Restaurant

Restaurant (pronounced res-ter-uhnt (non-U), res-tuh-rahnt (non-U) or res-trahnt (U))

A commercial establishment where meals are prepared and served to customers.

1821: An invention of American English from the French restaurant, originally "food that restores", noun use of present participle of the verb restaurer (to restore or refresh) from the Old French restorer.  The French verb restaurer corresponded to the Latin restaurans & restaurantis, present participle of restauro (I restore), (the more familiar form in Latin being restaurāre (to restore)) from the name of the “restorative soup” served in the first establishments.  The term restaurant to describe the “restorative soup” was defined in 1507 as a "restorative beverage" and in correspondence in 1521 to mean "that which restores the strength, a fortifying food or remedy".  One who runs a restaurant is called a restaurateur; the Italian spelling ristorante was attested in English by 1925.

Modern capitalism has a proliferation of terms to describe variations of the restaurant, some ancient, some recent creations; they include bar, diner, joint, inn, outlet, saloon, cafeteria, grill, hideaway, dive, canteen, lunchroom, chophouse, eatery, pizzeria, drive-in and luncheonette.  The restaurant, in the sense now understood as a place where the public come to sit at tables and chairs and order food from a menu and are served their choices by a waiter is relatively new in culinary history, not emerging until the late eighteenth century.

One interesting (and specific) use of restaurant is to refer to hospitals.  Those who essentially starve themselves for professional reasons (models, ballerinas and others), not infrequently faint, officially "from exhaustion" but actually from their malnourished state.  Sometimes this means they get to go to "the restaurant" (hospital) where as well as relaxing, they can enjoy iv fluids and thus gain the necessary nutrition without having to eat a thing.

Although all or some of the “official” history may be apocryphal, the story is that in 1765, a Monsieur Boulanger, (also known as Champ d'Oiseaux or Chantoiseau) opened his shop in Paris near the Louvre on either the rue des Poulies or the rue Bailleul (the history is unclear).  There he sold restaurants (or bouillons restaurants), meat-based consommés which gained their name from their intended purpose to "restore" a person's strength.  The word restaurants, rich, thick broths or soups, had since medieval times been used to describe any of a variety of rich bouillons made with chicken, beef, roots, onions, herbs, and depending on the region and season, spices, sugar, toasted bread, barley, butter, and even exotic ingredients such as dried rose petals, Damascus grapes, and amber.  Monsieur Boulanger’s bouillons proved popular but he also had a flair for advertising, placing in his window a sign saying: Venite ad me omnes qui stomacho laboratis et ego vos restaurabo (Come to me all who suffer from pain of the stomach and I will restore you.), the play on words an allusion to both the restorative quality of his broths and, from scripture, Jesus' invitation found in Matthew 11:28: "Come to me, all who labor and are heavy laden, and I will give you rest."

Seeking to expand his customer base and increase revenue, he began serving roasted leg of lamb with white sauce, thereby infringing the monopoly of the caterers' guild.  While there had long been places where customers could be served a variety of food, Monsieur Boulanger’s establishment was the first where there was a formal, printed menu, a concept previously a preserve of the guild.  The guild filed suit, and to the surprise of the Parisian legal and culinary establishments, the courts ruled in favor of Boulanger and the restaurant (établissement de restaurateur), in its modern form, emerged from this decision.  Historians usually suggest the first “real restaurant" (in the modern understanding of the word) was La Grande Taverne de Londres in Paris, founded by Antoine Beauvilliers (1754-1817) in either 1782 or 1786, combing as it did the “four essentials” of fine dining: (1) an elegant room, (2) gourmet cooking, (3) a fine cellar and (4) professional waiters.

Turkey

Turkey (pronounced tur-kee)

(1) A large, gallinaceous bird of the family Meleagrididae, especially Meleagris gallopavo, of America, typically of green, reddish-brown, and yellowish-brown plumage of a metallic luster; domesticated in most parts of the world.

