Establishment

Establishment (pronounced ih-stab-lish-muhnt)

(1) The act or an instance of establishing.

(2) The state or fact of being established.

(3) Something established; a constituted order or system.

(4) The existing power structure in society; the dominant groups in society and their customs or institutions; institutional authority (ie “the Establishment” in the popular imagination which in this context should be used with an initial capital).  “The Establishment” is a nuanced synecdoche for “ruling class” with the emphasis on a dedication to the preservation of the status quo.

(5) As a modifier, belonging to or characteristic of “the Establishment” (the dominant or hegemonic “power elite” in a field of endeavor, organization etc (“the political establishment”, “the literary establishment” etc) or their “world view” (the “establishment interpretation of history”).

(6) A household; place of residence including its furnishings, grounds etc; a body of employees or servants

(7) A place of business together with its employees, merchandise, plant, equipment etc.

(8) A permanent civil, military, or other force or organization (often used to describe the defined number of personnel, in aggregate or sectionally, the “establishment” being the approved size, composition, and equipment of a unit.  In the military, the word is often modified (peacetime-establisnment, war-establishment, overseas-establishment etc).

(9) Any institution (university, hospital, library etc).

(10) The recognition by a state of a church as the state church.  In Christianity, the church so recognized, the term most associated with the Church of England (and historically the Church of Wales and Church of Ireland).

(11) A fixed or settled income (archaic).

1475–1485: A compound word, the construct being establish + -ment, from the Middle English establishment, stablishment & stablisshement, from the Old French establissement (which endures in Modern French as établissement), from the verb establir.  The noun establishment was from the late fourteenth century verb establish, from the Old French establiss-, the present participle stem of the twelfth century establir (cause to stand still, establish, stipulate, set up, erect, build), (which endures in Modern French as établir), from the Latin stabilire (make stable), from stabilis (stable).  The -ment suffix was from the Middle English -ment, from the Late Latin -amentum, from -mentum which came via Old French -ment.  It was used to form nouns from verbs, the nouns having the sense of "the action or result of what is denoted by the verb".  The suffix is most often attached to the stem without change, except when the stem ends in -dge, where the -e is sometimes dropped (abridgment, acknowledgment, judgment, lodgment et al), with the forms without -e preferred in American English.  The most widely known example of the spelling variation is probably judgment vs judgement.  In modern use, judgement is said to be a "free variation" word where either spelling is considered acceptable as long as use is consistent.  Like enquiry vs inquiry, this can be a handy where a convention of use can be structured to impart great clarity: judgment used when referring to judicial rulings and judgement for all other purposes although the approach is not without disadvantage given one might write of the judgement a judge exercised before delivering their judgment.  To those not aware of the convention, it could look just like a typo.  Establishment is a noun; the noun plural is establishments.

The noun establishmentarian describes “an adherent of the principle of an established church” dates from 1839 which of course begat the noun establishmentarianism (the doctrine of the establishmentarians).  What came first however was antidisestablishmentarianism, every schoolboy’s favorite long word although in scientific English there are constructions longer still and even the most alphabetically prolifically forms in English are short compared to those in languages such as Welsh, German and Maori.  It’s not clear who coined antidisestablishmentarianism but William Ewart Gladstone (1809–1898; prime-minister 1868–1874, 1880–1885, Feb-July 1886 & 1892–1894) used the word in his two volume work The state in its relations with the church (1841), a critique of “the ecclesiastical system established by law” and specifically the status of Church of England; it was a discussion of the implications of disestablishment (the act of withdrawing the church from its privileged relation to the state).  As words, neither establishmentarianism nor antidisestablishmentarianism now much disturb the thoughts of many in England and the only role for the latter has long been as a entry in the internet’s many lists of long, obscure or weird words.  In the narrow technical sense, the curious beast that is the Church of England became “an established church” only after the Act of Settlement (1701) and the subsequent Acts of Union (1707) which formalized the status of the institution, first in England and later Great Britain.  Functionally however, the English church can be considered “established” since the Act of Supremacy (1534) which abolished papal authority in England and declared Henry VIII (1491–1547; King of England (and Ireland after 1541) 1509-1547) Supreme Head of the Church of England, the culmination of a process the king had triggered in 1527 when Clement VII (1478–1534; pope 1523-1534) proved tiresome in the matter of divorce law.  Although other sixteenth century statutes (notably the Act of Supremacy (1558) & Act of Uniformity (1558) which usually are referred to collectively as the “Elizabethan Religious Settlement”) added to the framework, the changes were mechanistic and procedural rather than substantive and simply built upon what had since 1534 been the established “state church” while the eighteenth century acts were essentially codifications which formalized the position in constitutional law.  Legally, little since has changed and 26 Church of England bishops (all appointed by the prime-minister (on the recommendation of the Archbishop of Canterbury)) continue (as the “Lords Spiritual”, their lay colleagues being the “Lords Temporal”) to sit in the House of Lords.

In English, establishment's original fifteenth century meaning was “a finalized and settled arrangement” (ie of income or property) while the sense of “the established church” entered the language in 1731, reflecting what had been the legal position since 1534.  The sense of “a place of business” emerged in the early 1830s while the idea of “a social matrix of ruling people and institutions” was in use as early as the mid 1920s although the phrase “the Establishment” (in the socio-political sense) didn’t enter popular use until the late 1950s, influenced by the publication in 1956 of The Power Elite by US sociologist Charles Wright Mills (1916–1962 and usually styled C Wright Mills).  Mills took a structuralist approach and explored the clusters of elites and how their relationships and interactions work to enable them to exert (whether overtly or organically) an essentially dictatorial control over US society and its economy.  Mills, while acknowledging some overlap between the groups, identified six clusters of elites: (1) those who ran the large corporations, (2) those who owned the corporations, (3) popular culture celebrities including the news media, (4) the upper-strata of wealth-owning families, (5) the military establishment (centred on the Pentagon’s Joint Chiefs of Staff) and (6), the upper echelons of government (the executives, the legislatures the judges, the senior bureaucracy and the duopoly of the two established political parties.  The overlaps he noted did not in any way diminish the value of his description, instead illustrating its operation.

