The by-product of something which has been “whisked away”.

(9) A special plane used by coopers for evening a barrel’s chimes (the curved, outermost edge or rim at the top and bottom ends of the barrel, typically wider and thicker than the rest of the staves (the vertical wooden planks that form the sides)).

(10) In fashion, a kind of cape forming part of a woman's dress (sometimes detachable).

(11) In some card games, the act of sweeping the cards off the table after a trick has been won.

1325–1375: From the Middle English & Scots wysk (rapid sweeping movement), from the earlier Scots verbs wisk & quhisk, from the Old English wiscian (to plait) & weoxian (to clean with brush), from a Scandinavian source comparable to the Old Norse & Norwegian visk (wisp), the Swedish viska besom & wisp (to whisk (off)) and the Danish visk & viske (to wipe, rub, sponge) and related to the Middle Dutch wisch, the Dutch wis, the Old High German wisken (to wipe) & wisc (wisp of hay), the German Wisch, the Latin virga (rod, switch) & viscus (entrails), the Czech vechet (a wisp of straw), the Lithuanian vizgéti (to tremble), the Czech vechet (wisp of straw) and the Sanskrit वेष्क (veka) (noose) all thought from the Proto-Germanic wiskaz & wiskō (bundle of hay, wisp), from the primitive Indo-European weys- or weis (to turn; to twist).  The un-etymological wh-, noted since the 1570s, probably developed because it was expressive of the sound typically generated by the act of “whisking” something; the same evolution was noted in whip and the onomatopoeic whack and whoosh.  The device used in preparing food (implement for beating eggs etc) was first documented as “a whisk” in the 1660s although cooks had presumably been using such things for many years.  The verb developed in the late fifteenth century, the transitive sense from the 1510s while the familiar meaning “to brush or sweep (something) lightly over a surface” dates from the 1620s.  Whisk & whisking are nouns & verbs and whisked is a verb; the noun plural is whisks.

Whisk is (almost) wholly unrelated to whisky & whiskey.  Dating from 1715, whisky was a variant of usque,an abbreviation of usquebaugh, from the Irish uisce beatha (water of life) or the Scots Gaelic uisge-beatha (water of life), ultimately a translation of the Medieval Latin aqua vītae (water of life (originally an alchemical term for unrefined alcohol)).  The form whiskybae has been obsolete since the mid eighteenth century.  The Scots and Irish forms were from the Proto-Celtic udenskyos (water) + biwotos (life), from biwos(alive).  The Old Irish uisce (water) was from the primitive Indo-European ud-skio-, a suffixed form of the root wed- (water; wet); bethu (life), from the primitive Indo-European gwi-wo-tut-, a suffixed form of gwi-wo-, from the root gwei- (to live). The noun plurals are whiskies & whiskeys.  Although iskie bae had been known in the 1580s, it appears unrelated to usquebea (1706), the common form of which was uisge beatha which in 1715 became usquebaugh, then whiskeybaugh & whiskybae, the most familiar phonetic form of which evolved as “usky”, influencing the final spellings which remain whisky & whiskey.  Wisely, the Russians avoided the linguistic treadmill, the unchanging vodka freely translated as “little water”.  The exception was the “whisky”, a small carriage (technically a “light gig” to coach-builders) which was from the verb whisk, the idea being something in which one was “whisked quickly around” the lightweight carriages being faster than most.  Chefs also caution home cooks not to confuse “whisky butter” (A concoction made of whisky, butter & sugar) with “whisked butter” which is butter which has been whisked.

Lindsay Lohan Oreos

Whether it was already something widely practiced isn’t known but Lindsay Lohan is credited with introducing to the world the culinary novelty Oreos & peanut butter in The Parent Trap.  According to the director, it was added to the script “…for no reason other than it sounded weird and some cute kid would do it."  Like some other weirdnesses, the combination has a cult following and for those who enjoy peanut butter but suffer arachibutyrophobia (the morbid fear of peanut butter sticking to the roof of one’s mouth), Tastemade have provided a recipe for Lindsay Lohan-style Oreos with a preparation time (including whisking) of 2 hours.  They take 20 minutes to cook and in this mix there are 8 servings (scale ingredients up to increase the number of servings).

Ingredients

2 cups flour
1 cup unsweetened cocoa powder (plus more for dusting)
¾ teaspoon kosher salt
1 ¼ cups unsalted butter (at room temperature)
¾ cup sugar
1 teaspoon vanilla extract
Powdered sugar, for dusting

Filling Ingredients

½ cup unsalted butter, at room temperature
¼ cup unsweetened smooth peanut butter
1 ½ cups powdered sugar
1 teaspoon vanilla extract
A pinch of kosher salt (omit if using salted peanut butter)

Filling Instructions

(1) With a stand mixer fitted with a paddle attachment, the butter & peanut butter until creamy.

(2) Gradually add powdered sugar and beat to combine, then beat in vanilla and salt.