(2) The flesh of this bird, used as food.

(3) Any of a number of other similar birds, so described.

(4) As Turkey, the former name of Türkiye Cumhuriyeti (Republic of Türkiye).

(5) In slang, a person or thing of little appeal; dud; loser; a naive, stupid, or inept person.

(6) In the slang of the theatre, an unsuccessful production; a flop (a synonym of “a bomb” in some countries, an antonym in others); now used beyond the theatre and applied to just about any failed product including political candidates or policies.

(7) In ten-pin bowling, three strikes in succession.

(8) In the (derogatory) slang of clinical medicine, a patient feigning symptoms, illness or injury; a malingerer.

(9) In rural slang (US & Australia), a pack carried by a lumberman; a bindle; also, a large travel bag, a suitcase (archaic).

1545–1555: A short for Turkey cock and Turkey hen (“cock of Turkey” & “hen of Turkey”), applied firstly to guinea fowl (apparently because the bird was brought through Turkish territory) and later (erroneously) to the American bird.  The noun plural is turkeys by depending on context, turkey can be a plural.  The erroneous “turkies” & “turkies” does occasionally appear because of a belief all nouns ending in "y" should form a plural ending in "ies". When a noun ends with [vowel] + y, only an appended "s" is needed to form the plural.

The clipping of turkey-cock (male) and turkey-hen (female) applied originally to the guinea fowl (Numida meleagris) which was brought to Europe (via Turkey) from Madagascar by Portuguese traders who really were called “turkey merchants”.  In English, the word turkey was first applied to the bird in the 1550s, either because it was identified with or treated as a species of the guinea fowl or because reached wider Europe from Spain by way of North Africa, then under Ottoman (Turkish) rule.  For the same reason, in English, Indian corn was originally “turkey corn” or “turkey wheat”.  The word was subsequently applied to the larger northern American fowl (Meleagris gallopavo) which conquistadors had brought to Spain in 1523 after finding the species had been domesticated by the Aztecs.  The adoption of the name (initially as “wild Turkey”), documented in North American records since 1607, wasn’t until later recognized as a taxonomical error and it’s thought it happened simply because the of the visual similarity between the birds.  There was once speculation that it may have been something more considered, either because the North American turkey was in part introduced through Ottoman territories or else to indicate it was foreign; these theories are now little supported.  It’s a strange linguistic soup because in Turkish the name is hindi (literally "Indian") a use probably influenced by early seventeenth century French dinde (contracted from poulet d'inde (literally "chicken from India", which endures in Modern French as dindon), based on the then-common misconception that the New World (the Americas) was eastern Asia (hence “Red Indians”, “West Indies” et al).  The bird from the Americas may have appeared in England as early as 1524 but documentary evidence confirms its presence in 1534.  Large, tasty, easily fattened and well adapted to the climate, turkey by the late sixteenth century had become the standard fare at an English Christmas dinner.

In an example of the way mistakes in science can linger as orthodoxy if vested with sufficient academic respectability, even after the different biology of the two birds were distinguished and the names differentiated, turkey was erroneously retained for the American bird, instead of the African.  From this confusion, Melagris, the ancient name of the African fowl, was listed as the generic name of the American bird by Carl Linnaeus (1707–1778), the Swedish physician who defined the modern system of taxonomy which applies a binomial nomenclature to botanical and zoological organisms.

In August 2022, it was announced the release of the film Batgirl, commissioned for Warner Bros’ streaming platform HBO Max, had been cancelled.  Although never intended to show in cinemas, such was the negative feedback from test audiences it was sent to editing experts who are said to have declared it irredeemable, the turkey consigned to the Warner Bros vault.  Said to involve the write-off of what sounds a rather inflated US$90 million, cynics immediated speculated Warner Bros' accountants might have calculated the guaranteed profit offered by a tax off-set a more lucrative business model than a release on any platform.  In earlier times the odd turkey did eventually end up a cult-favorite on VCR or DVD but there's no prediction how long it'll take Batgirl to leak out.  In idiomatic use, the sense of “a turkey” meaning "inferior show, a failure" is show business slang dating from 1927, presumably because of the bird's reputation for stupidity, this meaning soon extended to just about any failed product including political candidates or policies.  In this sense, there’s also the slang meaning "stupid, ineffectual person" but surprisingly, there’s no record of use prior to 1951.