The term “Establishment Republican” (a “moderate” or “liberal” member of the US Republican Party (as opposed to the right-wing fanatics who staged a hostile take-over) emerged in the 1980s to replace “Rockefeller Republican”.  Nelson Rockefeller (1908–1979; US vice president 1974-1977) was the archetype of the “liberal republican” in the decade between crazy old Barry Goldwater (1909–1998) losing the 1964 presidential election and crooked old Richard Nixon (1913-1994; US president 1969-1974) in 1974 resigning from office in the wake of the Watergate scandal.  It was in those years the right-wing began their “march through the party establishment”, a process accelerated during the Reagan (Ronald Reagan (1911-2004; US president 1981-1989) years and the moderates came to prefer the term “Establishment Republican” because Rockefeller was tainted by his association with the north-east, something with less appeal as the party’s centre of gravity shifted to the Mid-West and south of the Mason-Dixon Line.  The few surviving Establishment Republicans are now derided by the right wing fanatics as RINOs (Republicans in name only) and in 2024 the more useful descriptors are probably “pre-Trump Republican” & “post-Trump Republican”.  That linguistic moment may pass but the party at this time shows little inclination of seeking to find the centre ground, a wisdom advocated even by Richard Nixon.  In the pre-Thatcher (Margaret Thatcher (1925–2013; UK prime-minister 1979-1990)) UK, where the existence of “the Establishment” was quite obvious, it was the journalist Henry Fairlie (1924-1990) who popularized the term, explaining the concept as a kind of individual & institutional symbiosis by which “the right chaps” came to control the country’s “levers of power, influence and social authority”, exercised through social connections established between families or at the elite schools such men attended: “By the 'Establishment' I do not mean only the centers of official power—though they are certainly part of it—but rather the whole matrix of official and social relations within which power is exercised. The exercise of power in Britain (more specifically, in England) cannot be understood unless it is recognised that it is exercised socially.

In the UK, the Establishment had survived two world wars, the Great Depression, an abdication and even a couple of Labour governments but, by the 1960s, the acceptance of its once effortless hegemony was being challenged, not because people were becoming convinced by the writings of political theorists but as a consequence of the antics of those from the very heart of the Establishment (the Profumo scandal, the “Cambridge Five” spies et al).  In retrospect, it was the ten-odd years prior to 1973 that were the last halcyon days of the “old Establishment” for after that the UK’s anyway troubled “old” economy stagnated, triggering a series of events, notably the assault on the system from within by the improbable anti-Establishment figure of Margaret Thatcher.  The changes wrought in the last five decades shouldn’t be overstated because what happened was one Establishment was replaced by another and there was a substantial overlap in institutional and individual membership but it’s a very different apparatus from that of the 1960s.

One charming Establishment symbol from those years which are for most not in living memory was the ultimate “Establishment car”, one which while not the biggest, fastest, or most expensive available, possessed the qualities to appeal to the “right chaps”.  The Rover P5 was in production between 1958-1973, running from around the time that old patrician Harold Macmillan (1894–1986; UK prime-minister 1957-1963) told the working class “…most of you have never had it so good” to the last days before the first oil shock ended the West’s long, post-war economic prosperity (although the British experience of that was patchy).  The P5’s presence throughout was somehow reassuring because from its debut it embodied the virtues for which Rovers had during the 1950s come to be valued: solidity, quality, comfort and an indifference to fashions and fads.  The P5 was a presence also in parts of the old British Empire and it enjoyed a following in both Australia & New Zealand, valued because it had an “Establishment air” yet was not flashy like a Pontiac or Jaguar (the mostly badge-engineered Daimlers a remarkably effective piece of product differentiation) or a statement of wealth like a Mercedes-Benz would by the mid-1960s become.

The P5 was sold originally as the 3 Litre in three releases (Mark 1, 1958-1962; Mark II, 1962-1965 & Mark III 1965-1967), using a 3.0 litre (183 cubic inch) straight-six with an implementation of the “F-head” design in which the inlet valve sat at the top of the combustion chamber with a side-mounted exhaust valve, an arrangement which offered some advantages when designing combustion chambers suited to the lower octane fuel then used in many markets and allowed the use of larger valves than would have been possible with a conventional OHV (overhead valve) arrangement).  The latter was a matter of some significance because the Rover six came from a time when the taxation regime was based on bore diameter, something which resulted in generations of British small bore, long-stroke engines and the 3 litre six was a famously smooth device, the advertising sometimes showing a circular coin sitting (on its edge) on the air-cleaner with the engine running, the coin not even vibrating.  Technologically though, for passenger vehicles, it was a cul-de-sac and more modern power-plants from the US, Europe (and even the UK) were out-performing the old F-Head.

What transformed the P5 was the adoption of the 3.5 litre (215 cid) V8 which Rover had purchased from General Motors (GM) which, in versions made by Buick, Oldsmobile & Pontiac (BOP), had been used for the new compact lines between 1961-1963.  The UK’s industry made many mistakes in the post-war years but what became the Rover V8 was an inspired purchase, remaining in production in displacements between 3.5 litres (215 cubic inch) and 5.0 (305) from 1967 until 2006, powering everything from the original Range Rovers to executive sedans and sports cars  It was related also to the Oldsmobile version (Rover used Buick’s variant) on which Repco in Australia based the 3.0 litre (193 cubic inch) SOHC (single overhead camshaft) V8 the Brabham team would use to secure the Formula One drivers & constructors championships in 1966 & 1967.