Instructions

(1) Preheat the oven to 325°F (160°C). Line two baking sheets with parchment paper.

(2) In small bowl, whisk together flour, cocoa powder & salt.

(3) In a stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy.  Mix in the vanilla extract. With the mixer running on low speed, add the flour mixture and beat until just combined (it should remain somewhat crumbly).

(4) Pour mixture onto a work surface and knead until it’s “all together”; wrap half in plastic wrap and place in refrigerator.

(5) Lightly dust surface and the top of the dough with a 1:1 mixture of cocoa powder and powdered sugar.

(6) Working swiftly and carefully, roll out dough to a ¼-½ inch (6-12 mm) thickness and cut out 2 inch (50 mm) rounds.  Transfer them to the baking sheets, 1 inch (25 mm) apart (using a small offset spatula helps with this step). Re-roll scraps and cut out more rounds, the repeat with remaining half of the dough.

(7) Bake cookies until the tops are no longer shiny ( about 20 minutes), then cool on pan for 5 minutes before transferring to wire rack completely to cool.

(8) To assemble, place half the cookies on a plate or work surface.

(9) Pipe a blob of filling (about 2 teaspoons) onto the tops of each of these cookies and then place another cookie on top, pressing slightly but not to the extent filled oozes from the sides.

(10) Refrigerate for a few minutes to allow the filling to firm up.  Store in an air-tight container in refrigerator.

The manufacturer embraced the idea of peanut butter Oreos and has released versions, both with the classic cookie and a peanut butter & jelly (jam) variation paired with its “golden wafers”.  As well as Lindsay Lohan’s contribution, Oreos have attracted the interest of mathematicians.  Nabisco in 1974 introduced the Double Stuf Oreo, the clear implication being a promise the variety contained twice crème filling supplied in the original.  However, a mathematician undertook the research and determined Double Stuf Oreos contained only 1.86 times the volume of filling of a standard Oreo.  Despite that, the company survived the scandal and the Double Stuf Oreo’s recipe wasn’t adjusted.

Scandalous in its own way was that an April 2022 research paper published in the journal Physics of Fluids wasn’t awarded that year’s Ig Nobel Prize for physics, the honor taken by Frank Fish, Zhi-Ming Yuan, Minglu Chen, Laibing Jia, Chunyan Ji & Atilla Incecik, for their admittedly ground-breaking (or perhaps water-breaking) work in explaining how ducklings manage to swim in formation.  More deserving surely were Crystal Owens, Max Fan, John Hart & Gareth McKinley who introduced to physics the discipline of Oreology (the construct being Oreo + (o)logy).  The suffix -ology was formed from -o- (as an interconsonantal vowel) +‎ -logy.  The origin in English of the -logy suffix lies with loanwords from the Ancient Greek, usually via Latin and French, where the suffix (-λογία) is an integral part of the word loaned (eg astrology from astrologia) since the sixteenth century.  French picked up -logie from the Latin -logia, from the Ancient Greek -λογία (-logía).  Within Greek, the suffix is an -ία (-ía) abstract from λόγος (lógos) (account, explanation, narrative), and that a verbal noun from λέγω (légō) (I say, speak, converse, tell a story).  In English the suffix became extraordinarily productive, used notably to form names of sciences or disciplines of study, analogous to the names traditionally borrowed from the Latin (eg astrology from astrologia; geology from geologia) and by the late eighteenth century, the practice (despite the disapproval of the pedants) extended to terms with no connection to Greek or Latin such as those building on French or German bases (eg insectology (1766) after the French insectologie; terminology (1801) after the German Terminologie).  Within a few decades of the intrusion of modern languages, combinations emerged using English terms (eg undergroundology (1820); hatology (1837)).  In this evolution, the development may be though similar to the latter-day proliferation of “-isms” (fascism; feminism et al).  Oreology is the study of the flow and fracture of sandwich cookies and the research proved it is impossible to split the cream filling of an Oreo cookie down the middle.

The core finding in Oreology was that the filling always adheres to one side of the wafer, no matter how quickly one or both cookies are twisted.  Using a rheometer (a laboratory instrument used to measure the way in which a viscous fluid (a liquid, suspension or slurry) flows in response to applied forces), it was determined creme distribution upon cookie separation by torsional rotation is not a function of rate of rotation, creme filling height level, or flavor, but was mostly determined by the pre-existing level of adhesion between the creme and each wafer.  The research also noted that were there changes to the composition of the filling (such as the inclusion of peanut butter) would influence the change from adhesive to cohesive failure and presumably the specifics of the peanut butter chosen (smooth, crunchy, extra-crunchy, un-salted (although the organic varieties should behave in a similar way to their mass-market equivalents)) would have some effect because the fluid dynamics would change.  The expected extent of the change would be appear to be slight but until further research is performed, this can’t be confirmed.  The 33rd First Annual Ig Nobel Prize ceremony will (as a webcast) happen on Thursday 14 September 2023, at 18:00 pm (US eastern time).