A turkey shoot was "something easy", slang which is listed as being of World War II-era but most seem to agree it had likely been in oral use much earlier, especially south of the Mason-Dixon Line.  The reference was to (presumably mostly informal) contests of marksmanship in which turkeys were tied behind a log, only their moving heads visible as targets; it sounds barbaric now but it was a different time and to the bird, the experience may have been little different from any other method of dispatch.  The sudden popularity of “turkey shoot” during the war was probably associated with the events in the Battle of the Philippine Sea (19-20 June 1944), the last of the conflict’s big, set-piece carrier battles and the engagement which ended the capacity of the Imperial Japanese Navy strategically to deploy carrier groups.  US Naval aviators described the air battles as “the Great Marianas Turkey Shoot” because of the disproportional loss ratio inflicted upon the Japanese and the ease with which their aircraft could be downed.  The air engagement was a classic example of the approach of the US military: Problems are not merely to be solved but overwhelmed.  It was also a example of how superior technology will tend to prevail, the combination of proximity fuses which meant American gunnery didn’t need to be especially accurate when trained on Japanese aircraft still mostly without self-sealing fuel tanks as decisive a difference as earlier advantages in hardware had been for the British in the Sudan or the Italians in Ethiopia.  To “talk turkey” dates from 1824 and, according to folklore, comes from the tale of a Yankee attempting to swindle a Native American (then called a Red Indian) in dividing a turkey and buzzard as food.

Cold turkey refers both to (1) a sudden and complete withdrawal from a dependent substance (especially narcotics) and (2) the physiological effects of such a withdrawal.  The origin of the term is murky and may date from a number of nineteenth century references to unwelcome guests being served literally cold slices of turkey at Christmas rather than the more pleasing hot, dressed dish.  In that sense it came to refer both to suffering and social ostracization, the meaning in the sense of term and the term "withdrawal from an addictive substance" (originally of heroin) dating from 1921, probably based on the idea of a meal of cold turkey being something served with little preparation.

The country formerly known as the Republic of Turkey straddles West Asia and South East Europe, the Bosporus (on the banks of which sits Istanbul (formerly known as Constantinople)), an ancient gateway between the two continents.  The Ottoman Empire emerged in Anatolia (the western portion of Asian Turkey) during the thirteenth century, surviving until 1918.  During the sixteenth century, the empire stretched from the Persian Gulf to western Algeria and included most of southeastern Europe, leaving an architectural heritage visible to this day.  Modern Turkey was created in 1923 as a secular state.  The English name of Turkey is ultimately from the Medieval Latin Turchia & Turquia (land of the Turks)but it wasn’t until as recently as the early eighteenth century that the spelling “Turkey” began to be standardized.  In the Middle English the spellings included Turkye, Torke, Turkie & Turky and those who complain about the lack of proof-reading and editing in modern documents should note that it was not unusual for more than one form to appear in the same short text.  The most common form in the Middle English was Turkye, from the Anglo-Norman Turkye, from the Medieval Latin Turcia, from Turcus (usually translated as “Turk” and of unknown origin but many suggest and original meaning of “strength”), from the Byzantine Greek Τορκος (Toûrkos), from the Persian ترک‎ (Turk), from the Middle Persian twlk' (Turk), from the Old Turkic.  The original meaning of the Persian Turk is also uncertain and may have varied with context, various documents suggesting it could be used to mean “warrior”, “beautiful youth”, “barbarian” or “robber” and how wide a net that casts may depend on one's opinion of males aged 17-25.