It was in late 1967 the Rover 3.5 was released and the press reception was generally favourable, the improvements in performance and fuel consumption (not something often achieved when adding cylinders and displacement) attributed to a combination of greater mechanical efficiency and reduced weight, the all-aluminum V8 some 200 lb (90 kg) lighter than the hefty old six although some did note the new engine couldn’t quite match the smoothness of the old.  By 1967 however the testers seemed to be aware that whatever its charms, it was a design from the mid-1950s and the world had moved on although to be fair Rover had too, it’s P6 (2000), released in 1963 was very much a modernist take (and one which would in 1968 also be transformed by the V8, becoming the 3500 (1968-1976)).  Between 1967 and the end of production in 1967, the flavor of the press commentary about the 3.5 was very much: “outmoded but satisfying”.

Like the 3.5, the NSU Ro80 had been released in September that year and the contrast was obviously between the past and the future, the German car influencing design for more than a generation (with the obvious exception of the ill-fated Wankel engine) while what the Rover represented was already almost extinct, few of the others in its market segment (the Vanden Plas Farinas, the Humber Super Snipe, the Vauxhall Viscount, the Daimler Majestic Major and the Austin 3 Litre) to see the 1970s.  Nor did other manufacturers make much effort to compete for buyers who clearly wanted something lighter and more modern although, after taking over Rootes Group, to replace the defunct Super Snipe and Imperial, Chrysler did embark on a quixotic venture to prove demand still existed by taking advantage of the old Commonwealth tariff preference scheme by importing the Australian-built Valiant (built on the US A-Body) in both straight-six & V8 form.  It registered barely a blip on the sales charts although, remarkably, both remained available until 1976 by which time the writing was on the wall for Chrysler’s entire European operation.

For many however, the Rover’s reassuring presence was more appealing than modernity (although the rakish Rostyle wheels may have been a shock for some).  It certainly appealed to those at the heart of the establishment and the first prime minister to have been driven in one was the pipe-smoking Harold Wilson (1916–1995; UK prime minister 1964-1970 & 1974-1976) who, although he’d once promised to revitalize the economy with the “white heat of technological change”, was a cautious and conservative character; the car suited him and he appreciated the custom-built ashtray which held his pipe.  Edward "Ted" Heath (1916-2005; UK prime-minister 1970-1974), James "Jim" Callaghan (1912–2005; prime minister of the UK 1979-1979) and Mrs Thatcher followed him into the backseat, something made possible because the Ministry of Supply (advised production was ending in 1973), purchased a batch from the final run, stockpiling them for future VIP use, the same tactic some police forces would later adopt to secure warehouses full of Rover SD1s (another recipient of the ex-Buick V8), the front wheel drive (FWD) replacements they knew were in the pipeline not a compelling choice for the highway patrol.  Not until 1981 was Mrs Thatcher's Rover retired and replaced with a Daimler.

On sale only in 1955-1956, the restrained lines of Chrysler’s elegant “Forward Look” range didn’t last long in the US as extravagance overtook Detroit but the influence endured longer in Europe, both the Mercedes-Benz W111 (1961-1971) & W112 Coupe (1962-1967) and the Rover P5 (1958-1967) & P5B (1967-1973) interpreting the shape.  The Rover was a tale of two rooflines: the “Establishment” Saloon and the rakish Coupé.

In automobiles, by the 1960s, the English-speaking world had (more or less) agreed a coupé was a two door car with a fixed roof and (if based on a sedan), often a shorter wheelbase, designed put a premium on style over utility.  There were hold-outs among a few UK manufacturers who insisted there were fixed head coupés (FHC) and drop head coupés (DHC), the latter described by most others as convertibles or cabriolets but mostly the term had come to be well-understood.  It was thus a surprise when Rover in 1962 displayed a “four-door coupé”, essentially their 3 Litre sedan with a lower roof-line and a few “sporty” touches such as a tachometer and a full set of gauges.  One intriguing part of the tale was why, defying the conventions of the time, the low-roof variation of the four-door was called a coupé (and Rover did use the l'accent aigu (the acute accent: “é”) to ensure the “traditional pronunciation” was imposed although the Americans and others sensibly abandoned the practice).  The rakish lines, including more steeply sloped front and rear glass were much admired although the original vision had been more ambitious still, the intention being a four-door hardtop with no central pillar.  Strangely, although the Americans and Germans had managed this satisfactorily, a solution eluded Rover which had to be content with a more slender B-pillar.

The etymology of coupé is that it’s from couper (to cut off) but the original use in the context of horse-drawn coaches referred to the platform being shortened, not lowered.  Others too have been inventive, Cadillac for decades offering the Coupe De Ville (they used also Coupe DeVille) and usually it was built to exactly the same dimensions as the Sedan De Ville, differing on in the door count.  So Rover probably felt entitled to cut where they preferred; in their case it was the roof and in the early twentieth century, the four-door coupe became a thing, the debut in 2004 of the Mercedes-Benz CLS influencing other including BMW, Porsche, Volkswagen and Audi.  The moment for the style clearly hasn’t passed because when CLS production ended in August 2023, the lines were carried over to the new E-Class (W214, 2023-) but there are no longer references to a “four-door coupé.

Although for almost 20 years a fixture outside No 10 Downing Street, the most famous P5B owner was Elizabeth II (1926-2022; Queen of the UK and other places, 1952-2022) who upgraded from a 3 Litre in 1968 and, although not noted for being sentimental about machinery, until 1987 ran one of the several maintained in the Royal Mews during her reign.

Most of the focus on the Rover 3.5 has always been about the engine and the illustrious passengers but one detail of note is the bulk of the headrests, optional fittings in most markets.  Quite why they were so big isn’t clear although the shape of the rear units presumably made for an easier mounting on the parcel shelf, meaning the seat's frames & covers needed no modification, but it’s apparently not an urban myth some used by the British government had a bullet-proof panel inserted; there was certainly the space to accommodate even a thick metal plate.  The front headrests were used also to house the optional reading lamps, the wiring harness well concealed within.