In May 2022, the office of the Secretary-General of the United Nations announced the Republic of Turkey had changed its name to Türkiye Cumhuriyeti (Republic of Türkiye).  Whether the authorities in Ankara were much concerned about sharing a name with the large gallinaceous bird native or the colloquial use to describe dud movies or stupid and inept people isn’t clear but certainly, they were no longer happy about an anglicized version of the name being used around the world.  In a press release, President Recep Tayyip Erdoğan (b 1954; prime minister of Turkey 2003-2014, president since 2014) stated “Türkiye is accepted as an umbrella brand for our country in national and international venues...” and the name “…is the best representation and expression of the Turkish people’s culture, civilization, and values.”  Effectively a national re-branding, the change will be reflected in the label “Made in Türkiye” appearing on manufactured goods and adjustments have been made to institutional names such as the nation carrier which would henceforth operate internationally under the name Türk Hava Yolları (Turkish Airlines).

Recent changes of name

2019: The Republic of Macedonia changed to Republic of North Macedonia to resolve some regional disputes.  For a time, because of earlier disputes, it had been known as the Former Yugoslav Republic of Macedonia which was usually written as FYROM (pronounced fire-rom). 

2018: The Kingdom of Swaziland became the Kingdom of Eswatini.

2016: Czechia introduced as country name although Czech Republic remains the state title.

2014: Republic of Cape Verde became Republic of Capo Verde.

2013: The Democratic Republic of Somalia became the Federal Republic of Somalia.

2011: The Great Socialist People’s Libyan Arab Jamahiriya became simply Libya.

2010: The Union of Myanmar became the Republic of the Union of Myanmar although the SLORC at the time issued some contriductory statements and Burma is still widely used.

Soup

Soup (pronounced soop)

(1) A liquid (or semi-liquid) food made by boiling or simmering meat, fish, or vegetables with various added ingredients.

(2) As pea-soup or pea-souper, slang for a thick fog.

(3) As soup-up, slang for increasing the power of an internal combustion engines (archaic).

(4) Slang for the explosive nitroglycerine.

(5) Slang for photographic developing solution.

(6) As primordial soup, slang for the liquid or gelatinous substrate on or near the surface of the early Earth, especially the mixture of organic compounds from which emerged the earliest form(s) of life.

(7) In horse racing, slang for the illicit drugs used to make horses run faster (mostly US).

1645–1655: From the Middle English soupe & sowpe from the French soupe (soup, broth) and the Old French souppe & sope, both from the Late Latin suppa (bread soaked in broth) of Germanic origin; The Middle High German suppe and the Old Norse soppa were both from the Proto-Germanic sup & supô and related also to the Middle Dutch sope (broth) and the later sop and supper.  Root was the primitive Indo-European sub-, from seue- (to take liquid).  The sense of “souping up" to describe the various methods to increase the horsepower of an internal combustion engine dates from 1921 and is either (and more likely) (1) a borrowing of the term from horse racing where it had been used since 1911 in slang sense of "narcotic injected into horses to make them run faster" or (2) the influence of the introduction of the (etymologically unrelated) supercharged Mercedes 6/25/40 & 10/40/65 hp cars.  The soup-kitchen, (public establishment supported by voluntary contributions, for preparing and serving soup to the poor at no cost) is attested from 1839 and in Ireland, a souper, noted first in 1854, was a "Protestant clergyman seeking to make converts by dispensing soup in charity".

The modern concept of abiogenesis, the idea of a “primordial soup” being the liquid in which life on Earth began was first mentioned by the British scientist JBS Haldane (1892–1964) in an essay called “The origin of life”, published in The Rationalist Annual (1929).  It described the early ocean as a "vast chemical laboratory", a mix of inorganic compounds in which organic compounds could form when, under the influence of sunlight and the elements in the atmosphere, things in some sense alive came into being.  Simple at first, as the first molecules reacted together, more complex compounds and, ultimately, cellular life forms emerged.  Of interest in the age of pandemic is life on Earth appears to have become possible because of the prior existence of viruses.  What began as essentially the self-replication of nucleic acids, later called biopoiesis or biopoesis, is the beginning of viruses as the entities which existed between the prebiotic soup and the first cells.   Haldane suggested prebiotic life would been in the form of viruses for millions of years before, for reasons unknown and probably by chance, the circumstances existed for a number of elementary units to combine, creating the first cell.  At the time, the scientific establishment was sceptical to the point of derision but in the decades after publication, the theories of Haldane and Soviet biochemist Alexander Oparin (1894–1980) (who published a similar theory in Russian in 1924 and in English in 1936) were increasingly supported by evidence from experiments and is now the scientific orthodoxy.


In January 2020, even before COVID-19 had been declared a pandemic, a video was tweeted which, appropriately, went viral.  By then, it appeared SARS-Covid-2 was a mutated bat virus so a video of a young lady eating bat soup, circulating with a caption suggesting (1) it had been filmed in Wuhan in December and that (2) she was patient zero in what was then an epidemic aroused interest in the vector of transmission, if not the culinary possibilities of cooked bats.  The video was soon revealed to be fake news, dating from 2016 and shot not in Wuhan but Palau.

Bat Soup, an acquired taste

Bat soup is made by throwing a washed bat (fur included) into a pot of boiling water for two hours.  Once done, the bat is taken out of the water and cooked with ginger and coconut milk, other spices and vegetables added according to taste.  To get at the meat, some prefer to remove the fur by skinning the bat but the authentic technique is to suck out the flesh, discarding the fur.  The preparation time is 15 minutes, the cooking takes 2 hours, 20 minutes and it serves four.

Ingredients

1 large bat
2 medium hot peppers
1 chopped white onion
5 tablespoons light soy sauce
2 teaspoons lemon juice
1 pinch salt
2 cans unsweetened coconut milk

Instructions (hot sauce)

(1) In a sauce bowl, mix 2 teaspoons lemon juice and 5 tablespoons soy sauce with chopped onion. 

(2) Add chopped hot pepper according to taste.

Instructions

(1) In a large pot, boil the whole bat in water until the skin is tender enough to tear through; for a typically-sized large bat, this will take around two hours.

(2) Remove water.  Add coconut milk to cooked bat with a pinch of salt to taste.

Cook for a further ten minutes. Serve with hot sauce and rice.

Richard Nixon, soup and détente

Richard Nixon (1913-1994; US president 1969-1974, centre) became famous for some things and infamous for others but one footnote in the history of his administration was that he banned soup.  In 1969, Nixon hosted a state dinner for Pierre Trudeau (1919–2000; prime minister of Canada 1968-1979 & 1980-1984) and the next day complained to HR Haldeman (1926–1993; White House chief of staff 1969-1973) that the formal dinners “take forever”, suggesting “Why don’t we just leave out the soup course?”, adding “Men don’t really like soup.” (other than the waitresses, state dinners were then substantially a male preserve).  Haldeman knew his socially awkward boss well and had his suspicions so he called the president's valet and asked, “Was there anything wrong with the president’s suit after that dinner last night?  Why yes…”, the valet responded, “…he spilled soup down the vest. Not until Gerald Ford (1913–2006; US president 1974-1977) assumed the presidency was soup restored to the White House menus to the relief of the chefs who couldn’t believe a dinner was really a dinner without a soup course.

The event was not a “state visit” because at the time no formal diplomatic relations existed between the two nations (the US still recognized the Taiwan-based RoC (Republic of China (which Beijing regards still as a “renegade province”)) as the legitimate government of China). For that reason, the trip was described as an “official visit”, a term not part of diplomatic protocol.  There are in history a few of these fine distinctions: technically, diplomatic relations were never re-established between Berlin and Paris after the fall of the Third Republic in 1940, ambassadors were never accredited so Otto Abetz (1903-1958), who fulfilled the role between 1940-1944 should be referred to as “de facto” German ambassador (as the letters patent made clear, he acted with full ambassadorial authority).  In July 1949, a French court handed Abetz a twenty-year sentence for crimes against humanity; released in 1954, he died in 1958 in a traffic accident on the Cologne-Ruhr autobahn and there are conspiracy theorists who suspect the death was “an assassination”.  The de facto ambassador was the great uncle of Eric Abetz (b 1958; Liberal Party senator for Tasmania, Australia 1994-2022, member of the Tasmanian House of assembly since 2024).