Antidisestablishmentarianism

Antidisestablishmentarianism (pronounced an-tee-dis-uh-stab-lish-muhn-tair-ee-uh-niz-uhm)

Opposition to the withdrawal of state support or recognition from an established (state) church.

1838: A compound word: anti + dis + establishment + arian + ism.  Anti- is from the Middle English from the Latin from the Ancient Greek.  It’s a prefixal use of antí; akin to the Sanskrit ánti (opposite), the Latin ante and the Middle Dutch ende.  Dis- is a Latin prefix used to impart the meanings “apart,” “asunder,” “away,” “utterly,” or having a privative, negative, or reversing force.  In English, it’s long been used freely, especially with these latter senses, as an English formative.  Establishment is drawn from the Old French establissement (and persists in Modern French as établissement), derived from the verb establir from the Old Occitan establir, from Latin stabilīre (present active infinitive of stabiliō); cognates include Occitan establir, French établir and Italian stabilire.  The –arian suffix dates from circa 1530, from the Late Latin ariānus.  It was a suffix forming personal nouns corresponding to Latin adjectives ending in -ārius or English adjectives or nouns ending in –ary and subsequently proved productive in English with other Latinate stems, forming nouns denoting a person who supports, advocates, or practices a doctrine, theory, or set of principles associated with the base word (authoritarian, vegetarian etc).  The –ism suffix is from the Ancient Greek –ismos & -isma noun suffixes, often directly, often through the Latin –ismus & -isma, though sometimes through the French –isme or the German –ismus, all ultimately from the Greek.  It appeared in loanwords from Greek, where it was used to form action nouns from verbs and on this model, was used as a productive suffix in the formation of nouns denoting action or practice, state or condition, principles, doctrines, a usage or characteristic, devotion or adherence (criticism; barbarism; Darwinism; despotism; plagiarism; realism; witticism etc).

It was Henry VIII (1491–1547; King of England (and Ireland after 1541) 1509-1547) who created what endures in England to this day as the established church, the phrase “Church of England” becoming frequently used immediately after the act of separation in 1534.  The king separated the English church from the authority of Rome to become one of a number created in the wake of the Protestant Reformation, not because of any theological or doctrinal differences, but in order to secure the annulment of his marriage to Catherine of Aragon (1485-1536).  Having found the pope unwilling to annul, he had himself instead declared supreme head of the Church in England, the schism with Rome (with the exception of a brief interruption), unhealed to this day.  Problem solved.  There is a distinction between the Church in England and the Church of England, the roots of Christianity in the British Isles established during England’s time as a province of the Roman Empire early in the first millennium.  From these beginnings there were forks and regional divergences until 597 when a Gregorian mission by Augustine of Canterbury visited, Christianity in England from that point subject to the authority of the Pope.  So it continued until 1534, England even once providing a pope (Adrian IV, circa 1100- 1159, pope 1154-1159), noted now for his contribution to the Irish problem unsolved even now.

Generally pointless and the Germans do it better

With twenty-eight letters and twelve syllables, antidisestablishmentarianism is often cited as the longest word in English.  However, floccinaucinihilipilification (a waggish schoolboy creation in Latin meaning “the act or habit of describing or regarding something as worthless”, the construct being floccus (a wisp) + naucum (a trifle) + nihilum (nothing) + pilus (a hair) + -fication (process of becoming)) is one letter longer and the longest non-technical word in English.  It was once used in a debate in the UK House of Commons, although, even that wasn’t the longest ever spoken in Westminster, pneumonoultramicroscopicsilicovolcanoconiosis (a factitious creation said to mean “a lung disease caused by inhalation of very fine silica dust usually found in volcanos”) having been earlier used during a select committee enquiry.  An opportunist extension of the medical term pneumonoconiosis, it was coined during the proceedings of the National Puzzlers' League convention in 1935 in an attempt to create English’s longest word but was dismissed by dictionaries as fake, clinicians and textbooks still referring to the disease as pneumonoconiosis, pneumoconiosis, or silicosis.  British dictionaries may feel compelled to include antidisestablishmentarianism but many overseas publications do not, on the basis there’s hardly any record of its use except in lists of long words which some editors treat as lexicographical freak shows.  Merriam-Webster's Collegiate Dictionary lists the longest as electroencephalographically, a physician’s diagnostic too.

English doesn't encourage the conjuring of the long compound words familiar in German.  The classic long German word is Donaudampfschiffahrtsgesellschaftskapitän (42 letters) meaning "Danube steamship company captain" but there are others, not all of which dictionaries accept.  Betäubungsmittelverschreibungsverordnung (41 letters) means "regulation requiring a prescription for an anaesthetic”; Bezirksschornsteinfegermeister (30 letters) means “head district chimney sweep"; Rechtsschutzversicherungsgesellschaften (39 letters) means "legal protection insurance companies".  Enterprising Germans created Donaudampfschifffahrtselektrizitätenhauptbetriebswerkbauunterbeamtengesellschaft (80 letters) meaning "association of subordinate officials of the head office management of the Danube steamboat electrical services" but this was held to be bogus and rejected by all authorities which maintained the 63 letter Rindfleischetikettierungsüberwachungsaufgabenübertragungsgesetz ("beef labelling regulation and delegation of supervision law") remained the longest.  It was a real word in actual (if rare) use though usually through the more manageable abbreviation ReÜAÜG but it was rendered obsolete by changes to EU regulations.  Currently, the longest word accepted by most German dictionaries is the 36 letter Kraftfahrzeughaftpflichtversicherung (automobile liability insurance).