Both the US and the PRC had their own reasons for wishing to emerge from the “diplomatic deep-freeze” (Moscow something of a pivot) and it was this event which was instrumental in beginning the process of integrating the PRC into the international system.  The “official visit” also introduced into English the idiomatic phrase “Nixon in China” (there are variations) which describes the ability of a politician with an impeccable reputation of upholding particular political values to perform an action in seeming defiance of them without jeopardizing his support or credibility.  For his whole political career Nixon had been a virulent anti-communist and was thus able to make the tentative approach to the PRC (and later détente with the Soviet Union) in a way which would not have been possible for someone without the same history.  In the same way the Democratic Party’s Bill Clinton (b 1946; US president 1993-2001) was able during the 1990s to embark on social welfare “reform” in a way no Republican administration could have achieved.

Following the visit, there was also a culinary ripple in the US.  Since the nineteenth century, Chinese restaurants had been a fixture in many US cities but the dishes they served were often very different from those familiar in China and some genuinely were local creations; fortune cookies began in San Francisco courtesy of a paperback edition of “Chinese Proverbs” and all the evidence suggests egg rolls were invented in New York.  The news media’s coverage of the visit attracted great interest and stimulated interest in “authentic” Chinese food and the details of what was on the menus was published.  Noting the banquet on the first night featured shark’s fin soup, steamed chicken with coconut and almond junket (a type of pudding), one enterprising chap was within 24 hours offering in his Manhattan Chinese restaurant recreation of each dish, a menu which remained popular for some months after the president’s return.  Mr Nixon’s favorite meal during the visit was later revealed to be Peking duck.

Freckle

Freckle (pronounced frek-uhl)

(1) One of the small, brownish spots on the skin that are caused by a localized deposition of the pigment melanin and that increase in number and darken on exposure to sunlight.

(2) Any small spot or discoloration.

(3) To cover with freckles; produce freckles on.

(4) To become freckled.

(5) In Australia, a small, disk-like sweet consisting of a flattish mound of chocolate covered in hundreds and thousands.

1350-1400: From the Middle English freken & frekel, from the Old Norse (plural) freknur (freckles) (and related to the Old Norse freknōttr (speckled) the Swedish fräkna & fräknar, the Norwegian & Icelandic frekna and the Danish fregne & fregner), a variant of the Old English sprecel from the Proto-Germanic sprekalą (freckle) (and related to the dialectal Norwegian sprekla and the Middle High German spreckel), from the primitive Indo-European sp(h)er(e)g- (to strew, to sprinkle).  It was cognate with the Albanian fruth (measles).  The verb freckle (to cover with spots) dated from the 1610s, the adjective freckled existing since the late fourteen century in the sense of “spotted”.  Freckle is a noun & verb, freckled & freckly are adjective and the verbs (used without object) are freckled & freckling.  The noun plural is freckles and the long obsolete alternative form from the late fourteenth century was frecken.

The similar noun fleck (a mark on skin, a freckle) from the 1590s was presumably from the verb fleck or a related word elsewhere in Germanic, such as the Middle Dutch vlecke or the Old Norse flekkr (a fleck, spot); from circa 1750 meaning extended to "a small particle" and from 1804. "a patch, a spot" of any kind.  The technical term for a freckle is ephelis.  Ephelis is from the Latin ephēlis, from the Ancient Greek φηλς (éphēlis) (a freckle), the construct being π- (ep-) (upon, over, (ie epi-)) + λος (hlios) (the sun) + -ς (-is), the nominal suffix).  The plural is ephelides.  The freckle (ephelis) differs from a lentigo in that a lentigo is a pigmented flat or slightly raised lesion with a clearly defined edge.  Unlike an ephelis (freckle), it does not fade in the winter months and dermatologists define several kinds of lentigo. The name lentigo originally referred to its appearance resembling a small lentil and they’re often now referred to as beauty spots or marks, a la Marilyn Munroe.  To a dermatologist, freckle & ephelis are synonymous but in general vaguely related words include synonyms include blemish, blotch, mole, daisy, dot, lentigo, macula, patch, pepper, pigmentation, pit, pock, pockmark, speck, speckle, sprinkle & stipple.

A freckle is an area of the skin with more pigmentation than the surrounding area, a clustering of concentrated melaninized cells which appear more obvious on those with light skin.  Counter intuitively, the skin which manifests as a freckle doesn’t have any more melanin-producing cells (or melanocytes) than the surrounding skin but instead has melanocytes that overproduce melanin granules (melanosomes), thus darkening the color of the outer cells (keratinocytes).  In this, a freckle differs from a mole in that the latter is an accumulation of melanocytes in a small area.  One who is heavily freckled is said to be "lentiginous", a learned borrowing from Latin lentīginōsus (freckled).

Of the six skin types on the Fitzpatrick spectrum, (1) Pale white skin with blue or green eyes & blonde or red hair (always burns, does not tan), (2), Fair skin with blue eyes (burns easily, tans poorly), (3), Darker white skin (tans after initial burn), (4), Light brown skin (burns minimally, tans easily), (5), Brown skin (rarely burns, tans darkly & easily & (6), Dark brown or black skin, freckles appear most frequently and are most apparent upon types (1) & (2) but can exist on anyone.  Like just about everything, the existence of freckles ultimately dependent on genetics and related to a particular gene although geneticists note the presence of at least one of two or more versions of the MC1R gene is usually required for freckles to form, the genetic combination does not guarantee an instance and in their absence, freckles may still exist.  Thus those with the gene combination are much more likely to be freckled while in those without, the instance is rare.  The MC1R gene correlates even more strongly with the red hair which is, impressionistically, so associated with freckles and it is true the two are the most frequently seen combination among the freckled, most red-heads having two variants of the MC1R gene and almost all have one.  Freckling exists even among populations, such as those of East Asia, where there is no natural occurrence of red hair but there, while genetically determined, it’s a different gene from MC1R, intriguingly one found in European populations where any influence on pigmentation is rare.

For centuries, many with freckles have sought their removal and by the nineteenth century, demand meant the process was part of the beauty industry.  Hydrochloric acid (muriatic acid), ammonium, hydrogen peroxide and liquid carbon dioxide could be effective and were certainly safer (if used correctly) than bi-chloride of mercury which definitely worked although the inherent difficulty was that pigment cells exist under the horny cells of the epidermis so results were usually temporary.  Many resorted to sometimes quite drastic skin-peeling and the most popular agent was for centuries lemon juice which bleaches the skin, inducing peeling although those wanting faster results would later use a hydrogen peroxide solution which was applied immediately after the skin had been scrubbed with a strong alkali soap and ammonium water.  If a patient demanded it, dermatologists would sometimes use undiluted carbolic acid to induce a severe inflammation and consequent peeling but there was reluctance in the profession because even when used with the appropriate skill, it could cause scaring and certainly couldn't be used on sensitive skin.  For that reason, many preferred the less effective hydrogen peroxide, salicylic acid or resorcinol; the early experiments with electrolysis proved unsatisfactory.  Mercury compounds such as ammoniated mercury and bi-chloride of mercury (corrosive sublimate) were the basis of many over-the-counter "anti-freckle" compounds, often combined with zinc salts or bismuth sub-nitrate and although marketed as "bleaching creams’", chemically they were really desquamating agents.  Remarkably, although restrictions began to be placed on the use of mercury in cosmetics as early as the 1940s, it wasn't until the late 1970s that in the West it was effectively banned for this purpose.  The preferred method of freckle removal is now laser treatment although the traditional view of dermatologists that freckles are a normal part of the human condition requiring no treatment is now more fashionable and there are many who fancy freckles.