Regarding the substantive matter of disestablishment, it’s a political position developed in nineteenth century Britain in opposition to the Liberal Party’s proposal for the removal of the Anglicans’ status as the state church of England, Ireland, and Wales.  The establishment was maintained in England, but the Church of Ireland was disestablished in 1871 and the four Church of England dioceses in Wales were disestablished in 1920, becoming the Church in Wales.  Given the nature of the modern Church of England, it’s a matter seldom mentioned as a constitutional reform of pressing importance.

Restaurant

Restaurant (pronounced res-ter-uhnt (non-U), res-tuh-rahnt (non-U) or res-trahnt (U))

A commercial establishment where meals are prepared and served to customers.

1821: An invention of American English from the French restaurant, originally "food that restores", noun use of present participle of the verb restaurer (to restore or refresh) from the Old French restorer.  The French verb restaurer corresponded to the Latin restaurans & restaurantis, present participle of restauro (I restore), (the more familiar form in Latin being restaurāre (to restore)) from the name of the “restorative soup” served in the first establishments.  The term restaurant to describe the “restorative soup” was defined in 1507 as a "restorative beverage" and in correspondence in 1521 to mean "that which restores the strength, a fortifying food or remedy".  One who runs a restaurant is called a restaurateur; the Italian spelling ristorante was attested in English by 1925.

Modern capitalism has a proliferation of terms to describe variations of the restaurant, some ancient, some recent creations; they include bar, diner, joint, inn, outlet, saloon, cafeteria, grill, hideaway, dive, canteen, lunchroom, chophouse, eatery, pizzeria, drive-in and luncheonette.  The restaurant, in the sense now understood as a place where the public come to sit at tables and chairs and order food from a menu and are served their choices by a waiter is relatively new in culinary history, not emerging until the late eighteenth century.

One interesting (and specific) use of restaurant is to refer to hospitals.  Those who essentially starve themselves for professional reasons (models, ballerinas and others), not infrequently faint, officially "from exhaustion" but actually from their malnourished state.  Sometimes this means they get to go to "the restaurant" (hospital) where as well as relaxing, they can enjoy iv fluids and thus gain the necessary nutrition without having to eat a thing.

Origins

Although all or some of the “official” history may be apocryphal, the story is that in 1765, a Monsieur Boulanger, (also known as Champ d'Oiseaux or Chantoiseau) opened his shop in Paris near the Louvre on either the rue des Poulies or the rue Bailleul (the history is unclear).  There he sold restaurants (or bouillons restaurants), meat-based consommés which gained their name from their intended purpose to "restore" a person's strength.  The word restaurants, rich, thick broths or soups, had since medieval times been used to describe any of a variety of rich bouillons made with chicken, beef, roots, onions, herbs, and depending on the region and season, spices, sugar, toasted bread, barley, butter, and even exotic ingredients such as dried rose petals, Damascus grapes, and amber.  Monsieur Boulanger’s bouillons proved popular but he also had a flair for advertising, placing in his window a sign saying: Venite ad me omnes qui stomacho laboratis et ego vos restaurabo (Come to me all who suffer from pain of the stomach and I will restore you.), the play on words an allusion to both the restorative quality of his broths and, from scripture, Jesus' invitation found in Matthew 11:28: "Come to me, all who labor and are heavy laden, and I will give you rest."

Seeking to expand his customer base and increase revenue, he began serving roasted leg of lamb with white sauce, thereby infringing the monopoly of the caterers' guild.  While there had long been places where customers could be served a variety of food, Monsieur Boulanger’s establishment was the first where there was a formal, printed menu, a concept previously a preserve of the guild.  The guild filed suit, and to the surprise of the Parisian legal and culinary establishments, the courts ruled in favor of Boulanger and the restaurant (établissement de restaurateur), in its modern form, emerged from this decision.  Historians usually suggest the first “real restaurant" (in the modern understanding of the word) was La Grande Taverne de Londres in Paris, founded by Antoine Beauvilliers (1754-1817) in either 1782 or 1786, combing as it did the “four essentials” of fine dining: (1) an elegant room, (2) gourmet cooking, (3) a fine cellar and (4) professional waiters.

Soup

Soup (pronounced soop)

(1) A liquid (or semi-liquid) food made by boiling or simmering meat, fish, or vegetables with various added ingredients.

(2) As pea-soup or pea-souper, slang for a thick fog.

(3) As soup-up, slang for increasing the power of an internal combustion engines (archaic).

(4) Slang for the explosive nitroglycerine.

(5) Slang for photographic developing solution.

(6) As primordial soup, slang for the liquid or gelatinous substrate on or near the surface of the early Earth, especially the mixture of organic compounds from which emerged the earliest form(s) of life.

(7) In horse racing, slang for the illicit drugs used to make horses run faster (mostly US).

1645–1655: From the Middle English soupe & sowpe from the French soupe (soup, broth) and the Old French souppe & sope, both from the Late Latin suppa (bread soaked in broth) of Germanic origin; The Middle High German suppe and the Old Norse soppa were both from the Proto-Germanic sup & supô and related also to the Middle Dutch sope (broth) and the later sop and supper.  Root was the primitive Indo-European sub-, from seue- (to take liquid).  The sense of “souping up" to describe the various methods to increase the horsepower of an internal combustion engine dates from 1921 and is either (and more likely) (1) a borrowing of the term from horse racing where it had been used since 1911 in slang sense of "narcotic injected into horses to make them run faster" or (2) the influence of the introduction of the (etymologically unrelated) supercharged Mercedes 6/25/40 & 10/40/65 hp cars.  The soup-kitchen, (public establishment supported by voluntary contributions, for preparing and serving soup to the poor at no cost) is attested from 1839 and in Ireland, a souper, noted first in 1854, was a "Protestant clergyman seeking to make converts by dispensing soup in charity".