Freckles form on the skin because of exposure to sunlight, certain parts of the spectrum activating the melanocytes which stimulate an increase in melanin production, cause them to darken and appear more obvious.  Cases exist in the literature of people who spent their early life in extreme northern latitudes developing freckles only after moving south and thus greatly increasing their exposure to sunlight.  In some cases, these people have presented to physicians seeking treatment for a skin disorder which freckles are not.  Freckles are instead something of a by-product of the migration of early humans, as long as 1.8 million years ago, from Africa, north to the lands around the Mediterranean and later beyond.  It was natural selection which, well over 100,000 years ago, produced the gene variants associated with pigmentation, induced by the advantaged gained by a lighter skin when living in northern latitudes; one which can absorb enough ultra-violet (UV) light to permit the body to sustain a healthy production of vitamin D.

Florin

Florin (pronounced flawr-in or flor-in)

(1) A cupronickel coin of Great Britain, formerly equal to two shillings or a tenth part of a pound and retained in circulation (equal to 10 new pence) after decimalization in 1971; first issued in 1849 as a silver coin.

(2) An alternative name for the guilder (the standard unit in the former (pre-Euro) currency of the Netherlands).

(3) A former gold coin of Florence, first issued in 1252 and widely imitated.

(4) A former gold coin of England, first issued under Edward III (1312–1377; King of England 1327-1377).

(5) A former gold coin of Austria, first issued in the mid-fourteenth century.

(6) As the Aruban Florin, the standard monetary unit of Aruba (A Caribbean island and a constituent country within the Kingdom of the Netherlands), divided into 100 cents

(7) In Australia, a coin minted between 1910-1963 and the ancestor of the 20c coin (two bob in the vernacular)  The New Zealand equivalent was issued between 1933-1965.

(8) A style of women's dress, in a flowing (originally wrap-around) style, dating from the mid-nineteenth century.

1275–1325: From Middle English florin & floren, from the Middle French floren, from the Old Italian fiorino (little flower), from fiore (flower), from the Latin flōrem (accusative of flōs (flower)).  Florin was the name of an English gold coin from the late fifteenth century, reprising an earlier use and a fiorino was the monetary unit of Tuscany between 1826-1859, subdivided into 100 quatrini; a florin.   The Florentine coin was stamped on the obverse with a lily, the symbol of the city.  Florin is a noun; the noun plural is florins.

The term florin dress refers to a style which became popular in the late Victorian era, attaining its classic form during the early twentieth century Edwardian era.  It was characterized by a fitted bodice and a full skirt, the fabric of which tended to “flow” as the wearer moved.  During the inter-war years (1919-1939), the bodices became tighter and the necklines lower but the “swish” of the flowing lines remained the dominant motif.  The volume of fabric mean it was a style which could be adapted to the formality suggested by dark solid colours, the bright floral patterns which emerged in the late nineteenth century as the mass-production of dyes by industrial chemistry or the embellishment with lace and ribbons which some found attractive.

Although conservative, there was a timelessness about the style which ensured its survival into the twenty-first century and most mainstream fashion houses (at whatever price-points they target) have florin dresses in their lines, the cut so adaptable the “wrap-around-look” (even if not always literal) able to be implemented with hemlines extending from knee to ankle, some with sleeves, some not.  The name “florin dress” has nothing to do with coinage but was a tribute to the many statutes of women depicted clothed in such a manner which were found in Florence and historians of fashion note the original name was “Florentine Dress” but for whatever reason, quickly this was clipped.

It was the representation of clothing in this flowing style which inspired the Victorians to dub the dresses the “Florin”, many of the the finest sculptures of the (clothed) female form found in the parks and museums of Florence.