The modern concept of abiogenesis, the idea of a “primordial soup” being the liquid in which life on Earth began was first mentioned by the British scientist JBS Haldane (1892–1964) in an essay called “The origin of life”, published in The Rationalist Annual (1929).  It described the early ocean as a "vast chemical laboratory", a mix of inorganic compounds in which organic compounds could form when, under the influence of sunlight and the elements in the atmosphere, things in some sense alive came into being.  Simple at first, as the first molecules reacted together, more complex compounds and, ultimately, cellular life forms emerged.  Of interest in the age of pandemic is life on Earth appears to have become possible because of the prior existence of viruses.  What began as essentially the self-replication of nucleic acids, later called biopoiesis or biopoesis, is the beginning of viruses as the entities which existed between the prebiotic soup and the first cells.   Haldane suggested prebiotic life would been in the form of viruses for millions of years before, for reasons unknown and probably by chance, the circumstances existed for a number of elementary units to combine, creating the first cell.  At the time, the scientific establishment was sceptical to the point of derision but in the decades after publication, the theories of Haldane and Soviet biochemist Alexander Oparin (1894–1980) (who published a similar theory in Russian in 1924 and in English in 1936) were increasingly supported by evidence from experiments and is now the scientific orthodoxy.


In January 2020, even before COVID-19 had been declared a pandemic, a video was tweeted which, appropriately, went viral.  By then, it appeared SARS-Covid-2 was a mutated bat virus so a video of a young lady eating bat soup, circulating with a caption suggesting (1) it had been filmed in Wuhan in December and that (2) she was patient zero in what was then an epidemic aroused interest in the vector of transmission, if not the culinary possibilities of cooked bats.  The video was soon revealed to be fake news, dating from 2016 and shot not in Wuhan but Palau.

Bat Soup, an acquired taste

Bat soup is made by throwing a washed bat (fur included) into a pot of boiling water for two hours.  Once done, the bat is taken out of the water and cooked with ginger and coconut milk, other spices and vegetables added according to taste.  To get at the meat, some prefer to remove the fur by skinning the bat but the authentic technique is to suck out the flesh, discarding the fur.  The preparation time is 15 minutes, the cooking takes 2 hours, 20 minutes and it serves four.

Ingredients

1 large bat
2 medium hot peppers
1 chopped white onion
5 tablespoons light soy sauce
2 teaspoons lemon juice
1 pinch salt
2 cans unsweetened coconut milk

Instructions (hot sauce)

(1) In a sauce bowl, mix 2 teaspoons lemon juice and 5 tablespoons soy sauce with chopped onion. 

(2) Add chopped hot pepper according to taste.

Instructions

(1) In a large pot, boil the whole bat in water until the skin is tender enough to tear through; for a typically-sized large bat, this will take around two hours.

(2) Remove water.  Add coconut milk to cooked bat with a pinch of salt to taste.

Cook for a further ten minutes. Serve with hot sauce and rice.

Richard Nixon, soup and détente

Richard Nixon (1913-1994; US president 1969-1974, centre) became famous for some things and infamous for others but one footnote in the history of his administration was that he banned soup.  In 1969, Nixon hosted a state dinner for Pierre Trudeau (1919–2000; prime minister of Canada 1968-1979 & 1980-1984) and the next day complained to HR Haldeman (1926–1993; White House chief of staff 1969-1973) that the formal dinners “take forever”, suggesting “Why don’t we just leave out the soup course?”, adding “Men don’t really like soup.” (other than the waitresses, state dinners were then substantially a male preserve).  Haldeman knew his socially awkward boss well and had his suspicions so he called the president's valet and asked, “Was there anything wrong with the president’s suit after that dinner last night?  Why yes…”, the valet responded, “…he spilled soup down the vest. Not until Gerald Ford (1913–2006; US president 1974-1977) assumed the presidency was soup restored to the White House menus to the relief of the chefs who couldn’t believe a dinner was really a dinner without a soup course.

The event was not a “state visit” because at the time no formal diplomatic relations existed between the two nations (the US still recognized the Taiwan-based RoC (Republic of China (which Beijing regards still as a “renegade province”)) as the legitimate government of China). For that reason, the trip was described as an “official visit”, a term not part of diplomatic protocol.  There are in history a few of these fine distinctions: technically, diplomatic relations were never re-established between Berlin and Paris after the fall of the Third Republic in 1940, ambassadors were never accredited so Otto Abetz (1903-1958), who fulfilled the role between 1940-1944 should be referred to as “de facto” German ambassador (as the letters patent made clear, he acted with full ambassadorial authority).  In July 1949, a French court handed Abetz a twenty-year sentence for crimes against humanity; released in 1954, he died in 1958 in a traffic accident on the Cologne-Ruhr autobahn and there are conspiracy theorists who suspect the death was “an assassination”.  The de facto ambassador was the great uncle of Eric Abetz (b 1958; Liberal Party senator for Tasmania, Australia 1994-2022, member of the Tasmanian House of assembly since 2024).

Both the US and the PRC had their own reasons for wishing to emerge from the “diplomatic deep-freeze” (Moscow something of a pivot) and it was this event which was instrumental in beginning the process of integrating the PRC into the international system.  The “official visit” also introduced into English the idiomatic phrase “Nixon in China” (there are variations) which describes the ability of a politician with an impeccable reputation of upholding particular political values to perform an action in seeming defiance of them without jeopardizing his support or credibility.  For his whole political career Nixon had been a virulent anti-communist and was thus able to make the tentative approach to the PRC (and later détente with the Soviet Union) in a way which would not have been possible for someone without the same history.  In the same way the Democratic Party’s Bill Clinton (b 1946; US president 1993-2001) was able during the 1990s to embark on social welfare “reform” in a way no Republican administration could have achieved.

Following the visit, there was also a culinary ripple in the US.  Since the nineteenth century, Chinese restaurants had been a fixture in many US cities but the dishes they served were often very different from those familiar in China and some genuinely were local creations; fortune cookies began in San Francisco courtesy of a paperback edition of “Chinese Proverbs” and all the evidence suggests egg rolls were invented in New York.  The news media’s coverage of the visit attracted great interest and stimulated interest in “authentic” Chinese food and the details of what was on the menus was published.  Noting the banquet on the first night featured shark’s fin soup, steamed chicken with coconut and almond junket (a type of pudding), one enterprising chap was within 24 hours offering in his Manhattan Chinese restaurant recreation of each dish, a menu which remained popular for some months after the president’s return.  Mr Nixon’s favorite meal during the visit was later revealed to be Peking duck.

Brigade

Brigade (pronounced bri-geyd)

(1) In army organisation, a military unit having its own headquarters and consisting of two or more regiments; the army formation immediately larger than a regiment, smaller than a division.

(2) In casual use, sometimes used to describe a large body of troops.

(3) A group of individuals organized for a particular purpose (used sometimes in a derogatory sense).

(4) A historical term for a convoy of canoes, sleds, wagons, or pack animals, especially as used to supply trappers in the eighteenth and nineteenth century Canadian and US fur trade.

(5) To form or unite into a brigade; to group together.

(6) In the slang of Internet trollers, to harass an individual or community online in a coordinated manner.

1630–1640: From the French brigade (body of soldiers) from the Old Italian brigata (troop, crowd, gang) derived from the Old Italian brigare (to fight, brawl) from briga (strife, quarrel), perhaps of Celtic (and related to the Gaelic brigh and Welsh bri (power) or Germanic origin.  The French brigand (foot soldier) which later adopted the meaning “outlaw or bandit” is also related.  Brigade is a noun & verb and brigaded & brigading are verbs; the noun plural is brigade.

The word endures in describing one of the standard (though numerically various) units of army organisation but was used also by the International Brigades as a general description of the volunteer forces which assembled during the Spanish Civil War (1936-1940) to assist the doomed Spanish Republic.  Despite the use of the term, the formations in which members of the International Brigades fought were of varied size and there was no real relationship to the traditional use of "brigade" by armies.  Specialized formations (intelligence corps, medical corps et al) exist in all branches of the military with no rules or consistency in the numbers of their establishment but whereas the structures of navies (squadrons, flotillas, fleets etc) and air forces (flights, squadrons, wings, groups etc) are based on the number of vessels or airframes attached, the army (mostly) defines its organization by the number of personnel allocated, the numbers listed below generally indicative based on historic formations.

Most armies use all or a subset of the above although the numbers vary (greatly).  A division is made up of 3-4 brigades, a corps of 3-4 divisions and so on.  In Western armies, the numbers listed above reflect the big-scale mass formations used during World War II (1939-1945); peacetime armies are a fraction of the size but the organizational framework is retained, most forces actively using only the smaller clusters.  During WWII, US army command groups tended to be up to twice the size of British units though within the same army, divisions often varied in size, an infantry division usually larger than an armored.  A corps can be assembled from the armies of more than one nation, the Australian & New Zealand Army Corps (ANZAC) being formed in 1915 prior to deployment as part of the Dardanelles Campaign.  Other organizational tags such as squadron also exist but tend now either to be rare or, like battery, applied to specialized units based on function rather than size.  A special case is troop which generally is an alternative word for platoon but there are exceptions.

In twenty-first century wars, entire divisions are rarely committed operationally and brigade level engagements are regarded as large-scale; in the world wars of the twentieth century (uniquely big, multi-theatre affairs), the standard battlefield unit tended to be the division and by 1944 Soviet Union was fielding nearly five-hundred.  The numbers in the world wars were certainly impressive but in a sense could be deceptive, the percentage of those listed on the establishment actually committed to combat sometimes surprisingly low (though this tended to apply less to those of the USSR).  One British prime-minister, pondering this, complained to the Chief of the Imperial General Staff (the CIGS one of the country's leading ornithologists) that the army reminded him “…of a peacock; all tail and very little bird”.  Dryly, the field marshal responded by pointing out “the peacock would be a very poorly balanced bird without its tail”.

The military rank brigadier (Brig the standard abbreviation) has had a varied history but in UK and US (where it’s styled as brigadier general) us it sits between colonel and major-general.  The NATO (North Atlantic Treaty Organization) rank code is OF-6 which aligns it in the UK with a Royal Navy (RN) commodore and Royal Air Force (RAF) air commodore.  Historically, brigadier was originally an appointment conferred on colonels (a la the way RN captains were created commodore and captains in the US Navy were upon retirement made rear-admirals) but since 1947 it has been a substantive rank in the British Army.  In the British Army the rank of brigadier-general was abolished in 1921, that rationale being the functional role was that of a senior colonel (ie a field officer) rather than a junior general (ie a staff officer) but such changes are never popular with the officer class and in 1928 the position was gazetted as brigadier.  Curiously, for over a year after the RAF was created in April 1918, there were brigadier-generals until the title air commodore was adopted.  Many other air forces have continued to have generals.

In civilian life, the most familiar (and probably most valued) brigades are fire brigades and the first municipal brigade is thought to have been established in the Roman Republic by Octavian (Gaius Julius Caesar Augustus, 63 BC–AD 14; founder of the Roman Empire and first Roman emperor 27 BC-AD 14).  Created in 32 BC, the system was manned (in the Roman way) by slaves and organized along military lines, each of the seven “fire stations” headed by a centurion.  The structure replaced an earlier system set up by a rich individual who paid for the slaves; in gratitude, the Romans elected him a magistrate, a development which didn’t appeal to Octavian.  In the centuries which followed, things tended to be more ad hoc until the Great Fire of London (1666) made insurance companies suffer such losses that quickly it was worked out it was cheaper to fund a competent, standing fire brigade than pay for the consequences of a conflagration.  Fire brigades funded by property insurance companies were soon in operation and the idea spread with the core structure still in use today although the responsibility for funding has been assumed by governments at various levels although in many places with small populations, volunteer fire brigades are common, their physical resources (machinery, communications etc) often provided by the state.  The role of firefighter (the modern, gender-neutral, replacement for the old “fireman”) is much respected but the Nazis still managed to make it a slight.  When held in the cells of Nuremberg’s palace of Justice during the first Nuremberg trial (1945-1946), Hermann Göring (1893–1946; leading Nazi 1922-1945, Hitler's designated successor & Reichsmarschall 1940-1945) contemptuously described the jail’s commandant as a “fire brigade colonel”.  Göring, a dashing fighter pilot in World War I (1914-1918) was not impressed by the immaculate uniform and strict discipline imposed by Colonel Burton C Andrus (1892–1977) who, although having served in the regular army since 1917, had never seen combat.  When the colonel in 1969 published his memoirs, of the many slights the prisoners had made of him, the only one about which he seems to have been sensitive was that he might have been a few pounds overweight.

La Brigade de cuisine

Portrait of Auguste Escoffier.  The decoration is the Ordre national de la Légion d'honneur (National Order of the Legion of Honour, France’s highest order of merit, awarded to both civilians and the military.  It was established in 1802 by Napoleon Bonaparte (1769–1821; leader of the French Republic 1799-1804 & Emperor of the French from 1804-1814 & 1815)).  It’s a wholly appropriate honor for a French chef.

The Brigade de cuisine (kitchen brigade) was a hierarchical organizational chart for commercial kitchens, codified from earlier practices by French chef, Georges-Auguste Escoffier (1846–1935) who, following his service in the French army, had refined and codified the the kitchen structure which had existed since the fourteenth century.  The military-type chain-of-command became formalized but what was novel was what he dubbed the chef de partie system, an organizational model based on sections which were both geographically and functionally defined.  His design was intended to avoid duplication of effort and facilitate communication.  The economic realities of technological innovation, out-sourcing to external supply chains and the changing ratio of labour costs to revenue have meant even the largest modern kitchens now use a truncated version of the Escoffien system although the sectional chef de partie structure remains.  In the pre-modern era, Escoffier’s idealized structure was adopted only in the largest of exclusive establishments or the grandest of cruise liners and, like the Edwardian household, is a footnote in sociological, organizational and economic history.  The positions were:

Chef de cuisine or Executive Chef: The culinary and administrative head of the kitchen.

Sous-chef de cuisine:  The Executive Chef’s deputy.

Saucier or sauté cook: Prepares sauces and warm hors d'oeuvres, completes meat dishes, and in smaller restaurants, may work on fish dishes and prepare sautéed items.  One of the most technically demanding positions in the brigade.

Chef de partie: The senior chef of a particular section.

Demi Chef: An experienced chef working under a chef de partie.

Chen:  A chef allocated to particular dishes (essentially a specialist demi chef).

Cuisinier:  A generalist chef working in one or more sections.  This tends now to be a role undertaken by many commis and demi chefs rather than a stand-alone position.

Commis Chef: A junior chef, working under supervision and often responsible for maintaining the tools and fittings of the section.  The modern commis chef now often undertakes a much wider range of duties than was the traditional role.

Apprentice: Trainee or student chefs gaining theoretical and practical training while performing preparatory and cleaning work; duties become more complex as experience builds and some of the training is now often undertaken in dedicated culinary schools or other institutions.

Plongeur: Dishwasher or kitchen porter who cleans dishes and utensils, and may be entrusted with basic preparatory jobs otherwise done by apprentices.  In modern use, the role is now described usually as "kitchen hand".

Joining La Brigade de cuisine: Lindsay Lohan as sous-chef de cuisine on celebrity cooking shows. 

Marmiton: A pot and pan washer, sometimes also known as kitchen porter; again, the term "kitchen hand" has prevailed.

Rôtisseur: The roast cook who manages the team which roasts, broils, and deep fries dishes.

Charcutier: A chef who prepares pork products such as pâté, pâté en croûte, rillettes, hams, sausages and any cured meats; may coordinate with the garde manger and deliver cured meats.

Grillardin: The grill cook who, in larger kitchens, prepares grilled foods instead of the rôtisseur.

Friturier: The fry cook who, in larger kitchens, prepares fried foods instead of the rôtisseur.

Poissonnier: The fish cook who prepares fish and seafood dishes.

Entremetier: The entrée preparer who prepares soups and other dishes not involving meat or fish, including vegetable and egg dishes.

Potager: The soup cook who, in larger kitchens, reports to the entremetier and prepares the soups, often also assisting the saucier.

Legumier: The vegetable cook who, in larger kitchens, also reports to the entremetier and prepares the vegetable dishes.

Garde manger: The pantry supervisor responsible for preparation of cold hors d'oeuvres, pâtés, terrines and aspics; prepares salads; organizes large buffet displays; and prepares charcuterie items.

Tournant: The spare hand or rounds man, a utility position which exists to move about the kitchen as required, assisting as needed.  In military terms, the reserve.

Pâtissier: The pastry cook who prepares desserts and other meal-end sweets, and for locations without a boulanger, also prepares breads and other baked items; may also prepare pasta.

Confiseur: In larger kitchens, prepares candies and petit fours instead of the pâtissier.

Glacier: In larger kitchens, prepares frozen and cold desserts instead of the pâtissier.

Boucher: The butcher who butchers meats, poultry, and sometimes fish; often also in charge of breading meat and fish items.

Aboyeur: The announcer or expediter who takes orders from the dining room and distributes them to the various stations; this role may also be performed by a senior chef.

Communard: Prepares the meal served to the restaurant staff.

Garçon de cuisine: The “kitchen boy", a junior position who performs preparatory and auxiliary work, sometimes as a prelude to a formal apprenticeship.
